These Nutella no-bake energy bites require just THREE ingredients, and they are all pantry-staple, very shelf-stable ingredients at that! Hopefully you already have all of them in your pantry right now so you can go whip of a batch of these gooey, chocolately hazelnut bites in a matter of just minutes.

1 cup Medjool dates (145 grams pitted)
1 cup roasted chopped hazelnuts (120 grams)
2-3 tablespoons dark cocoa powder
Pinch of sea salt, optional and to taste

Steps:

  • Simply add pitted dates, chopped hazelnuts, cocoa powder, and pinch of sea salt to a food processor.
  • Process until mixture starts forming a "dough" and sticking together.
  • Roll into balls.
  • Store in refrigerate for up to two weeks, or in the freezer up to a couple months.

This is a healthy take on the traditional no bake cookies. So good and good for you! I am always asked for this recipe every time I make them. They are a hit with the kids and the adults, and always go quick! I store them in the freezer because I think they taste best frozen, but not necessary.

1 cup rolled oats
½ cup mini semi-sweet chocolate chips
½ cup ground flax seed
½ cup crunchy peanut butter
⅓ cup honey
1 teaspoon vanilla extract

Steps:

  • Combine oats, chocolate chips, flax seed, peanut butter, honey, and vanilla extract together in a bowl; form into balls using your hands. Arrange energy bites on a baking sheet and freeze until set, about 1 hour.

1 cup old fashioned oats
1/2 cup unsweetened toasted coconut flakes*
1/2 cup almond butter
1/4 cup nutella
1/2 cup mini semi-sweet or dark chocolate chips
1/3 cup honey
1/2 teaspoon vanilla extract

Steps:

  • Add all ingredients to a large bowl and stir until well combined. Cover and let chill in the refrigerator for at least 10-15 minutes.
  • Once chilled, roll into 1-inch balls (or whatever size you want them to be) and arrange on a baking sheet lined with parchment paper. Set in the refrigerator for an additional 10-15 minutes (this will help hold the shape). Transfer to an airtight container and store in the fridge up to one week.
