Oh Boy Salad Recipes
BOK CHOY SALAD
Depending on what I have at home, I sometimes use only the sunflower kernels or almonds in this bok choy salad. This recipe makes a big amount, perfect for cookouts or reunions. -Stephanie Marchese, Whitefish Bay, Wisconsin

- In a large bowl, combine bok choy and green onions; set aside. Save seasoning packet from ramen noodles for another use. In a large skillet, saute the noodles, almonds and sunflower kernels in butter until browned, about 7 minutes. Remove from the heat; cool to room temperature. Add to bok choy mixture., In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Just before serving, drizzle over salad and toss to coat.

I saw this recipe this morning on the www.sparkrecipes.com website and I just LOVED the story that was associated with it so I had to post it! "Submitted by TANGO5617 - This was my great-grandfather's favorite salad. He didn't like lettuce, so when he saw this salad coming out, he always said, "Oh boy, salad!" thus the name." What a simple, and according to the reviews that are posted on the site, a yummy recipe! :-)

Steps:
- Using equal proportions of tomato and cucumber, chop everything up into small bits.
- Sprinkle with dill, or any seasoning of your choice.
- Add a spoonful of light mayo and stir until everything is well mixed. You can also use ranch dressing if you prefer.
- Serve immediately, or after chilling. It generally lasts a few days in the refrigerator, so it can be made ahead of time. Enjoy!

"OH BOY" WAFFLES
This is a hearty waffle. If you like to toast leftover waffles, butter them and then dunk them in chocolate milk this is the waffle for you. These waffles freeze really well. I got this recipe out of a Better Homes and Garden All-Time favorites magazine(1971) that I got free when I bought a jar of Prell shampoo!

- Mix wet ingredients together. Sift dry ingredients into separate bowl. Add wet ingredients. Mix till moistened. Bake in preheated waffle maker 7-8 minutes until done and golden brown.
- Cooking time is for all the waffles.
