FAMILY-FAVORITE OATMEAL WAFFLES

Steps:
- In a large bowl, combine flour, oats, baking powder, cinnamon and salt; set aside. In a small bowl, whisk eggs, milk, butter and brown sugar. Add to flour mixture; stir until blended. , Pour batter into a lightly greased waffle iron (amount will vary with size of waffle iron). Close lid quickly. Bake according to manufacturer's directions; do not open during baking. Use fork to remove baked waffle. Top with fresh fruit and yogurt.

CINNAMON OATMEAL WAFFLES
This oatmeal waffles recipe comes out crispy and fluffy every time, and it's made with oat flour and no milk. This is my family's favorite Belgian waffle and it's naturally gluten-free!

Steps:
- Melt butter and set aside to cool slightly.
- Meanwhile, measure oats, baking powder, salt and cinnamon into the blender. Process on high until the mixture resembles flour, about one minute.
- Add 1 cup water, eggs and optional sweeteners and blend on high* into a batter, about one minute.
- Add the butter and again, blend on high *for about one minute.
- Allow the batter to sit for 5 minutes and preheat the waffle iron according to manufacturer directions.
- Stir the batter well. At this point the batter should be thin enough to *just* run off the spatula, but no thinner. If it doesn't, add 1/4 cup water and re-blend.
- Pour the desired amount of batter** into the waffle iron. The batter will not spread on its own, so use a spatula to spread it all the way to the edges. Cook the waffle as desired, or according to manufacturer directions.
- Repeat with the remaining batter, stirring well before pouring onto the waffle iron.

These Oatmeal Waffles are such a delicious breakfast. Light, fluffy, and full of flavor. Also, these healthy waffles are packed with oats and made without unhealthy processed sugar. Super simple and taste amazing.

Steps:
- Start with preparing and measuring all the ingredients. I like to use measuring cups.
- Take the blender and add all ingredients. Note: add wet ingredients first for easier blending.
- Mix everything at high speed until you get a smooth texture.
- Taste the batter and add additional sweetener if you think the mixture is not sweet enough.
- Let the batter rest for a few minutes.
- Turn on the waffle maker and let it heat until it's hot (the green light must be on).
- Coat waffle plates with cooking spray or melted coconut oil using the brush.
- Pour the batter onto the hot waffle plates, close the lid and allow the waffles to cook. Depending on your waffle maker it will take between 8-10 minutes per batch.
- Once baked, remove waffles from the waffle maker and place them on a cooling rack. Fresh baked waffles will be soft when you take them out of the waffle maker but they will harden as they cool on the rack.
- Repeating the process with the rest of the batter. Make sure to grease the waffle plates before adding the batter to prevent sticking.
- Transfer cooled waffles to a plate.
- Add toppings (optional): I used banana, blueberries, and maple syrup. Be creative here and add toppings you like.
- Serve and enjoy!

JERICO'S MAPLE CINNAMON WAFFLES
The story of Jerico Roman touched many people around the world, including us here at Nature's Path. Nine year old Jerico is living with autism and struggles with extreme oral aversion. The only food he has been able to accept has been Nature's Path Maple Cinnamon Waffles. Unfortunately, that particular brand of waffles was discontinued several months ago. Jerico's mom, Jenna, took to social media, asking for help in finding more waffles. After hearing about Jerico's story, we searched North America for any remaining supply. We were able to track down our last 8 cases at our freezer warehouse in Illinois, and had them shipped up to Vancouver. We then personally delivered them to Jenna & Jerico. But it got us thinking, what would happen when Jerico ran out of waffles? These were the last waffles ever produced. So our incredible Research & Development Team set about recreating the recipe, so Jenna could make the waffles for Jerico at home. This is more difficult than it sounds, as some commercial ingredients are not available at the grocery store, and we wanted to be sure Jenna could easily find everything she needed for the recipe. Then the amounts had to be adjusted, but the Team was determined to get just right! Over several weeks, they repeatedly tested and tweaked the recipe and now feel they have developed a home recipe that tastes just like our commercial Cinnamon Maple Waffles. We hope you enjoy! - Heat waffle iron and set to 185-190°C (The knob would be turned about 2/3 towards max). Measure out dry and wet ingredients into separate bowls. Add wet ingredients to dry and mix with a spatula until incorporated (without over mixing). The batter will look a bit lumpy after mixing. Spray iron with cooking spray. Pour the batter onto the center of the griddle. Cook for 8-9 minutes (or until steam no longer exits the waffle iron). The timing may differ depending on temperature of the waffle iron. Enjoy them hot or freeze and reheat when ready to consume!
