OLD-FASHIONED DOUGHNUT STICKS
Steps:
- For the doughnuts: Preheat the oven to 375 degrees F. Spray two 6-well eclair pans with nonstick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon and salt to combine. Add the milk, egg, vanilla and butter, and mix gently until combined.
- Fill the wells of the prepared eclair pans about halfway with the batter.
- Bake until the doughnuts spring back when touched and a toothpick comes out clean, 10 minutes. Transfer the pans to a rack set over a baking sheet; let cool for 3 to 5 minutes. Remove the doughnuts from the pans and let cool completely on the rack.
- For the glaze: Whisk the confectioners' sugar and milk together until smooth.
- Dunk the doughnuts in the glaze to coat completely. Transfer to a rack and let set for 10 minutes before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish.
- Combine flour, sweetener, cinnamon, baking powder, baking soda, and salt in a large bowl; mix until well combined.
- Whisk together egg, oil, applesauce, and honey in a second bowl until well combined. Stir into the dry ingredients. Fold in nuts. Transfer batter into the prepared baking dish and smooth out the surface.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Remove from oven and allow to cool.
- For the icing, combine powdered sugar substitute, butter, honey, almond milk, vanilla, and cinnamon in a bowl. Spread or drizzle icing onto the cooled bars.

- In a large bowl, dissolve yeast and 1/4 cup sugar in warm water. Add remaining sugar, warm milk, shortening, salt, eggs and 3 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top.
