SPECIAL K BARS
Special K Bars are a no-bake dessert bar made with Special K cereal, peanut butter, milk chocolate chips, and butterscotch chips.

Steps:
- Prepare a 9x13-inch baking dish by lining it with parchment paper. Measure the cereal in a large bowl and set aside.
- In a large saucepan, combine the sugar and corn syrup. Cook over medium heat until boiling.
- Stir in the peanut butter until smooth.
- Remove from heat. Pour the mixture over the bowl of cereal and fold in the cereal to coat.
- Pat the cereal mixture into the lined baking dish using an oiled spatula.
- Meanwhile, in a microwave-safe bowl, add the milk chocolate and butterscotch chips. Heat the chips in 20-second intervals until they have melted and the mixture is smooth with no lumps.
- Pour the melted chocolate and butterscotch chips over the bars, smoothing with a knife.
- Let the bars sit for about 10 minutes before cutting and serving.

- In a large bowl combine Karo syrup and sugar. Heat to a boil and then remove from heat quickly. Stir in peanut butter until melted. Carefully mix in Special K Cereal and then spread into greased 9×13 pan.
- In a separate bowl combine butter, 12 oz pkg of chocolate chips, and 12 oz butterscotch chips. Melt, and then spread on top of bars.
- Let cool completely before serving.

- Melt together corn syrup and sugar until sugar is dissolved (don't let it boil).
- Remove from heat and stir in peanut butter until smooth.
- Add Special K or Rice Krispies, stirring along the way.
- Grease 9x13 pan and add mix to pan. (Trick: I use a buttered spoon to spread evenly in the pan)
- Melt chocolate chips and butterscotch chips together with 1/2 c butter, 30 seconds at a time in the microwave until melted.
- Spread over the bars.
- Refrigerate until hardened.
- Cut and serve.

- For the filling: Grease a 9-by-13-inch pan with some butter.
- Using a stand or electric hand mixer, mix together the butter and chunky peanut butter until smooth. Stir in the sugar a cup at a time.
- Add the vanilla wafers to a food processor and process until they are in crumbs. Then add the crumbs and mini chocolate chips to the peanut butter mixture. Spread it evenly into the buttered pan and set aside.
- For the frosting: Using a double boiler or a microwave, melt the chocolate chips and creamy peanut butter. Allow to cool for a couple of minutes, then pour over the base. Spread the frosting out evenly and sprinkle over the chopped peanuts. Refrigerate for at least 1 hour, then cut into 20 bars.
