¼ cup chopped onions
¼ cup chopped green bell peppers
6 eggs
¼ cup milk
¼ cup chopped fresh tomato
¼ cup shredded Cheddar cheese

Steps:

  • Heat olive oil in a skillet or frying pan over medium-high heat. Add mushrooms, onions and peppers; saute until onions are transparent.
  • In a mixing bowl, beat together eggs and milk. Add egg mixture to vegetables; stir in tomatoes. Cook until eggs are set. When eggs are almost done, mix in cheese. Serve immediately.

2 eggs
1/4 cup white wine or chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms
1 teaspoon butter
1 teaspoon olive oil
1/2 cup shredded reduced-fat cheddar cheese
2 teaspoons minced fresh basil

Steps:

  • In a bowl, whisk the eggs, whites, wine or broth, salt, pepper and garlic powder; set aside. In a large nonstick skillet, saute the green pepper, onion and mushrooms in butter and oil for 3 minutes or until crisp-tender. , Reduce heat to medium. Stir in the egg mixture; cook and stir until eggs are completely set. Sprinkle with cheese and basil. Cover and remove from the heat; let stand for 5 minutes or until cheese is melted.

4 teaspoons extra-virgin olive oil
4 ounces fresh goat cheese
1 medium red beet, scrubbed, peeled, and shredded (1 cup)
2 large carrots, shredded (1 cup)
1 pear, quartered, cored, and thinly sliced
2 cups arugula
2 teaspoons fresh lemon juice
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

  • Brush 1 side of each bread slice with 1/2 teaspoon oil. Spread 1/2 ounce goat cheese on other side of each slice. Layer beet, carrots, pear, and arugula on cheese side of 4 slices; drizzle with lemon juice, season with salt and pepper, and sandwich with remaining slices, cheese side down.
  • Heat a large nonstick skillet over medium. In 2 batches, cook sandwiches, pressing gently on tops with a spatula, until golden brown, about 3 minutes per side.

1 red onion, halved and cut into 1-inch pieces
1 to 2 zucchini (12 ounces), halved lengthwise and cut into 1-inch pieces
4 tablespoons olive oil
Coarse salt and ground pepper
2 tablespoons freshly squeezed lemon juice
1 to 2 bunches arugula (8 ounces), stems trimmed
1 cup crumbled goat cheese (4 ounces)

Steps:

  • Preheat oven to 425 degrees. In a large bowl, toss vegetables with 3 tablespoons olive oil; season generously with salt and pepper. Transfer to a rimmed baking sheet; roast, turning vegetables halfway through, until tender and browned, about 40 minutes. Let cool to room temperature, about 15 minutes.

1 (6 inch) flour tortilla
1 ounce honey-flavored goat cheese
1 tablespoon chopped pitted Kalamata olives
4 leaves baby spinach

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 8 minutes. Drain on paper towels.
  • While bacon cooks, spray a small skillet with cooking spray; warm over medium-high heat. Whisk egg in a bowl. Pour into the skillet; cook, stirring frequently, until scrambled and set, about 5 minutes.
  • Heat tortilla in a microwave until soft and pliable, about 15 seconds.

This was the "omelet" I made my brother for breakfast one morning...not enough egg, too many veggies he said, so it is more of a scramble...but a yummy scramble!

Number Of Ingredients 12

1 large egg, beaten
4 tablespoons nonfat milk
1 tablespoon water
1 tablespoon oil (I used canola)
1/4 onion, chopped
1/2 cup spinach, chopped
1 carrot, julienned
1/2 green onion, chopped
1 tablespoon goat cheese (I used herb goat cheese)
1 dash salt
1 dash pepper
1 dash dried basil leaves (or you can use fresh)

Steps:

  • Take egg and beat until white and yolk are mixed. Add milk and water, beat. Set aside.
  • In pan heat up oil on medium heat and carmelize the onions until they are soft and translucent, about 5 minutes.
  • Add carrots, green onion. Cook for about another 5 minutes or until carrots are soft. Add in the spinach at the last second, let it wilt. If you are using fresh basil, add the basil in here, let it wilt.
  • Add in the egg mixture, swirl it around the pan so that the egg goes evenly over all the vegetables.
  • Cook slowly over low-medium heat, moving the egg mixture around with a spatula ever so often so that the egg cooks. Keep the mixture spread out over the pan to keep the omelet shape. Do this for another 5 minutes.
  • After 5 minutes or after egg and veggies are cooked, crumble up half of the goat cheese and spread over omelet. Fold half of the omelet over and serve on a plate. Take remaining goat cheese and crumble on the very top as garnish.
