I remember making this sauce for my mom when I was about 8 years old. I loved the aroma and spicy flavor. Today, many cooks spread cream-cheese frosting on spice cake instead, but I think you're really missing something if you bypass this warm, old-time sauce. -Shirley Joan Helfenbein, Lapeer, Michigan

Yield about 1-1/3 cups.

Number Of Ingredients 8

1 cup sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Dash ground allspice
1 cup cold water
2 tablespoons butter
1 teaspoon vanilla extract
1/4 to 1/2 teaspoon rum extract

Steps:

  • In a small saucepan, combine the sugar, flour, nutmeg, allspice and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and extracts. Serve with spice cake. Refrigerate leftovers.

1 cup confectioners' sugar
7 tablespoons unsalted butter, room temperature
1 teaspoon pure vanilla extract
3 tablespoons brandy or Cognac

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, cream the sugar and butter until light and fluffy. Add the vanilla and brandy or Cognac; beat until combined. Transfer to a serving dish, and cover with plastic wrap. Refrigerate until ready to serve.

4 tablespoons butter
1/8 teaspoon salt
1 teaspoon vanilla extract
1/4 cup heavy cream

  • Sift powdered sugar and set aside.
  • Beat butter until soft.
  • Gradually beat in the sugar until well blended.
  • Beat in salt and vanilla.
  • Beat in heavy cream .
  • When sauce is very smooth chill thoroughly.
  • Serve.

8 ounces whipped unsalted butter, softened
Pinch of salt
2 cups sifted confectioners' sugar
1 egg yolk
4 tablespoons heavy cream
4 tablespoons cognac

Steps:

  • Put ingredients in a food processor and mix until smooth and creamy. Put sauce in tightly covered jar. Refrigerate.
  • Remove from refrigerator at least 1 hour before serving.
