OKLAHOMA TAMALE CASSEROLE

I made this for New Year's Eve Dinner 2003 and my family gobbled it up! It combines chicken, beef tamales, and tomatoes! Yummy!

3 slices bacon
16 canned beef tamales, cut into 2-inch pieces
4 cups diced cooked chicken
2 cups whole kernel corn, drained
2 cups canned tomatoes, drained
1 cup raisins
½ cup stuffed green olives
1 tablespoon chili powder
½ teaspoon salt
¼ cup butter
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 cups shredded sharp Cheddar cheese

Steps:

  • In a skillet over medium heat, fry the bacon until evenly brown and crisp. Drain, crumble, and set aside.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 4 quart casserole dish.
  • In a large bowl, mix the tamales, chicken, corn, tomatoes, raisins, and olives. Season with chili powder and salt. Transfer to the prepared casserole dish. Dot with butter. In a separate bowl, mix the chicken broth and Worcestershire sauce. Pour over the casserole.
  • Bake 45 minutes in the preheated oven. Top with Cheddar cheese, and continue baking 15 minutes, or until cheese is melted and lightly browned.

Not a casserole made with cornmeal, but real tamales. Very Good. Comes from Dallas Tortilla & Tamale factory. Yes they hand make every tamale and have for years.

5 dozen fully cooked tamales, corn husks removed
1 (14 ounce) can black beans, drained
1 (14 ounce) can corn, drained
1 bell pepper, diced
1 lb of grated mexican cheese
3 (14 ounce) cans of stewed diced tomatoes
16 ounces sour cream
1/4 cup pickled jalapeno pepper, chopped
1/2 cup chopped onion
cumin, to taste just dust each layer
salt, to taste just dust each layer
paprika, to taste just dust each layer
black pepper, to taste just dust each layer

Steps:

  • Mix black beans, corn, chopped bell pepper, diced pickled jalapenos, chopped onions and sour cream together. Add cumin, salt, paprika and pepper. In a square lasagna baking dish, arrange your first layer of tamales. Over the top, pour half of the stewed tomatoes and spread to cover first layer. Next, spread a layer of your sour cream mixture and then grated cheese. Arrange a second layer of tamales and repeat. Cover with aluminum foil and place in preheated oven to 350 degrees.
  • Bake for 45 minutes at 350 degrees covered. Uncover and bake for an additional 10-15 minutes uncovered.

This is made with salsa verde, very good without the usual red sauce. My daughter found this , Her family loves it.

6 beef, tamales- frozen
corn, frozen bag (10oz.)
chopped green chili, can (4oz.)
3 green onions, chopped
1 cup whipping cream
1 (8 ounce) jar salsa verde
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/4 teaspooon salt
1/4 teaspoon pepper
1 1/2 cups Mexican blend cheese

Steps:

  • Preheat oven to 375 degrees.Place frozen tamales in microwave and cook on high until thawed, about 5 minutes.
  • Remove husks, cut the tamales in half lenghtwise.
  • Place i single layer in glass dish with frozen corn, chilies, and onions.
  • Whisk cream, salsa verde, chili powder, cumin, salt and pepper in a medium bowl to blend.
  • Pour oer tamale mixture, sprinkle cheese on top.
  • bake until heated and bubbly, about 35 minutes.
  • -serve with love--.

1 jar (13-1/2 ounces) tamales
1 can (15-1/4 ounces) whole kernel corn, drained
4 slices process American cheese

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Spoon into a greased 9-in. square baking dish; top with chili. , Remove papers from tamales; cut each into six slices. Arrange over chili. Sprinkle with corn and top with cheese. Bake, uncovered, at 350° for 30 minutes or until heated through.

1 can (15 ounces) chili with beans
1 medium onion, chopped
2 cups corn chips, coarsely crushed, divided
1 cup shredded cheddar cheese
1 to 2 ounces sliced cheddar cheese

Steps:

  • Cut tamales into 3/4-in. slices. Place in a greased shallow 1-qt. baking dish. Top with half of the chili and onion. Sprinkle with 1/3 cup corn chips and shredded cheese. Top with remaining chili and onion., Cover and bake at 350° for 30 minutes. Uncover; sprinkle with the remaining corn chips. Arrange cheese slices over top. Bake 5-10 minutes longer or until chips are crisp and cheese is melted.
