ONE-POT CHILI MAC AND CHEESE
This delicious chili mac and cheese with ground beef, diced tomatoes, rich tomato sauce, chili beans and spices is cooked all in one pot--including the macaroni!

Steps:
- Heat olive oil in a large Dutch oven or pot over medium-high heat. Add onion, garlic, and beef. Stirring frequently, cook until meat is browned and crumbly, about 3 minutes. Drain excess fat.
- Stir in chicken broth, Ragu® sauce, diced tomatoes with mild green chilies, beans, chili powder, and cumin. Season with salt and pepper, to taste. Bring to a boil and stir in pasta; cover, reduce heat to a simmer and cook until pasta is al dente, about 14 minutes.
- Remove from heat. Stir in the cheese and parsley. Serve immediately, garnished with additional cheese and parsley, if desired.

ONE POT CHILI MAC AND CHEESE
Recipe video above. A homemade Chili with the addition of macaroni and cheese = Chili Mac 'n Cheese! This is terrifically moorish and a fabulous one pot meal. Super quick too! The key with this recipe is to turn the stove off as soon as the pasta is just cooked - it will keep cooking in the residual heat.

Steps:
- Heat oil in large pot over high heat. Add garlic and onion, cook for 1 minute. Then add capsicum and cook until onion is translucent.
- Add beef and cook, breaking it up as you go.
- Once the beef turns from red to brown, add remaining ingredients except cheese. Stir, bring to simmer, then turn the heat down to medium.
- Cover and cook for 12 minutes or until the macaroni is al dente, meaning just cooked, still a tiny bit on the firm side. It should be saucy but not tons of liquid (see video).
- Turn the stove OFF but leave the pot on the stove. Stir through half the cheese - it should be a bit saucy. Adjust salt and pepper to taste. Top with remaining cheese, put the lid back on and leave until the cheese melts - about 2 minutes (sauce will absorb further during this period).
- Sprinkle with coriander, if desired, and serve immediately.

- In a large sauce pan or dutch oven, heat the olive oil over medium high heat. Add the ground beef and cook until no longer pink. Since I'm using extra lean ground beef there's no need to drain the fat, but if you're using fatter ground beef, drain whatever fat there is.
- Stir in the onion and garlic and cook for about 3 minutes or until the onion softens and becomes translucent and the garlic is aromatic.
- Add the cayenne pepper, cumin, chili powder, salt and pepper and stir. Add the black beans, kidney beans, tomatoes, chicken broth and elbow pasta. Stir everything together and bring to a boil. Turn down the heat to a simmer, cover the pot and cook for about 9 to 12 minutes or until the elbow macaroni is cooked.
- Stir in 1 cup of the shredded cheese then sprinkle the remaining cheddar cheese over the top. Cover the pot for about 1 minute just until the cheese melts.

- Heat a Dutch oven medium high heat. Add meat and onions and season with salt and pepper. Cook until meat is browned, breaking up meat as it cooks.
- Add bell pepper and garlic and sauté 1 minute. Stir in crushed tomatoes, diced tomatoes, kidney beans, liquid smoke, sugar, and all seasonings. Stir in chicken broth and pasta.
- Cover, and bring to a simmer for 8 minutes, stirring occasionally and replacing the lid. After 8 minutes, remove lid and continue to simmer approximately 5 minutes, stirring often, just until the pasta is al dente. Taste pasta often as reaches the end of cooking to ensure you don’t overcook your pasta.
- Turn stove off but leave pot on the burner. Stir in the cream cheese until melted followed by 1 cup cheddar until melted. Taste and season with salt and pepper to taste (I like more salt). You can add more cheese if you wish - it can be as cheesy or as minimal as you choose!
