Nut-Crusted Chicken with Lemon and Thyme image

Try Nut-Crusted Chicken with Lemon and Thyme for extremely tender chicken breasts with a crunchy and flavorful coating. Pecans or almonds combined with panko give this dish a thumb's up.

4 boneless skinless chicken breasts
salt
1 cup pecans
4 tablespoons butter
1 shallot (minced)
1 cup panko breadcrumbs
1 lemon lemon zest
1 teaspoon fresh thyme (minced)
⅛ teaspoon cayenne pepper
3 eggs
2 teaspoons dijon mustard
¼ teaspoon pepper
1 cup flour

Steps:

  • Preheat oven to 350º. With a fork poke the thickest half of each breast 5-6 times. Place on wire rack set in rimmed baking sheet and evenly sprinkle each breast with 1/2 teaspoon salt. Refrigerate, uncovered, while prepare coating.
  • Process nuts in food processor until they resemble coarse meal. Heat butter in a 12-inch skillet over medium heat. Cook, swirling pan constantly, until butter turns golden brown and has a nutty aroma, 4-5 minutes. Add shallot and 1/2 teaspoon salt. Cook stirring constantly until just slightly brown, about 2 minutes. Reduce heat to medium-low, add panko and ground nuts. Cook, stirring frequently, until golden brown, 10-12 minutes. Transfer to pie plate and stir in lemon zest, thyme and cayenne.
  • Lightly beat eggs, mustard and black pepper together in second pie plate. Place flour in third pie plate. Pat chicken dry with paper towels. Working with one piece at a time, dredge chicken in flour, shaking off excess, then coat with egg mixture, allowing excess to drip off. Coat all sides of chicken with panko mixture, pressing gently so that crumbs adhere. Transfer to a clean wire rack set in rimmed baking sheet.
  • Bake until thermometer registers 160º, 20-25 minutes. Let rest 5 minutes before serving.

Steps:

  • Beat the egg in a shallow dish. Put your desired coating in a separate shallow dish. Season the chicken all over with salt and pepper. Dip in the egg, letting the excess drip off, then firmly press in the coating, making sure to coat both sides.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Working in two batches, add the chicken and cook until crisp and cooked through, 4 to 5 minutes per side, adjusting the heat as needed if the coating is browning too quickly. We let the chicken in our recipe rest briefly before dredging, and used a seasoned mixture consisting of half nuts, half Japanese panko to coat it. Then, to add more flavor, we used browned butter, which brought out the coating's inherent nuttiness.

  • Mix first 3 ingredients on large plate. Using rolling pin, pound chicken between sheets of waxed paper to scant 1/2-inch thickness. Rinse chicken with cold water so that coating will adhere. Sprinkle with salt and pepper. Press both sides of chicken into crumb mixture to cover.
  • Heat oil in heavy large skillet over medium-high heat. Carefully add chicken to skillet. Sauté until chicken is cooked through and golden brown, turning with tongs, about 4 minutes per side. Serve chicken with lemon wedges.

2 (6 -8 ounce) boneless skinless chicken breasts
1 1/4 teaspoons kosher salt, divided
1/2 cup chopped almonds
2 tablespoons unsalted butter, cut in 1-tbsp pieces
1 small shallot, minced (about 1 1/2 tbsp)
1/2 cup panko breadcrumbs
1/2 lemon, zest of, finely grated
1/2 teaspoon minced fresh thyme
1 pinch cayenne
2 eggs
1 teaspoon Dijon mustard
1/8 teaspoon ground black pepper
1/2 cup unbleached all-purpose flour
1/2 lemon, cut in 2 wedges (use the one you zested)

Steps:

  • Preheat oven to 350°F Poke each breast several times with a fork. Sprinkle each breast with 1/2 tsp kosher salt, coating both sides. Refrigerate, uncovered, 15-20 minutes.
  • Process nuts in food processor, about 20 1-second pulses, until it looks like coarse meal. Heat butter in skillet over medium flame until melted. Swirl constantly until butter is brown and smells nutty, 4-5 minutes. Add shallot and 1/4 tsp kosher salt. Cook, stirring constantly, until shallot is soft, about 2 minutes. Reduce heat to medium-low. Add nuts and panko and stir often until golden brown, 10-12 minutes. Transfer to a shallow dish and stir in lemon zest, thyme and cayenne.
  • Beat egg, mustard and black pepper in a second bowl; place flour in a third dish. Pat breasts dry. Dip breasts, one at a time, into flour, patting off excess, then into egg, then into nut mixture. Scoop nut mixture on top of the chicken and press it down hard to make it adhere. Place breast on a rack placed over a cookie sheet, then prepare the second one.
  • Place rack in lower-middle of preheated oven and bake until internal temperature of chicken is 160F, 20-25 minutes. Rest 5 minutes, then serve with lemon wedges.

Safflower oil, for frying (about 1 1/4 cups)

Steps:

  • Whisk flour with a pinch each of salt and pepper in a shallow dish. Whisk eggs in a separate dish. Stir together panko, sesame seeds, and thyme in a third shallow dish. Season chicken with salt and pepper, then dredge in flour, shaking off excess. Dip in eggs, allowing excess to drip off, and coat with panko mixture, patting to adhere.
  • Pour enough oil into a large skillet to come about 1/4 inch up sides. Heat over medium-high until a panko crumb dropped in sizzles instantly. ½ cup chicken stock
¼ cup salt
¼ cup white sugar
1 bunch fresh thyme
1 pinch cayenne pepper, or to taste
2 skinless, boneless chicken thighs
½ cup all-purpose flour
2 eggs
½ cup finely chopped salted mixed nuts
1 ½ tablespoons olive oil

Steps:

  • Mix chicken stock, salt, sugar, thyme, and cayenne pepper together in a bowl to make marinade.
  • Place chicken thighs in a resealable plastic bag. Pour marinade over chicken. Squeeze out most of the air and seal. Place plastic bag on a plate. Refrigerate 4 hours or overnight.
  • Place flour on a plate. Beat eggs in a bowl. Place chopped nuts on a separate plate.
  • Remove chicken thighs from the bag; discard marinade. Dredge thighs in flour, coating all sides. Transfer to bowl with eggs and coat on all sides with eggs. Roll thighs in chopped nuts.

I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

5 cloves garlic, crushed
3 tablespoons Dijon mustard, divided
