No-bake cookie. Chocolate and oats. Nuts optional. *I haven't tried these with the coconut and walnuts, it is excellent without! Also try half cocoa half peanut butter. I made some with 2/3 cocoa and 1/3 peanut butter and they were so good.

Steps:
- Put the butter or margarine, sugar and milk into the saucepan. Heat on medium, stirring often, until it comes to a boil. Remove pan from heat.
- Add all remaining ingredients. Stir well. Drop by rounded teaspoonfuls onto the waxed paper. Cool completely.
- Store in a container with a lid and waxed paper between the layers. Makes about 40 cookies.

My all-time favorite cookie recipe! Just a few ingredients and no time in the oven for these delicious No-Bake Cookies. Yes, I cook and bake every day, but my favorite cookie is a No-Bake Cookie!

- In a large pot add sugar, milk, butter, and cocoa powder. Slowly bring to a boil while whisking. Once at a boil allow to boil for one minute (I set a timer and stopped the whisking).
- Remove from heat and add in oats. Mix well. Add in peanut butter, mix well. Last add in vanilla extract and mix well.
- Lay out parchment paper on the counter and spoon out the dough into cookie shapes. Allow to set for 15-30 minutes.

- Line two baking sheets with parchment or wax paper. Set aside.
- Combine the sugar, butter, milk and cocoa powder in a saucepan over medium-heat. Bring to a boil (not simmer). Once it reaches a boil, cook for an additional 1 1/2 minutes and then immediately remove from heat.
- Stir in the peanut butter and vanilla. Add in the oats and stir until well coated.
- Drop batter by the spoonful onto the lined pan. Let cool until set. Store in an airtight container at room temperature.

Peanut butter chocolate healthy no bake cookies made with half the amount of sugar in traditional no bake cookies and coconut oil instead of butter. Dairy-free, vegan and refined sugar free.

- Add melted coconut oil and peanut butter in a medium mixing bowl and stir until combined. Add coconut sugar, cocoa powder, almond milk, sea salt, vanilla.
- If desired you can heat the peanut butter cocoa mixture on the stovetop over medium low heat to fully dissolve the coconut sugar, about 5-6 minutes. Sometimes I do this and sometimes I don't. Depends on how much time I have.
- Add oats to a large mixing bowl and top with peanut butter cocoa mixture. Stir until well combined.
- Using a small/medium cookie scoop, scoop the dough on a baking sheet lined with parchment paper. Use your hands to press the dough down a bit and form the cookies into a cookie shape.
- Place baking sheet in fridge until cookies are set, then serve. Store any leftover cookies in an airtight container in the fridge for 1-2 weeks.
