EASY OLD FASHIONED MEATLOAF

Easy Old Fashioned Meatloaf image

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

FAVORITE OLD FASHIONED MEATLOAF

Favorite Old Fashioned Meatloaf image

Makes a moist, delicious meatloaf that is firm and not crumbly--perfect for sandwiches the next day (if there are leftovers). It reheats well, too. The beef should be at or near room temperature when you make it; if it isn't, it will take longer to cook.

Provided by Halcyon Eve

Categories     Meat

Time 1h10m

Yield 1 loaf, 6-8 serving(s)

Number Of Ingredients 10

2 lbs 85% lean ground beef (do not use leanest ground beef or meatloaf will be crumbly, about 12-16% fat is ideal)
2 large eggs
1/2 cup finely chopped onion
1/4 cup finely diced celery
2 -3 slices firm bread (slightly stale, the drier the better)
1 -2 teaspoon salt (to taste, I leave out)
1 teaspoon Coleman's dry mustard
1/4 cup milk
1/4 cup ketchup
additional ketchup, if desired (to accompany)

Steps:

  • An hour or so before preparation, remove beef from fridge and allow to come to room temperature.
  • Preheat oven to 400* F. Grease a standard sized loaf pan and set aside.
  • In blender, process bread into fairly fine crumbs--you need about 1 1/2 cups of crumbs.
  • In a large mixing bowl, beat eggs slightly with a fork. Add hamburger, breaking into large pieces as you do so. Mix slightly with a wooden spoon or paddle.
  • Add remaining ingredients and mix well with spoon or paddle. When fairly well incorporated, finish mixing by hand until you have a relatively homogeneous mixture. Don't handle too much or meatloaf will be tough.
  • Place meat mixture into loaf pan, pressing down as you do so to eliminate air pockets. Press down and flatten top. Meatloaf may have overflow of grease while cooking, so place on a baking sheet if desired to simplify cleanup.
  • Bake at 400* F for 50 minutes or until juices are clear and meat thermometer registers about 160-170* F.
  • Remove from oven, allow to rest for 5-10 minutes, and drain juices. Carefully invert onto serving platter. Serve sliced, with ketchup if desired.

  • First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
  • Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
  • Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it’s OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 Tbl of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more Tbl of oats (don’t worry if they aren’t soaked). If too dry, add in the milk 1-2 Tbl at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.

Top Asked Questions

Is there an old fashioned meatloaf recipe?
This Old-Fashioned Meatloaf is about the only meatloaf recipe you will ever need. It’s quick, easy and delicious, making it the ultimate Sunday OR weeknight dinner. It stays super moist, has a delicious tangy glaze, and best of all, leftover meatloaf makes great sandwiches for lunch throughout the week.
How to make Meat Loaf?
To make the meat loaf: In a large bowl, combine the turkey, bread crumbs, onions, carrot, milk, tomato sauce, egg, garlic, Worcestershire sauce, salt, and pepper. Mix gently but thoroughly. Mound the meat loaf mixture onto the prepared baking sheet, patting it into a loaf shape with your hands.
How long to cook meatloaf (and why)?
Keep in mind meatloaf can take longer to cook the thicker your meatloaf is. I like also making individual meatloaves for faster cooking time. Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf. Then return to oven for 10-15 minutes. This makes about six servings.
What is an old fashioned loaf?
An Old-Fashioned Loaf is distinctive from spam, pastrami, and ham with its lower sodium content. The use of ground meat is also unique as bologna comes from mechanical separation. Pastrami is meat that is brined and then dried.
