PEACH SAUCE
Make this up in advance for sourdough pancakes. I used Celestial Seasonings® tea. Substitute water for tea if you don't have it on hand. Chopped pecans might taste good in this, as well as brandy instead of vanilla.

Steps:
- PEEL AND CUT THE PEACHES (Note 1): For easy peeling, carefully drop peaches into a medium pot of boiling water. Boil for 1 minute. Lift out peaches with a slotted spoon and slip off the skins. Cut peaches in half and remove pits. Chop into small chunks, about 1/2-3/4 inch (1.28-1.9 cm).
- MAKE THE SAUCE: In a medium saucepan (I use the same one as above), put in all ingredients. Heat to Medium-high heat to bring to gentle boil (lower heat to medium heat if boiling too rapidly). Gently boil for about 6-8 minutes uncovered, stirring frequently, or until you reach the desired consistency. The more you cook it, the thicker it will get. Taste and adjust seasonings, adding more lemon, sugar, chili flakes, thyme as needed. Serve hot or cold with chicken, fish, pork or grains.

HOMEMADE PEACH BARBECUE SAUCE
Homemade barbecue sauce made with fresh peaches is always a hit in our home. This one uses ripe peaches with a hint of cinnamon and just a touch of heat from smoked paprika. It's seriously good barbecue sauce!

Steps:
- Pulse your peaches in a food processor until chunky or smooth, depending how you like your sauce. Set aside.
- In a large saucepan melt the butter over medium heat. As it starts to glisten add the shallots and cook those until the start to go golden brown. This will take 5 to 10 minutes depending on your heat and the size of the pan you use. Once they are almost golden add the garlic. Allow to cook for about 1 to 2 more minutes.
- Now you can add the spices, ketchup, brown sugar, and peaches. Cook until it comes to a boil.
- Add the worcestershire sauce and the lemon juice, stir and bring back to a boil. Let it boil for about a minute or two, stir, then reduce to a simmer. Let it simmer for about 20 to 30 minutes. Give it a stir here and there.
- Swipe it over everything you can get your hands on!
- You can store the surplus in glass jars in the fridge for a couple of weeks.
- Great on chicken, fish and pork.
FRESH PEACH SUNDAE SAUCE
Found this one on the recipe wall at Wilson Farms in Lexington MA. I haven't tried this yet (I haven't come across good fresh peaches lately), but I definitely intend to. If you prefer, the oj can be subbed with orange liqueur or peach brandy.

Steps:
- In a 2-quart saucepan, stir together the sugar, cornstarch, nutmeg and cinnamon. Mix in the water and juice. Bring this to a boil over medium heat, stirring constantly. Reduce heat and simmer for one minute.
- Stir in the peaches and continue simmering for 4 to 5 minutes, stirring occasionally, until peaches soften slightly. Remove from heat. Because the peaches will continue to cook in the hot syrup, you don't want to overcook them while pan is on the heat.
- Serve warm or cold over ice cream.
FRESH PEACH SAUCE
This peach sauce is wonderful to use over ice cream or pound cake when fresh peaches are in season. The orange liqueur and brandy really bring out the delicious peach flavor.

- You can skin the peaches before or after you cook them. Cut them in half and remove the pit. Cover the bottom of a deep sided pan with water. Add peaches and allow to cook until softened, approximately 20 minutes.
- Peaches are too fibrous to pass through a sieve so add them to a blender, food processor or stick immersion blender. Process them until smooth. Return them to the heat and add lemon juice and sugar. Heat until sugar is dissolved, approximately 10 minutes.

- Wash peaches, remove the pit, peel and dice into bite size pieces. For this recipe, I used 2 large peaches which weight about 1 lb 1 oz whole. Once peeled and diced, they yield about 14 1/2 oz and fill about 2 1/2 cup.
- Add wine, water, honey and sugar to a sauce pan and bring to a boil over medium heat, this will take about 3 minutes.
- Add rosemary to the boiling liquid and reduce heat just slightly to keep the liquid simmering. Reduce the liquid to a quarter of what you started with, this will take about 16 minutes.
- Remove the rosemary with a tong and add diced peaches to the reduced sauce along with a pinch of salt and let cook until most of the liquid has evaporated and peaches are tender, stirring occasionally. This will take about 12 - 13 minutes.
