GNOCCHI WITH WHITE BEANS

Steps:
- In a large skillet, heat oil over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Add gnocchi; cook and stir 5-6 minutes or until golden brown. Stir in beans, tomatoes, spinach and pepper; heat through., Sprinkle with cheeses; cover and remove from heat. Let stand 3-4 minutes or until cheese is melted.

Steps:
- Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add gnocchi and cook, stirring often, until plumped and starting to brown, 5 to 7 minutes. Transfer to a bowl.
- Add the remaining 1 teaspoon oil and onion to the pan and cook, stirring, over medium heat, for 2 minutes. Stir in garlic and water. Cover and cook until the onion is soft, 4 to 6 minutes. Add chard (or spinach) and cook, stirring, until starting to wilt, 1 to 2 minutes. Stir in tomatoes, beans and pepper and bring to a simmer. Stir in the gnocchi and sprinkle with mozzarella and Parmesan. Cover and cook until the cheese is melted and the sauce is bubbling, about 3 minutes.

- Move a rack in your oven to the upper third of the oven and then preheat to 425°F. Put a large oven-safe skillet (I use a 12 inch lodge dutch oven skillet), on the stove at medium-high heat. Pour in the olive oil. Add in the chopped onion and stir until the onion is transparent -- about 4 minutes. Add in the garlic and stir for another 30 seconds. Coin the turkey sausage and add to the skillet. Cook over high heat until lightly browned, about 3 to 4 minutes. Add in the water or broth, undrained Italian diced tomatoes, oregano, parsley, garlic powder, paprika, seasoned salt and pepper, thoroughly rinsed, drained, and dried cannellini beans, and uncooked gnocchi. Stir until everything is well combined. Gently stir in the spinach and make sure it's covered with liquid. Top with mozzarella and Parmesan cheese and place in the oven. Bake for 17 to 22 minutes. If desired, turn on the broiler and then broil for another 2 to 3 minutes for a delicious crispy top. Remove from the heat, top with additional salt, pepper, and some chopped fresh parsley if desired. Enjoy immediately.
CREAMY SAUSAGE AND MUSHROOM GNOCCHI SKILLET
This is a comforting dish and is indulgent with ingredients like wine, cream, and shallots. I do not recommend adding salt because I find the sausage to have enough salt in it. Although cheese is optional, I find it gets lost in the sauce.

Steps:
- Heat a heavy skillet over medium high heat and cook sausage until no longer pink, breaking up the meat with a wooden spoon as it cooks, about 7 minutes. Continue to brown the meat and add mushrooms, shallots, butter, and oil. Cook until mushrooms and onions are soft and beginning to brown, about 5 minutes. Add garlic and cook for 1 to 2 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain and set aside.
- Add white wine to the sausage mixture and simmer, uncovered, until wine has reduced by half, about 5 minutes. Add gnocchi, cream, Italian herbs, pepper flakes, salt, and pepper. Cook over medium-low heat until sauce has thickened, about 10 minutes.

SKILLET GNOCCHI WITH CHARD AND WHITE BEANS

This is my version of a recipe I found on EatingWell and tweaked to our liking. We like ours very thick. See options for a slightly saucier version see *optional version* it adds a 1/2 cup of water and changes how the onion is cooked.

- Preheat oven to 425 degrees.
- Heat oil in a large oven-safe skillet over medium-high heat. Add onion and saute for 4-5 minutes, then add garlic and cook for an additional minute.
- Add the cut sausage to skillet and cook for 3-4 minutes or until sausage is lightly browned, stirring occasionally.
- Add zucchini, water, tomatoes, oregano, parsley, garlic powder, salt, pepper, beans and gnocchi. Mix well. Gently fold in the spinach.

- PREP: Move a rack in your oven to the upper third of the oven and then preheat to 425 degrees F (218 degrees C). Prep ingredients before starting -- cooking goes quickly. Dice the onion, mince garlic, cut sausage into coins (~1/2 inch thick), drain and rinse white beans, coarsely chop spinach, grate cheeses.
- ONION, GARLIC, AND SAUSAGE: Place a large oven-safe skillet (I use a deep 12-inch cast iron skillet) on the stove over medium-high heat. Pour in the olive oil and when hot, add the diced onion. Sauté, stirring frequently with a wooden spoon until the onion is transparent and becoming golden, about 5-7 minutes. Add in the garlic and stir for another 30 seconds. Add the coined turkey sausage to the skillet. Cook until lightly browned, about 3-4 minutes.
- ADD REMAINING INGREDIENTS: Add in the stock/broth or water, undrained diced tomatoes, oregano, parsley, garlic powder, paprika, thoroughly rinsed, drained, and dried off white beans, uncooked gnocchi (break apart any that are sticking together), and spinach. Season to taste with salt and pepper. (I add 3/4 teaspoon fine sea salt and 1/4 teaspoon pepper.) Stir until everything is well combined. Top with grated mozzarella and Parmesan.
- BAKE: Bake for 17-23 minutes. If desired, broil for 1-2 minutes for a delicious crispy top (watch closely -- it can go from perfect to burnt in a matter of seconds!)
