This pie is very much like a pecan pie without the nuts.

2 eggs
¾ cup white sugar
1 cup butter, melted
¾ cup dark corn syrup
¾ cup quick cooking oats
1 teaspoon vanilla extract
¼ teaspoon salt
¾ cup flaked coconut
1 recipe pastry for a 9 inch single crust pie

Steps:

  • In a medium bowl, beat the eggs well. Stir in sugar, butter or margarine, corn syrup, oatmeal, vanilla, and salt. Pour mixture into the pie shell, and top with coconut.
  • Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool before serving.

  • Toss with sugar, nuts and melted butter.

I just found this recipe in an old band bosters cookbook and placing it here for sharing and later use. The recipe mentions that it is a good substitute for graham cracker crust. It sounds good to me and might be a good alternative for cream pies or maybe even dutch apple or cherry.

1/2 teaspoon vanilla
1/3 cup melted butter
2/3 cup finely minced walnuts

  • Preheat oven to 350F.
  • Toast oatmeal in a shallow pan for 10 minutes to brown, watch carefully.
  • Remove from oven and in small mixing bowl combine oatmeal with remaining ingredients.
  • Press into 9-inch pie plate.
  • Fill with desired filling and bake or bake crust empty for later use.

Kosher salt and freshly ground pepper
1 large egg
3/4 cup milk
4 strips thick-cut bacon, sliced
2 leeks, sliced into half-moons
2 cloves garlic, minced
1/4 cup chopped fresh parsley
4 5-ounce skinless trout fillets
3 tablespoons extra-virgin olive oil
1/4 cup red wine vinegar

Steps:

  • Preheat the oven to 300 degrees F. Coarsely grind the oatmeal in a food processor. Transfer to a shallow dish and season with salt and pepper. Beat the egg and milk in another shallow dish.
  • Cook the bacon in a large skillet over medium heat until crisp, about 8 minutes. Transfer to a paper-towel-lined plate. Remove and reserve all but about 2 tablespoons drippings from the skillet. Add the leeks and garlic to the skillet and cook until tender, about 5 minutes. Add the parsley, bacon, and salt and pepper to taste; keep warm.
  • Line a baking sheet with a double layer of paper towels. Dredge the trout in the oats, dip in the milk mixture and then in the oats again, turning to coat. Heat the reserved bacon drippings with the olive oil in another large skillet over medium-high heat. Fry the trout in batches until golden on one side, about 3 minutes, then flip and fry until cooked through, about 2 more minutes. Transfer to the prepared baking sheet and keep warm in the oven. Add the vinegar to the skillet and bring to a boil. Serve the trout with the leeks and drizzle with the vinegar dressing

1/2 cup almonds, whole
1/2 cup walnuts or 1/2 cup pecans, whole
1 cup rolled oats
1/2 cup unbleached flour
1 pinch sea salt
3 tablespoons canola oil or 3 tablespoons butter, melted
3 tablespoons maple syrup
1 tablespoon water
1 tablespoon vanilla extract

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Bake the almonds and walnuts or pecans on separate baking sheets until they are fragrant and toasted: about 8 minutes for pecans or walnuts, 10 minutes for almonds. Remove from the oven and set aside to cool. Raise the oven temperature to 375°F.
  • 3. Grind the oats in a blender or food processor until they become a coarse meal. Empty into a large mixing bowl.
  • 4. Grind the almonds and walnuts or pecans into a coarse meal and add to the oats, along with the flour and salt.
  • 5. In a small bowl, whip together the oil or butter, maple syrup, vanilla and water. Add to the oat-nut mixture and mix well. Allow the mixture to sit for 10 minutes in the refrigerator.
  • 6. With cold, wet hands, press the crust mixture into a well- oiled tart or pie pan. Bake for 8 to 10 minutes or until barely golden brown.
  • 7. Set aside to cool. Then add pie filling and bake for additional 30 to 35 minutes.

This recipe is what I use to make my Old Fashioned Apple Pie recipe #238257. It should make two crusts.

2 cups pastry flour or 2 cups all-purpose flour
1/4 cup old fashioned oats
1 1/2 tablespoons dry milk
1/4 teaspoon salt
1/2 cup shortening
1/3-2/3 cup water, ice cold (little at a time)

Steps:

  • Mix together all dry ingredients.
  • Blend in shortening with pastry cutter of two forks until mixture resembles coarse meal; shortening should be coated with the flour mixture.
  • Make a well in the middle of this mixture; add water until moistened.
  • Mix with a fork.
  • Dough will not be completely moist; some dry spots will be evident.
  • Pull mixture together with your hands until it holds shape.
  • Cover and chill 1 hour or overnight.
  • Roll out as you would any pie crust.
  • Cook according to your pie recipe.
  • This makes a super crust for my Old Fashioned Apple Pie, and is the crust I specify in that recipe.
  • Makes 1- 9 or 10 inch double pie crusts.

2 cups old-fashioned oat, or quick oat
½ cup butter, softened
1 cup powdered sugar
1 tablespoon cream or milk
1 teaspoon vanilla extract
1 cup marshmallow fluff

Steps:

  • Preheat the oven to 350ºF (180ºC).
  • In a large bowl, mix the butter and brown sugar until well combined.
  • Add the molasses, vanilla, and eggs, and whisk thoroughly.
  • Sift in the flour, baking soda, salt, and cinnamon. Mix until just combined.
  • Add the oats and mix until incorporated. Be careful not to overmix the batter or it might result in tougher cookies.
  • Using an ice cream scoop (or about 2 tablespoons), scoop out cookies onto a baking sheet lined with parchment paper, leaving about 3 inches (8 cm) between each one.
  • Bake for 7-9 minutes. The cookies will still be very soft, so be sure to let them cool thoroughly.
  • While cooling, make the filling by beating the butter, powdered sugar, cream, vanilla, and marshmallow fluff until well combined.
  • Once the cookies are cooled, put a spoonful of the filling on one cookie and sandwich with another. Repeat until all the sandwiches are made.
