Rich Pasta for the Poor Kitchen image

A quick, simple pasta tossed with butter, parsley, and Parmesan cheese. A wonderful recipe to make when you don't feel like making a trip to the grocery store. I used what I had on hand and it worked like a charm! Add summer vine-ripened tomatoes for an extra dash of flavor!

1 (6 ounce) package dry spaghetti
8 tablespoons butter
2 tablespoons minced garlic
salt and freshly ground black pepper to taste
1 tablespoon chopped fresh parsley
1 dash cayenne pepper
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
  • Heat a skillet over medium-low heat. Melt butter with garlic very slowly to avoid burning the garlic. Season with salt, freshly ground black pepper, and parsley. Sprinkle with cayenne pepper to taste, if desired.
  • Toss pasta into the skillet until well-coated with butter. Increase heat to medium, and cook until pasta is heated through and has absorbed some of the butter. Adjust seasoning with salt and pepper, if necessary. Serve with grated Parmesan cheese.

2 Packages Cream Cheese
1 16-oz container Sour cream
1 16-oz container of Grated Parmesan Cheese
1 16-oz package of KRAFT 5 Cheese Italian Cheese blend shredded cheese (or you can use a 6 or 7 blend if you can find it)
1 Quart of your favorite Marinara Sauce
1 Package of Large Shell Pasta, Manicotti pasta, lasagna noodles or any kind of hardy pasta you like, prepared as directed.

Steps:

  • In a large saucepan, Over low heat, mix all ingredients except pasta and marinara sauce. Gently stir together as it heats. Continue to heat Cheese sauce until it completely mixes and melts and becomes somewhat stringy or has an elastic quality and becomes very smooth. Remove from heat and let stand for ten minutes. Stuff pasta shells or manicotti with Cheese Sauce and arrange in a baking pan, cover with prepared marinara sauce as heavy as you like. If baking lasagna, arrange lasagna noodles, cheese sauce and marinara in layers. Put tin foil over top of baking pan and cook at 375 to 400 degrees until its bubbling hot. Baking time will depend on type of dish you are creating, Usually 30 minutes to an hour for shells or manicotti. For lasagna, depending on the size, cooking time may be as long as 1 and ½ to 2 hours.

Steps:

  • Cook pasta in a large saucepan of boiling salted water for 8-10 minutes. Drain and set aside.
  • Melt butter over medium heat in a large saucepan. Add flour, stir to form a roux, cooking for a few minutes.
  • Whisk in milk a little at a time. Add cream and mayonnaise if necessary, for extra thickness. Cook for 10-15 minutes till a thickened and smooth sauce.
  • Preaheat grill to hot. Remove sauce from hob and add most of cheese leaving a handful (around 4oz). Stir until cheese is melted.
  • Add pasta mix and place in an ovenproof dish. Sprinkle on rest of cheese. Place in oven until brown and bubbling.
