1 ½ cups white sugar
½ cup water
2 egg whites
½ teaspoon vanilla extract
¼ teaspoon baking powder
1 cup chopped almonds
½ cup chopped fresh figs
½ cup chopped raisins

Steps:

  • Bring sugar and water to a boil, without stirring, in a saucepan until syrup is 238 degrees F (114 degrees C) or until a small amount of syrup dropped in cold water forms a soft thread, 7 to 10 minutes.
  • Slowly pour syrup over egg whites in a bowl; stir in vanilla extract and continue to beat until thick and cold. Add baking powder and beat until filling/frosting is thick enough to spread without running. Fold almonds, figs, and raisins into filling/frosting.

1 can (14 ounces) sweetened condensed milk
1 can (21 ounces) peach or cherry pie filling
1 can (15 ounces) mandarin oranges, drained
1 can (20 ounces) crushed pineapple, drained
2/3 cup chopped pecans or walnuts
1 carton (8 ounces) frozen whipped topping, thawed
Lettuce leaves, optional

Steps:

  • In a large bowl, combine milk and pie filling. Add oranges, pineapple and nuts. Gently fold in whipped topping. Spread in a 13-in. x 9-in. pan. Cover and freeze. Remove from the freezer 15 minutes before serving. Cut into squares; serve on lettuce-lined plates if desired.

Steps:

  • In a large bowl, cream butter and sugar. Add egg whites, two at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk., Pour into two greased and floured 9-in. round baking pans. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks., In a bowl, beat topping mix and milk on high speed for 4 minutes or until thickened. Combine melted chips and jam; gradually beat into topping. Set aside 1 cup for filling. Cover and chill remaining mixture for 20 minutes or until it reaches spreading consistency., Add pineapple and strawberries to reserved filling. Place one cake layer on a serving plate; spread with fruit mixture. Top with remaining cake layer. Frost top and sides of cake with chilled topping. Store in the refrigerator.

Between Martha's beloved method for roasting turkey with wine- and butter-soaked cheesecloth, to the sweet and nutty stuffing, this Thanksgiving recipe does not skimp on flavor.

One (12 to 14-pound) fresh whole turkey, giblets and neck reserved
2 cups unsalted butter (4 sticks), melted, plus 4 tablespoons unsalted butter softened
1 bottle dry white wine
2 carrots, coarsely chopped
2 parsnips, coarsely chopped
2 ribs celery, coarsely chopped
1 onion, coarsely chopped
Coarse salt and freshly ground pepper
Fruit and Nut Stuffing
2 cups Giblet Stock
3 tablespoons all-purpose flour

Steps:

  • Rinse turkey with cool water and dry with paper towels. Let stand for 2 hours at room temperature.
  • Preheat oven to 450 degrees with rack in lower third. Combine melted butter and white wine in a large bowl. Fold a large piece of cheesecloth into quarters and cut into a 17-inch, four-layer square. Immerse cheesecloth in butter and wine; let soak.
  • Add vegetables to a large, heavy roasting pan. Place a roasting rack over vegetables. Position turkey, breast-side up, on rack. If turkey comes with a pop-up timer, remove it; an instant-read thermometer is a more accurate indication of doneness. Fold wing tips under turkey. Season cavity with salt and pepper. Fill cavities loosely with as much stuffing as they will hold comfortably; do not pack tightly. (Cook remaining stuffing in a buttered baking dish at 375 degrees.) Truss turkey with kitchen string. Fold neck flap under and secure with toothpicks. Rub turkey with softened butter and season with salt and pepper.
  • Lift cheesecloth out of liquid and squeeze it slightly, leaving it very damp. Spread it evenly over breast and about halfway down sides of turkey; it can cover some of the leg area. Place turkey, legs first, in oven. Cook for 30 minutes. Using a pastry brush, baste cheesecloth and exposed parts of turkey with butter and wine. Reduce oven temperature to 350 degrees.and continue to cook for 2 more hours, basting every 30 minutes and watching pan juices; if vegetables begin to darken, add a little chicken stock or water.
  • After these 2 1/2 hours of cooking, carefully remove and discard cheesecloth. Turn roasting pan so breast is facing back of oven. Baste turkey with pan juices. If there are not enough juices, continue to use butter and wine. The skin gets fragile as it browns, so baste carefully. Cook 30 to 60 more minutes, basting after 30 minutes.
  • After these three hours of cooking, insert an instant-read thermometer into the thickest part of the thigh. Do not poke into a bone. The temperature should reach 180 degrees.(stuffing should be between 140 degrees.and 160 degrees. and the turkey should be golden brown. The breast does not need to be checked for temperature. If legs are not yet fully cooked, baste turkey, return to oven, and cook another 20 to 30 minutes.
  • When fully cooked, transfer turkey to a serving platter and let rest for about 30 minutes. Meanwhile, make gravy. Strain pan juices into a fat separator, discarding vegetables. Let stand until fat rises to the surface, about 10 minutes, then skim it off. In a small jar, shake to combine, giblet stock and flour. Place roasting pan over medium-high heat. Add giblet stock mixture. Use a wooden spoon to scrape up browned bits from bottom of pan. Bring back to a boil, and cook until liquid has thickened slightly. Add defatted pan juices and cook over medium-high heat until thickened to desired consistency. You will have about 2 cups of gravy. Season with salt and pepper. Strain into a gravy boat. Serve with turkey.

