MAPLE BAKED BEANS
Since my husband raises hogs and my parents produce maple syrup, this recipe's a natural for me! I usually prepare Maple Baked Beans just for us during the winter. In summer, I'll often make it for family picnics and get-togethers.

- Sort and rinse beans; place in a 4-qt. Dutch oven. Cover with 2 qts. cold water. Bring to a boil; reduce heat and simmer for 2 minutes. Remove from the heat. Cover and let stand 1 hour. Drain and rinse beans. Return beans to Dutch oven; cover with remaining water. Bring to a boil; reduce heat and simmer for 30-40 minutes or until almost tender. Drain and reserve liquid. In a 2-1/2-qt. casserole or bean pot, combine beans with all remaining ingredients. Cover and bake at 325° for 2-1/2 hours or until tender. Stir occasionally; add reserved bean liquid, if necessary.

SPICY MAPLE BAKED BEANS
Yum! A classic New England dish made zingy with Tabasco. This can be cooked in a crockpot on low for about 8 hours and finished in the oven, uncovered, at 350 for about 1 hour. (The crockery liner of most crockpots can go into the oven.) Or bake in a covered casserole or dutch oven at 250 for approx 4 hours, remove cover and cook until thick, about 1 hour.

- Soak beans overnight in 6C water, or boil 2 minutes to soften and let soak 1 hour while prepping other ingredients. Drain beans.
- Mix all in crockpot/casserole, adding enough water to cover, plus about 4 inches extra. Check pot halfway through and add more water if dry. If you won't be home, just start out with more water; you can cook it off during the final hour. When removing cover for the last hour, taste and adjust seasonings.

MAPLE BAKED BEANS
Steps:
- Place the beans in a large bowl and cover with cold water by 1-inch and cover with plastic wrap. Refrigerate overnight. Drain and rinse the beans and then drain again.
- Place the beans in large pot with 2 quarts water, the onion, bay leaf, and peppercorns. Bring to a boil, then lower the heat and simmer for about 50 minutes, or until tender. A good test is to scoop up several beans in a spoon and blow on them: if the skin starts to peel off, they're done. Drain the beans, reserving the cooking liquid.
- Preheat the oven to 225 degrees F.
- In a small saucepan, whisk together the maple syrup, brown sugar, ketchup, chili paste, ginger, salt, and 1 1/2 cups of the cooking liquid, still reserving the remaining liquid. Bring to a simmer and cook over medium heat for 6 minutes.
- Transfer the beans to a medium Dutch oven or a bean pot. Push half the bacon into the beans and place the rest on the top. Pour the maple syrup sauce over the beans. Place the lid on top and bake for 6 to 8 hours. Check occasionally; if the beans are too dry, add 1/2 cup more of the cooking liquid. If you like, you can remove the lid for the last 30 minutes to thicken the sauce. Discard the bay leaf. Serve hot.
SIMPLE MAPLE BAKED BEANS
I came up with this recipe in a pinch after running out of baked beans at our oldest daughter's birthday party. I dressed up canned beans with maple syrup and a few other ingredients to produce this sweet, saucy version that tastes like homemade. They're so easy to fix that I rarely make baked beans from scratch anymore.

- 1. In a large pan, cover the beans with water. Bring to a boil and simmer until tender, about 1 hour.
- 2. Preheat oven to 300°F.
- 3. In a bowl, combine everything else except the bacon. Stir in the beans.
- 4. Place 1 bacon strip at the bottom of a large ovenproof dish or Dutch oven. Pour the bean mixture over it, then push the other strip in.
- 5. Add just enough boiling water to the pot to cover everything.
- 6. Cover the pot with aluminum foil, then a lid. Bake for 5 hours, checking hourly to make sure the beans aren't drying out. (Add more water as necessary to keep them submerged.) 7 Uncover for the last half hour to brown the top, if desired.
MAPLE BAKED BEANS (PARKER'S MAPLE BARN)
I've tried several baked bean recipes and this is one of my favorites. I grew up standing in line on Sunday mornings waiting for a coveted seat for breakfast at Parker's Maple Barn in NH. I was delighted that this recipe was on Food Network's FoodNation With Bobby Flay.

- Preheat oven to 250 degrees F.
- Fill a stockpot with the beans and enough cold water to cover them. Bring the water to a boil and parboil the beans for approximately 20 minutes. Drain the water and reserve for later use.
- Put together Bean Goop: In a large bowl or medium-size saucepan, mix the hot water with the sugars and molasses to dissolve the sugars. Then mix in all remaining ingredients. Set aside for use in the Baked Beans. Yield: about 1 quart.
- Place 4 salt pork cubes and half of the onion on the bottom of the bean pot. Fill the pot 3/4 full with beans. Add the Bean Goop. Fill the rest of the pot with the reserved water. Place the remaining cubes of salt pork and onion on top of the beans.
- Cover first with a layer of plastic wrap, then a layer of aluminum foil. Bake in the oven for 10 hours.
- Check beans at that time, blowing on them to see if the skin peels back. If so, they are finished. Time will vary depending on your oven and how long the beans were parboiled in the beginning. Cooking time could increase to as long as 12 hours total.

SPICY BAKED BEANS

- Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours.
- Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them.
- Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds.
- Preheat oven to 250 degrees.
- Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the cilantro, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours.
- Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining cilantro, and serve.

- Drain beans and put in a 3-quart wide shallow pot or flameproof baking dish along with remaining ingredients, stirring to combine. Bring to a boil on top of stove, then cover tightly and bake in middle of oven until beans are just tender, about 2 hours. Uncover and bake until most of liquid is absorbed and top is slightly crusty, 1 to 1 1/2 hours more.
