1 cup each prepared ripe strawberries, raspberries and blueberries (buy about 1 pt. of each)
3/4 cup water
1 box SURE-JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin
1/2 cup granular no-calorie sweetener or 12 no-calorie sweetener packets

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Stem and crush strawberries; place exactly 1 cup of the crushed strawberries in 6- or 8-quart saucepot. Repeat with raspberries and blueberries. Stir in water. Gradually add pectin, stirring until well blended.
  • Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Boil exactly 1 minute, stirring constantly. Remove from heat. Stir in granulated sweetener or no-calorie sweetener packets. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. 1 (1 3/4 ounce) box lower sugar pectin or 1 (1 3/4 ounce) box no sugar needed fruit pectin
1/2 cup Splenda granular

Steps:

4 cups fresh strawberries or 4 cups thawed frozen unsweetened strawberries
2 cups fresh raspberries or 2 cups thawed frozen unsweetened raspberries
1 cup fresh blueberries or 1 cup thawed frozen unsweetened blueberries (4 Cups thawed frozen berry mix, unsweetened)
1 (1 3/4 ounce) package no-sugar-needed pectin
3/4 cup Equal sugar substitute (I use Splenda)

Steps:

  • Mash berries by hand or use the food processor to make 4 cups of berry pulp (or just use your thawed frozen berries) Stir in pectin and let mixture stand for 10 minutes, stirring frequently Transfer to a large saucepan.
  • Cook and stir over medium heat until mixture comes to a boil.
  • Cook and stir for 1 minute more.
  • Remove from heat and stir in Equal (or splenda).
  • Skim off foam, if necessary.
  • Immediately fill hot jars leaving 1/2 inch headspace.
  • Seal with lids and rings and let stand at room temperature for several hours.
  • Jars should seal on their own, if they don't seal, use these first.
  • Keeps 2 Weeks in the fridge, or 3 Mos in the freezer.
  • You can also use plastic freezer containers for this.

I developed this recipe for a friend who has diabetes. She complained that most diabetic jams had sweeteners added leaving a strange aftertaste. Fresh fruit, when in season, is naturally sweet. To make jam, you don't need to add sugar. A little agar-agar and lemon will help the cooked fruit thicken to make a spreadable fruit for toast, sandwiches, or cheeses. It will last up to 2 weeks in the refrigerator. This recipe will work with all forest fruits.

2 tablespoons lemon juice
½ teaspoon agar-agar powder
4 cups fresh raspberries

Steps:

  • Combine lemon juice and agar-agar powder in a small bowl. Set aside to thicken for 5 minutes.
  • Heat raspberries in a saucepan over medium heat until raspberries start to break up, 5 to 10 minutes. Use a masher to crush raspberries into a smooth consistency, but do not liquefy. Turn off the heat.
  • Stir thickened lemon-agar-agar paste into the saucepan with the raspberries and mix well. Allow to cool to room temperature, about 30 minutes. Pour into an airtight container and refrigerate until set, about 2 hours.

4 cups fresh or frozen blueberries
2-1/2 cups fresh or frozen red raspberries
2-1/2 cups fresh or frozen strawberries
1/4 cup lemon juice
2 packages (1-3/4 ounces each) powdered fruit pectin
11 cups sugar

Steps:

  • Combine the berries and lemon juice in a stockpot; crush fruit slightly. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil 1 minute, stirring constantly. , Remove from the heat; skim off any foam. Carefully ladle hot mixture into hot pint jars, leaving 1/4-in. headspace. Measure exactly 1-1/2 cups prepared raspberries into saucepot with strawberries. Crush blueberries thoroughly, one layer at a time. Measure exactly 1-1/2 cups prepared blueberries into fruit mixture in saucepot.
  • Mix 1/4 cup of the sugar and the pectin in small bowl. Add to fruit mixture in saucepot; mix well. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in remaining 4-1/4 cups sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.

  • Prepare waterbath canner, jars and lids according to manufacturers instructions, if preserving. Prepare and measure ingredients for recipe.
