Ingredients

1 (12 ounce) bag cranberries
3 jalapeno peppers (remove seeds)
1/2 cup fresh cilantro (leaves only)
2 tablespoons lemon juice
2 tablespoons ginger powder
1/2 cup sugar
4 scallions
1 (8 ounce) package cream cheese
crackers or baguette

Steps:

If you have a food processor, add all ingredients into the processor, pulse until the cranberries are minced (not fine).
Put in the refrigerator and chill from an hour to overnight.
Place on a serving dish atop cream cheese and serve with crackers or baguette.

I always get requests for this recipe. It's easy, fast, and people can't figure out the seasonings (ha). Got it from a relative, who got it from a friend, who got it from . . .. Enough for 60 - if you use 2 cucumbers. You'll have extra of the cream cheese mixture.

Ingredients

1 package Good Seasons salad dressing mix (Italian)
1 (12 ounce) container soft cream cheese
cucumber
dill
pumpernickel cocktail bread

Steps:

Mix salad dressing and cream cheese.
Spread onto bread.
Peel and slice cucumber (@1/8inch thick).
If you want, leave strips of green on the cucumber (looks nice) Place 1 slice of cucumber onto bread.
Sprinkle with Dill.

1 cup dried cranberries
1/4 cup coffee liqueur or strong brewed coffee
1-1/4 cups semisweet chocolate chunks
1/4 cup unsalted butter, cubed
2 large eggs, room temperature
3/4 cup packed brown sugar
3 teaspoons vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly ground pepper
1/8 to 1/4 teaspoon cayenne pepper

Steps:

Preheat oven to 350°. In a small saucepan, combine cranberries and liqueur. Bring just to a simmer; remove from heat. In a microwave-safe bowl, microwave chocolate and butter on high in 30-second intervals until melted; stir until smooth (mixture will be thick). Cool slightly., In a large bowl, beat eggs, brown sugar and vanilla on high until thickened, about 3 minutes; beat in chocolate mixture. In another bowl, whisk flour, baking powder, salt and seasonings; fold into sugar mixture just until combined. Fold in cranberry mixture., Drop by rounded tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake 10-12 minutes or until cookies are shiny and tops are crackly. Cool on pans 2 minutes. Remove to wire racks to cool.
