- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
- Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
- Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. Sprinkle 1/2 teaspoon garlic powder, onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper on top and stir together. Spread out the hash browns; cook, without stirring, until browned, about 5 minutes. Turn hash browns over and sprinkle Cheddar cheese evenly over the top.
- Stir remaining garlic powder, eggs, and milk together in a bowl; season with salt and pepper. Pour egg mixture over the Cheddar cheese-covered hash browns in the skillet. Sprinkle bacon and sausage pieces on top.
- Bake in the preheated oven until top is puffed, cheese is melted, and a knife inserted into the center comes out clean, 10 to 15 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
- Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.

This makes 16 servings. At sams club they sell these big bags of precooked bacon, it's a 1 pound bag, I use that instead of cooking the bacon myself. Same for the sausage, the precooked sausage I buy is cheaper than the sausage I have to cook. If you cook the bacon yourself, salt the dish. You can really cut the time on this if you do like I did and it's not more expensive!!! Use precooked bacon (if you can get it cheap like I did), precooked sausage and a cheese mix blend. I put it together in under 10 minutes, that includes cracking and stirring the eggs.

- Preheat oven to 425 degrees.
- Spray 2 9x13 inch pans with cooking spray.
- Place half of hash browns into each pan, press to the bottom forming a crust.
- Drizzle half of melted butter over each dish.
- Bake for 25 minutes.
- Remove from oven, reduce temperature to 350.
- Put half of the chopped meats, and cheeses on the "crusts" in each pan.
- Sprinkle with salt, pepper, crushed red pepper and onions (as well as any other additions you might want to add like veggies).
- Mix eggs and milk in large bowl with an electric mixer (I use my stand mixer).
- Pour half the egg mixture over each pan.
- Bake for 35 minutes.
- Let it stand for about 15 minutes before you put it in containers to freeze.
- Reheat a 3/4 cup serving for 3 minutes on high.
- This is really good if you alter this in lots of ways! You can use chorizo (mexican sausage) and salsa for a nice twist.

- Spray 11x7 inch glass baking dish with nonstick cooking spray.
- Spread potatoes evenly in baking dish.
- Add cheese; stir gently to mix.
- Beat eggs thoroughly in medium bowl.
- Add milk, Mrs. Dash seasoning, salt and hot sauce; beat until well blended.
- Pour over potato-cheese mixture.
- Top with bacon.

2BLEU'S COUNTRY HAM BACON (AND EGGS)
Here's how to turn that salt cured ham into a delicious breakfast bacon. Do not use the ham slice you find in the refrigerated section of your grocery store. You can however, use leftover bone-in baked ham as even the smallest pieces will taste so good (nibblers). A cast iron skillet works best for a true country breakfast. The eggs are optional for this recipe, but if you have never slow cooked your eggs, or never tried them with garlic powder, it's a real treat! Leftover ham is great to chop up and use in green beans or collard greens for dinner.

- Cut the ham slices into about 3" pieces, removing the bone if it has one. The pieces do not have to be cut even, as I usually separate around the fat, leaving some fat for flavor.
- CURED HAM ONLY: (If using leftover baked ham, see instructions below). Place the salt cured ham slices in a large *cast iron* pan (it's okay if they overlap at this point) and add the water, enough to cover the ham slices completely. The water may cook down some, so add more as you go as this removes the saltiness from the ham. The more water in the pan, the better.
- Cook over med heat to a gentle simmer for about 10-15 minutes until most of the salt has dissipated into the water, turning the ham a few times to 'shake the salt out'. Remove ham slices and (using a good potholder) rinse and wipe the skillet with a clean dishcloth. Just a quick rinse/wipe to remove any salt and residue.
- For BOTH types of ham: Place pan back on stove-top at a medium heat. Add the oil to the pan followed by the ham slices. Lay them in a single layer enough to fill pan but not overcrowd them. Do in batches if necessary. Cook for about 10-20 minutes depending on thickness, turning occasionally until browned. Drain ham onto paper towels. Add more oil to the pan if necessary for the next batch, although the ham will usually make it's own in the pan from the previous batch. You only need enough to cover the bottom of the pan.
- EGGS: (about 15 minutes to cook) To a *nonstick* skillet, melt butter over medium-low heat (slow cooked scrambled eggs turn out extremely smooth and creamy). Beat eggs and seasonings until very well blended. When butter has melted, pour in the eggs. As they begin to firm, push them around a bit using a spatula. Continue cooking eggs low and slow while ham is cooking in the iron skillet. The ham should be done first, just place a piece of foil over top to keep warm.
- When the eggs are about a minute from your desired doneness, place onto plates and serve with ham. (remember: scrambled eggs continue to cook after you remove them from the heat).

- Whisk eggs, milk, salt and pepper together in a medium bowl until well blended. Reserve 2 tablespoons of green onions and stir the rest into egg mixture.
