OLD FASHIONED GRILLED CHEESE
I never seen anyone make this recipe before except the women on my mother's side of the family. It is a very old recipe.

Steps:
- In a 1 or 1.5 Pt bowl, whisk together one large egg with 2 - 3 TBSP of Milk or Cream This is to make it not too runny/liquid but to make the egg able to coat both sides of the 2 halves of bread.
- Prepare a 9 inch skillet by either spraying with cooking spray or buttering it generously.
- Preheat skillet over medium heat. The skillet MUST be hot before frying bread slices or unwanted results may occur.
- Quickly coat both sides of one slice of bread in the egg/milk or cream mixture.
- Fry in the hot skillet on both sides till golden brown(Time will vary because of several factors but usually 60 seconds or less so keep an eye on it)
- Put the first fried slice on a clean plate.
- Coat second slice of bread in the egg/milk or cream & fry both sides.
- This time when both sides are fried; lay the slice of your favorite cheese on the slice of fully cooked bread in the skillet and cover with first slice of bread.
- Turn over and wait 15-30 seconds until the cheese melts.
- Enjoy!

GOOD OLD-FASHIONED AMERICAN GRILLED CHEESE AND TOMATO SOUP

- Heat a large nonstick pan over medium-low heat. Place 5 slices* of cheese in between two slices of bread (two on each side and one in the middle). Spread about 1 tablespoon butter on each exterior side of the bread. Remember, crust-to-crust is a must. Repeat with the remaining ingredients. Place the first side in the pan (cooking in batches if necessary) and "dome" with an inverted large metal bowl or pan lid to create the proper vortex of heat. Cook until golden brown, 3 to 4 minutes, then flip and continue to cook until the cheese is gooey and bread is golden brown, 3 to 4 minutes more.
- Cut, slowly separate and watch as the cascade of gooey good ol' American cheese catches the sunlight streaming through the kitchen window and throws a glow of warm orange light throughout your entire house. Repeat with the remaining sandwiches. Serve with the Tomato Soup.
- *I know this sounds excessive, but it ensures the most possible ooey-gooeyness. If you're watching the intake, you can scale back to 3 slices.
- Heat a large Dutch oven or soup pot over medium heat. Add the butter, onions, carrots, celery, chile flakes and a couple pinches of salt and pepper. Sauté until translucent, 10 to 12 minutes. Add the tomato paste and cook for an additional minute. Deglaze with the sherry while scraping up any brown bits from the bottom of the pot. Add the tomatoes, bay leaves and stock. Simmer until everything is cooked through and very tender, about 1 hour.
- Discard the bay leaves and blend the soup until completely smooth and uniform in texture using an immersion blender. Add the heavy cream and adjust the seasoning. Serve!
CLASSIC AMERICAN GRILLED CHEESE

- Preheat the griddle to medium heat.
- Build the sandwiches with 1 slice of white cheese on 4 pieces of bread and 1 slice of yellow cheese on the other 4 slices of bread. Close the sandwiches and butter both sides. Place on the griddle; cover with a metal bowl and let the sandwiches get a nice golden brown, 2 to 3 minutes. Flip, cover again and cook until the cheese is melted and the sandwiches are golden brown, 2 to 3 minutes.
CLASSIC GRILLED CHEESE

- Heat a griddle or large cast-iron skillet over medium-low heat. Place two slices of bread on a clean work surface, and cover each with a layer of cheese; top with remaining bread slices, pressing gently to adhere. Generously butter both sides of each sandwich, spreading it all the way to the edges.
- Place sandwiches on the griddle or in the skillet. Cook until golden brown on each side and the cheese has completely melted, 3 to 4 minutes per side, turning once. Before removing from griddle, flip sandwiches to reheat first side, about 15 seconds. Cut each sandwich diagonally in half; serve immediately.

Steps:
- Combine water, vinegar, sugar, red pepper flakes, and garlic in a small saucepan over medium heat; cook and stir until sugar is dissolved and sauce is slightly reduced, about 5 minutes.
- Heat a skillet over low heat.
- Spread butter onto 1 side of each bread slice. Spread cream cheese on the opposite side of 1 of the bread slices. Layer Cheddar cheese and pickles on top of the cream cheese layer. Drizzle 1 to 2 tablespoons sauce on the other slice of bread on the side opposite the butter; place bread on top of pickle layer, butter-side on the outside, creating a sandwich.
- Cook sandwich in the hot skillet until cheese is melted and bread is browned, about 5 minutes per side. Remove top bread piece, add tomatoes to middle, and close sandwich.

- Heat broiler. Divide beef into 4 rounds and place each between two layers of plastic wrap. Using a rolling pin, roll beef into 1/4-inch-thick patties. Butter inside of each bun. Place on a baking sheet, buttered side up, and toast under broiler.
- Heat a large cast-iron skillet or griddle over high. Generously season patties on both sides with salt and pepper. Working in batches, cook burgers 1 to 2 minutes. Flip and top each with cheese; cover and cook 1 to 2 minutes more. Place burgers on buns and serve with desired toppings.

- Put the bread on a plate. Butter the top surface of each slice with softened butter (you can use margarine or mayonnaise if you don’t have softened butter on hand).
- Flip the slices over. Put a whole processed cheese slice onto one piece of bread. Then tear another slice into strips and use the strips to cover any bread that is still showing. Invert the cheese-less bread onto the cheese. Now both breads are butter-side-out and there is cheese in between them.
- Put sandwiches into a skillet that is on low or medium-low heat. Peek underneath from time to time to make sure that the undersides aren’t browning too quickly. The trick is to keep the heat low enough that the bread doesn’t burn but warm enough that the cheese melts. It will take 2-5 minutes for the bread to toast, depending on the temperature setting and type of pan used.
- When the underside is nicely browned, use a spatula to flip the sandwich over. Cook on the other side until it is brown underneath as well, 2-5 more minutes.
