1 c Flour
1/4 cup Whole bran cereal
1 1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1/2 teaspoon Cinnamon
1 cup Moist okara, loosely packed
3 tablespoons honey
1/2 cup Vegetable oil
1 egg
1/4 cup yogurt or buttermilk
1/3 cup raisins, chips or cut up dried fruit

Steps:

  • Combine flour, bran, wheat germ, baking powder, baking soda, salt, and cinnamon in medium-size bowl. Work in the okara with fork. Mix together and stir in honey and oil and egg. Add enough yogurt to make a moist dough that can be dropped from a spoon. Stir in raisins. Drop by tablespoonfuls onto lightly greased cookie sheet. Bake in a moderate (350 F) oven for 20 minutes or until golden brown.

1 cup okara (soybean meal)
1/2 cup whole wheat flour
1 1/2 cups rolled oats
3/4 teaspoon baking soda
1/4 cup vegetable oil
1/2 cup honey
1 teaspoon pure vanilla extract
1/4 cup carob chips (may substitute chocolate chips)
1/4 cup sunflower seeds, pistachios or 1/4 cup chopped walnuts

Steps:

  • Preheat oven to 350°F Line cookie sheets with Silpat baking liners or parchment paper.
  • Stir together okara, whole wheat flour, rolled oats, and baking soda in a medium bowl.
  • In a small bowl, whisk together vegetable oil, honey, and vanilla extract.
  • Add wet ingredients to the dry ingredients, stirring with a large fork until combined. Fold in carob chips or chocolate chips, along with sunflower seeds or nuts.
  • Drop by the teaspoonful on to prepared cookie sheets. Flatten slightly with the back of an oiled fork to about 1/2-inch thickness.
  • Bake 12 to 15 minutes.

  • Preheat oven to 375F. Process the coconut in a blender or food processor until it is coarsely ground.
  • Mix the coconut, flour, baking soda, salt, and 1/2 cup sugar in a mixing bowl. Add the okara (or drained tofu), vanilla, and coconut extract and begin to stir. Add water by the tablespoon until all the dry ingredients are incorporated and a heavy dough forms. Do not add too much water or over-stir.
  • Use a cookie scoop or tablespoon to drop rounded tablespoons of dough at least two inches apart on a baking sheet lined with silicone baking mat or parchment paper. Flatten each cookie slightly with a fork. Bake for 10-16 minutes or until edges are golden and middles seem done. Remove from oven and allow to cool for 5 minutes before transferring each cookie to a wire rack. Sprinkle with sugar and allow to cool completely before serving.
