OLYMPIC RINGS FRUIT PIZZA
Ring in the Olympics with this festive fruit pizza from out Test Kitchen. A chocolate cookie crust is topped with cream cheese frosting and colorful fruit.

- In a bowl, cream butter, shortening and sugars. Beat in the egg, melted chocolate and vanilla; mix well. Combine the flour, cocoa and salt; gradually add to creamed mixture. Cover and refrigerate for 30 minutes., Place waxed paper over a 15x10-in. baking sheet without sides. Shape dough into a flattened rectangle and place on prepared baking sheet. Cover dough with waxed paper; roll dough to within 1/4 in. of edges of baking sheet. Remove top sheet of waxed paper; invert dough onto another greased baking sheet. Remove remaining waxed paper., Using a 4-1/2-in. diameter plate or bowl and a knife, trace three touching circles along a long side of the dough. Trace two more circles centered below and overlapping upper circles by 1 in. Cut around outer edges of the rings; remove dough around rings and use to make cookies if desired. Bake rings at 350° for 14-16 minutes. Cool on a wire rack., In a small bowl, beat cream cheese and confectioners' sugar until smooth. Add whipped topping; mix well. Transfer cooled crust to a serving platter. Spread with frosting. On top rings, from left to right, place blueberries, blackberries and strawberries. Place pineapple and kiwi on lower rings. Store in the refrigerator.

- Ina bowl, combine 2 cups flour, yeast and salt. Add water and oil; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6 minutes. Cover and let rest for 10 minutes. Roll the dough into a 16x11-in. rectangle; transfer to a greased 15x10x1-in. baking pan. Press dough 1/2 in. up the sides of pan. Spread with pizza sauce and sprinkle with cheese. Arrange pepperoni on top in five interlocking circles. Bake at 400° for 20-25 minutes or until crust and cheese are lightly browned.

OLYMPIC-RING PANCAKES
I love using food to teach my kids about life and culture. Watching the Olympic Games, we learned about the history of the interlocking-rings symbol: The colors were those on the flags of the competing countries in 1914, when the symbol was created. We also talked about how athletes need the best possible "fuel" for their bodies. These all-natural whole-wheat pancakes are a great way to kick off the games.

- Preheat a skillet or cooking surface to medium-low. Add the flour, baking powder and salt to a large bowl. Make a well in the middle, add the egg, milk, vanilla and 2 tablespoons of the sugar, and mix until just combined; add more milk if necessary to achieve the desired consistency.
- Transfer 1/3 of the batter to a medium bowl; set the rest aside. Add the cocoa, the remaining teaspoon sugar and the cinnamon to the medium bowl, and combine. (I add the cocoa to achieve more depth of color without using too much food coloring. Plus, the kids like the idea of chocolate pancakes.)
- Divide the cocoa batter into 2 bowls. Add red food coloring to 1 and black to the other. Divide the remaining batter into 3 bowls, and dye 1 each yellow, blue and green with the food coloring.
- Spray the skillet with nonstick cooking spray or use butter. If using fruit, add it right before you begin cooking. Scoop 1/4-cupfuls of batter onto the skillet, and cook until the edges are firm, 2 to 3 minutes per side.
