A nice chewy cookie. I like to add M&M's, or chocolate chunks for a change. You can use all creamy, or all crunchy peanut butter. I like to use both.

1/2 cup shortening
1/2 cup butter, softened
1 cup brown sugar, packed
3/4 cup white sugar
1/2 cup creamy peanut butter
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract
2 eggs
1 1/2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 1/4 cups quick-cooking oats

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl, cream together shortening, butter, brown sugar, white sugar, peanut butters and vanilla until smooth.
  • Beat in the eggs until well blended.
  • In another bowl, combine the flour, baking soda, and salt; stir into the creamed mixture.
  • Mix in the oats until just combined.
  • Drop by tablespoonfuls onto ungreased cookie sheets.
  • Bake for 8-10 minutes, or until just light brown.
  • Cool and store in an airtight container.

½ cup margarine, softened
1 cup packed brown sugar
¾ cup white sugar
1 cup peanut butter
2 eggs
1 ½ cups all-purpose flour
2 teaspoons baking soda

1 cup quick-cooking oats

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together shortening, margarine, brown sugar, white sugar, and peanut butter until smooth. Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined. Drop by teaspoonfuls onto ungreased cookie sheets.
  • Bake for 10 to 15 minutes in the preheated oven, or until just light brown. Don't over-bake. Cool and store in an airtight container.

1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1/2 cup unsalted butter, room temperature
3/4 cup creamy peanut butter

1/2 cup brown sugar
1 large egg
1 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees. Line 2-3 baking sheets with parchment paper. Set aside.
  • In a medium-size bowl, whisk together oats, flour, salt, baking soda, and cinnamon.
  • To the bowl of a stand mixer, add the butter, peanut butter, white and brown sugars. Beat until creamy, about 2 minutes. Add the egg and vanilla and beat until blended.
  • Set the mixer to low and add in the dry ingredients. Mix until combined. Scrap down the sides of the bowl. Using a large cookie scoop, #16, scoop out cookie dough and place on prepared baking sheets, leaving about 2 inches between cookies. Place 6 cookies per baking sheet.
