These nutty, buttery cookies will melt in your mouth, leaving just a trace of orange flavor. An old recipe from my mom in North Dakota, they used to be reserved only for weddings and special occasions. 1 cup butter, softened
1-1/4 cups confectioners' sugar, divided
1 teaspoon grated orange zest
1/2 teaspoon orange extract
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped walnuts
1/2 cup finely chopped hazelnuts

Steps:

  • In a large bowl, cream butter and 3/4 cup confectioners' sugar until light and fluffy. Beat in orange zest and extracts. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in nuts., Shape into 3/4-in. balls. Place 1 in. apart on ungreased baking sheets. Bake at 350° for 10-12 minutes or until bottoms are lightly browned. Remove to wire racks to cool completely., Place remaining confectioners' sugar in a large resealable plastic bag. Add cookies, a few at a time, and shake to coat. Store in an airtight container.

1 tablespoon vanilla extract
2 cups sifted all-purpose flour
¾ teaspoon salt
1 cup chopped pecans
¾ cup sifted confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
  • Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
  • Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

12 ounces vanilla wafer cookies, crushed
1 cup confectioners' sugar
1/4 cup butter, room temperature
1/2 cup orange juice concentrate, thawed
1/2 teaspoon vanilla extract
1 cup chopped pecans
sifted confectioners' sugar or coconut, for coating

Steps:

  • Combine cookie crumbs and 1 cup confectioners' sugar.
  • blend in butter.
  • Stir in orange juice concentrate and add vanilla and nuts.
  • Shape mixture into balls about the size of walnuts.
  • Shake in food storage bag with sifted confectioners' sugar or coconut.
  • Arrange orange balls in single layer on waxed paper-lined cookie sheet and store uncovered overnight in refrigerator for best flavor.

knob of butter , softened
50g shelled pistachio nuts
1 tbsp caster sugar
6 large oranges
200g pot thick Greek yogurt or crème fraîche , to serve

Steps:

  • Heat the butter in a large frying pan. Add the pistachio nuts and cook for a few mins until toasted, turning and shaking the pan frequently to prevent them from burning. Sprinkle over the sugar and stir until the sugar has completely dissolved. Turn out on to a plate and leave to cool (about 5 mins), then roughly chop.
  • Using a sharp knife, cut the bottom off each orange, then carefully cut away the skin and pith, following the curve of the fruit. Cut into slices. Arrange on a plate with any juices. Serve with the nuts scattered over and the yogurt or crème fraîche to dollop on top.

¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. Nutty and buttery with a hint of citrus flavor; a nice addition to any holiday cookie platter. We did use fresh grated orange peel.

1 cup butter, softened
1 1/3 cups powdered sugar, divided
2 cups all-purpose flour
1 teaspoon fresh grated orange peel
1/2 teaspoon orange extract
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup walnuts, chopped fine
1/2 cup hazelnuts, chopped fine
ground cinnamon, for sprinkling (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, cream the butter and 3/4 cup of powdered sugar until fluffy.
  • Beat in the fresh grated orange peel and the orange and vanilla extracts.
  • In another mixing bowl, combine the flour and salt; gradually add this to creamed mixture and mix well.
  • Stir in chopped nuts; mix well.
  • Shape into 3/4 inch balls and place each ball about 1 inch apart on an ungreased baking sheet.
  • Bake for 10-12 minutes or until the bottoms are lightly browned.
