NO BAKE OATMEAL PRUNE COOKIE BALLS
A healthier, but still equally delicious kid-friendly snack recipe with NO BAKE Oatmeal Prune Cookie BALLS.

- In a large bowl, mix peanut butter, honey (or maple syrup) and vanilla until creamy and well blended.
- In a separate bowl, combine the coconut flour, ground walnut, quick oats, cinnamon and sea salt. Add dry ingredients to the wet and mix well to combine (I like to use a wooden spoon). Fold in the diced Mariani Probiotic Pitted Prunes.
- Use your hands to knead the dough. If the mixture is too wet, add a bit more coconut flour. If it's too dry and doesn't hold together well, knead in one teaspoon (or two) or water.
- Scoop out tablespoon-size portions and roll into one-inch balls using your hands to create a bite-sized treat.
- Refrigerate for 30 minutes and serve.

- In a large bowl, combine the oats, sugar and cocoa. With clean hands, mix in the water, vanilla and butter to form a dough. Wash hands, then roll the dough into balls 1 to 2 inches in diameter. Roll balls in confectioners' sugar until thickly coated (or they will become crusty). Chill 20 minutes before serving.

- Add the nut butter and honey and stir to combine well. Add the all of the other ingredients and stir to combine well.
- Refrigerate the mixture for about 30 minutes.
- Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
- Store the balls covered in the fridge for up to a week, or in the freezer for much longer.
- In a medium bowl, add the peeled banana and mash thoroughly with a fork.
- Add the dry oats and chocolate chips and stir to combine.
- Refrigerate until the mixture holds together, about 30 minutes.
- Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with remaining mixture. This should make about 12 oatmeal energy balls.
- Store the balls covered in the fridge for up to a week, or in the freezer for much longer.

- In a large bowl, add peanut butter and syrup. Place into microwave and heat for about 20 seconds. Remove and stir with a spatula until evenly combined. Continue to microwave at 20 second intervals, stirring in between, until the peanut butter thickens and becomes like a paste. This should take between 1 min 20 seconds to 2 minutes. You can also heat the mixture on the stove.
