AUNT ROSE'S FANTASTIC BUTTER TOFFEE
I don't live in the country, but I love everything about it-especially good old-fashioned home cooking! Every year, you'll find me at our county fair, entering a different contest. This easy toffee recipe is a family favorite. -Kathy Dorman, Snover, Michigan

- Preheat oven to 350°. In a shallow baking pan, toast almonds until golden brown, 5-10 minutes, stirring occasionally. Cool. Pulse chocolate in a food processor until finely ground (do not overprocess); transfer to a bowl. Pulse almonds in food processor until coarsely chopped. Sprinkle 1 cup almonds over bottom of a greased 15x10x1-in. pan. Sprinkle with 1 cup chocolate., In a heavy saucepan, combine butter, sugar and water. Cook over medium heat until a candy thermometer reads 290° (soft-crack stage), stirring occasionally., Immediately pour mixture over almonds and chocolate in pan. Sprinkle with remaining chocolate and almonds. Refrigerate until set; break into pieces.

TRADITIONAL ENGLISH TOFFEE
English toffee is a classic candy recipe. Learn how to make this buttery toffee at home. It's delicious on its own or covered in chocolate and nuts.

- Gather the ingredients. Preheat oven to 325 F.
- Toast the nuts by spreading them on a cookie sheet and placing them in the preheated oven for approximately 10 minutes. Stir them every 3 to 4 minutes, and remove them once they darken and become fragrant. Let the nuts cool to room temperature.
- Chop the toasted nuts finely with a knife or food processor .
- Prepare a 12x16 inch cookie sheet by lining it with aluminum foil and spraying it with nonstick cooking spray.
- Combine the butter, sugar, water, corn syrup, and salt in a large heavy saucepan over medium heat. Stir constantly to dissolve the sugar and melt the butter. Insert a candy thermometer and bring the candy to a boil, periodically brushing down the sides with a wet pastry brush to prevent crystallization.
- Continue to cook the candy, stirring frequently, until it reaches 300 F, and begins to caramelize-about 20 to 30 minutes. If the candy appears to separate (with a layer of melted butter on top) stir vigorously to make it come back together again. Watch the candy as it approaches 300 F since it cooks quickly and can scorch at high temperatures.
- Once the candy reaches 300 F, remove from heat and pour it onto the prepared baking sheet. Use a spatula or spoon to spread the candy to an even thickness. Allow the toffee to begin to set, then spray a knife with nonstick cooking spray and score the toffee into small squares or rectangles. Allow the toffee to cool completely.
- Once the toffee is cool, break it apart on the scored lines into small squares. The toffee can be left plain, or dipped in chocolate.
- To dip the toffee in chocolate, begin by melting the chocolate . Place it in a microwave-safe bowl and microwave it in one-minute increments, stirring after every minute to prevent overheating.
- Dip each piece of toffee in the chocolate, either submerging it completely or dipping it halfway in, according to your preference. Place dipped toffee pieces on a baking sheet lined with aluminum foil. While the chocolate is still wet, sprinkle the top generously with chopped nuts. Repeat with remaining toffee, chocolate, and nuts.
- Place the toffee in the refrigerator to set the chocolate, about 20 minutes. Once set, toffee can be served immediately.

BEST TOFFEE EVER - SUPER EASY
Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

OLD FASHIONED MACINTOSH TOFFEE
This is the best toffee I have ever tasted. It is a popular item at the Christmas Farmer's Market here,with just 4 ingredients it's easy to make. We prefer to decrease the cooking time slightly for a softer toffee.

- Grease an 8" cake pan.
- In a large heavy saucepan, soften the butter.
- Stir in remaining ingredients.
- Stirring constantly, bring to a boil over medium high heat.
- Candy thermometer should reach 260 degrees or hard ball.
- Stir constantly as it will stick to the pan easily.
- Pour into pan quickly and cool.
- You may make a softer toffee by decreasing cooking time slightly.

- In a large saucepan, melt butter and sugar over medium-high heat. Insert candy thermometer to the side of your pot or have handy for checking throughout the cooking. Allow it to come to a boil and stir.
- Just after all is melted and it is just beginning to heat up, prep the baking sheet. LIne a rimmed baking sheet with foil. Spread 3/4 C of the sliver almonds evenly over the foiled baking sheet. Reserve the remaining almonds and chop them into smaller pieces - this will be for the top of the toffee later.
- Stir continuously over the next 15-20 minutes. It will darken over time and once it is a medium-brown color with hints of brown/red (amber) check the reading on your candy thermometer. You want it at the SOFT CRACK heat which is 280-285°.
- As soon as it reaches 280-285°, safely pour the toffee evenly over the almonds on the prepared baking sheet.

- Chop the Almonds (1 pound) into large chunks – just a rough cut. Set aside these go into the toffee.
- Line a baking sheet pan with parchment paper - set aside. In a food processor grind the remaining almonds into a coarse meal. Place almond meal on the baking sheet with the parchment paper.
- Add your Unsalted Butter (2 cup) and Salt (1 teaspoon) to pot and melt completely then slowly add your Granulated Sugar (2 cup) while stirring continually. Add your Water (1 tablespoon) and Light Corn Syrup (1 tablespoon) and continue to stir. The sugar will at first sink to the bottom of the pot. It will gradually melt and begin to incorporate into the butter. Then the mixture will begin to turn to look like taffy and change color.
- I cooked it until it reached 300 degrees F (150 degrees C) with a candy thermometer. You must be very careful working with this stuff not to get burned. Do not touch any of the candy mixture.