1 1/2 cups sweetened shredded coconut
1 1/2 cups chopped dried apricots
1 1/2 cups chopped dates
1 1/2 cups chopped macadamia nuts
1 1/2 cups chopped pistachios

Steps:

  • Preheat oven to 350 degrees. Whisk together flour, baking soda, and salt in a medium bowl.
  • Put butter in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth. Add sugars, and mix until pale and fluffy, about 3 minutes. Mix in eggs one at a time until combined; mix in vanilla.
  • Reduce mixer speed to low. Add flour mixture and mix until just combined. Stir in coconut, apricots, dates, macadamias, and pistachios.
  • Drop batter, 2 heaping tablespoons at a time, onto prepared baking sheets, spacing 2 inches apart. Flatten slightly. Bake, rotating sheets halfway through, until golden brown, 12 to 15 minutes. Remove from oven; transfer cookies on parchment paper to a wire rack to cool completely.

1/2 cup dried currants
1/4 cup bourbon

2 tart cooking apples, unpeeled, cored, cut into 1/4-inch pieces
2 large onions, cut into 1/4-inch pieces
2 ribs celery, cut into 1/4-inch pieces
2 teaspoons vegetable oil
1 cup walnut pieces
2/3 cup whole macadamia nuts, unsalted
2/3 cup whole cashews, unsalted
4 slices (1-inch) day-old brioche, cut into 1-inch cubes
1 cup low-sodium canned chicken broth
2 cups fresh cranberries
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1 teaspoon finely chopped fresh parsley
3 large eggs, lightly beaten
Coarse salt and freshly ground pepper

Steps:

  • Place prunes, apricots, raisins, and currants in a medium bowl; pour bourbon over fruit. Cover with plastic wrap, and soak overnight.
  • Melt butter in a large skillet over moderate heat; add apples, onions, and celery. Cook, stirring occasionally, until onions are soft and celery is tender, about 10 minutes. Set aside.
  • Heat 2 teaspoons vegetable oil in a skillet over medium heat; add nuts. Toast them, stirring constantly, until golden.
  • Transfer sauteed onion mixture to a large bowl. Add brioche and broth; mix until incorporated. Add macerated fruit, toasted nuts, cranberries, cloves, cinnamon, ginger, cayenne, parsley, and eggs. Season with salt and pepper. Using 2 large spoons or your hands, gently mix stuffing until evenly blended. Set aside while turkey is prepared for roasting.

This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

  • Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).

After lots of trial and error, we found our perfect indulgences- a light and fluffy bakery-style donut (courtesy of America's Test Kitchen) to pair with a Krispy Kreme-style filling (tweaked from internet recipe floating around) and different icings and glazes (via the Brunette Foodie, Pioneer Woman,Good Eats n' Sweet Treats, and my mom!). A little bit of work, but totally worth the effort to impress the heck out of anyone that you serve them to. Prep time does not include rise time.

