BROILED HALIBUT WITH BECHAMEL SAUCE

- Cook's Note: The halibut can be substituted with 24 ounces of sole fillets. Reduce the cooking time in the wine mixture to 3 to 4 minutes.
- Spray a 7 by 11-inch glass baking dish with cooking spray. Set aside.
- For the bechamel sauce: In a 2-quart saucepan, melt the butter over medium heat. Add the flour and whisk until smooth, about 2 minutes. Gradually add the warm milk, whisking constantly to prevent lumps. Simmer over medium heat, whisking constantly, until the sauce is thick and smooth, about 10 minutes. Remove the pan from the heat and stir in the cheese, salt, pepper, and nutmeg.
- For the halibut: In a large saucepan, bring the wine and water to a boil over medium-high heat. Reduce the heat to a simmer and add the halibut. Cover the pan and cook until the flesh is opaque, 8 to 10 minutes. Using a fish spatula, carefully remove the fish and arrange in a single layer in the prepared baking dish. Season with salt and pepper.
- Preheat a broiler. Spoon the bechamel sauce over the fish and top with the Parmesan. Dot with butter and broil until golden, 2 to 4 minutes.
BROILED HALIBUT WITH GOAT CHEESE CRUST
This is my stand by easy dinner party recipe. The fish is light and flaky and is complemented nicely by the richness of the herbed goat cheese topping. It's impressive yet as simple as can be.

- In a small bowl, stir goat cheese. Pat this evenly over the tops of the halibut steaks.
- Press fish, cheese-side down, into a bowl of breadcrumbs. Place the steaks on a baking sheet. Spray lightly with PAM.
- Bake for about 15-20 minutes at 400 degrees. You will know they are done when the topping is browned and the fish can be flaked with a fork.

- Preheat the oven's broiler and set the oven rack at about 6 inches from the heat source.
- In a small bowl, stir together the goat cheese, lemon pepper and salt. Pat this evenly over the tops of the halibut steaks. Place the steaks on a baking sheet. Pinch off tiny pieces of butter and place them on top of the cheese coating, using about 1 tablespoon per steak.
- Broil for 8 to 10 minutes per inch of thickness of your steaks. You will know they are done when the cheese is browned and the fish can be flaked with a fork.
- While the fish is cooking, combine the remaining butter, lemon juice, cream cheese, milk and chives in a small saucepan. Cook while stirring over low heat until everything is melted and smooth. Spoon sauce onto dinner plates and place the halibut steaks on top to serve.

VANILLA SPICE-RUBBED GRILLED PEACHES WITH FRESH GOAT CHEESE
These are like little warm peach pies--without the crust! You can serve the peaches with vanilla ice cream instead of the goat cheese. Adapted from a recipe by chef Tom Douglas by way of the Chicago Tribune.

- Prepare a grill for medium direct heat.
- For the rub, put the sugar in a small bowl. Scrape the seeds from the vanilla bean into the sugar using the tip of a sharp paring knife (tuck the bean into a bowl of sugar for vanilla sugar).
- Mix the vanilla seeds with the sugar, using the tips of your fingers to break up clumps. Stir in the pepper and cinnamon.
- Cut the peaches in half; remove the pits. Brush the cut sides lightly with oil; sprinkle generously with the spice rub (you will not use all the spice rub -- reserve the remaining for another use).
- Place the peaches, cut sides up, on a lightly oiled grill; grill until the peaches are starting to soften and the skin side is marked by the grill, about 3 minutes.
- Turn; grill until the sugar is nicely golden and caramelized, about 2 minutes (move to a cooler part of the grill if they are browning too quickly).
- Turn the peaches cut-side up again; place 1 tablespoon of the goat cheese in the center of each.
- Grill peaches until goat cheese is warmed and just beginning to melt, about 1 minute. Transfer to a platter.
- Sprinkle the goat cheese with a little more of the spice rub.
- Serve hot.