  • Donuts:.
  • To make the dough, in a medium bowl combine 3 cups of the flour, the yeast, sugar and salt. Stir together with a fork and set aside.
  • In the bowl of a stand mixer fitted with the dough hook, combine the milk and eggs. Add the flour mixture and mix on low speed for 3-4 minutes or until a ball of dough forms.
  • With the mixer on low speed, add the softened butter a piece at a time, mixing for about 15 seconds between each addition. Continue mixing for about 3 minutes longer, adding the remaining flour 1 tablespoon at a time if necessary, until the dough forms a ball.
  • Transfer the dough to a lightly oiled bowl, turning once to coat. Cover with plastic wrap and let rise at room temperature for 90 minutes.
  • Transfer the dough to a lightly floured surface and roll it to a thickness of ½ inch.
  • Traditional donuts: Cut the dough into rounds using a 2½-3 inch biscuit or cookie cutter. Use a smaller circle cutter to cut the hole out of the middle of each, creating the doughnut shape (if filling donuts with cream, skip this step). Reroll and cut the dough scraps as necessary to make use of all the dough.
  • Long Johns: Using a pizza cutter, trim the rounded edges and then cut dough into 4"x2" rectangles. Reroll and cut the dough scraps as necessary to make use of all the dough.
  • Place the shaped doughnuts and doughnut holes onto a lightly floured baking sheet, and cover loosely with plastic wrap and let rise at room temperature 90 minutes.
  • Meanwhile, fit a candy thermometer to the side of a large Dutch oven; add the shortening to the pot and gradually heat it over medium-high heat until it reaches a temperature of 375°F.
  • Place the rings and holes carefully into the hot fat 4 or 5 at a time, or the long johns 2 at a time, being sure not to crowd the pan.
  • Fry until golden brown, about 30-45 seconds per side (less for doughnut holes). Remove from the hot oil with a skimmer and transfer to a paper towel-lined cooling rack.
  • Repeat with the remaining doughnuts, returning the temperature to 375 F between batches.
  • Cool the doughnuts for about 10 minutes before topping or glazing. If filling with cream, wait 20 minutes or until room temperatureServe warm or at room temperature.
  • (Note: I found the doughnuts to be a little dense at room temperature, but a very quick 10-second zap in the microwave made them light and fluffy again.).
  • Cream filling: Place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and water. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.
  • Fit a pastry bag with a long and narrow tip. Fill the bag with the cream.
  • Poke the tip into the side of a room-temperature round donut and pipe the cream in carefully with steady pressure.
  • For filled long johns, pipe the cream through three small holes in the bottom of the donut.
  • Vanilla Glaze:.
  • Mix all glaze ingredients in a bowl until completely smooth.
  • One by one, dip doughnuts into the glaze until halfway submerged. (Note: completely submerge doughnut holes, then remove with slotted spoon.).
  • Remove from glaze, then turn right side up on a cooling rack over a cookie sheet (to catch dripping glaze.).
  • Maple-Coffee Glaze:.
  • Mix all glaze ingredients in a bowl until completely smooth (will be fairly thick).
  • One by one, dip doughnuts into the glaze until halfway submerged. (Note: completely submerge doughnut holes, then remove with slotted spoon.).
  • Remove from glaze, then turn right side up on a cooling rack over a cookie sheet (to catch dripping glaze.).
  • Caramel icing:.
  • In a medium heavy-bottomed saucepan, bring sugar, water, and corn syrup to a boil over medium high heat, stirring just to combine before bring to boil. When caramel turns a light amber, remove from heat and CAREFULLY add butter (will sputter and boil). Stir to incorporate, then beat in milk and powdered sugar until smooth- mixture will be thick.
  • Holding donut, use a spatula or spoon to carefully scrape a thick layer of icing over the donut.
  • Chocolate icing:.
  • In the bowl of an electric mixer, beat butter on medium speed until creamy. Add powdered sugar, cocoa powder, and milk and beat until smooth.
