- in a large bowl stir butter and brown sugar together
- stir in the egg, vanilla and salt
- stir in flour

CLASSIC GOOEY BROWNIES

- For the brownies: Preheat the oven to 375 degrees F. Line an 8-by-8-inch square baking pan with parchment paper so that the paper overhangs two sides of the pan. Coat the parchment and sides of the pan with cooking spray.
- Combine the butter and chocolate in the top of a double boiler and melt over medium heat. Set aside to cool slightly. Whisk the eggs in a large bowl until pale yellow. Add the granulated sugar, espresso powder and vanilla extract to the eggs and whisk until fluffy. Whisk together the flour and salt in a small bowl.
- Pour the chocolate mixture over the egg mixture and whisk until smooth. Fold in the flour mixture until just combined. Stir in the chocolate chips. Transfer the batter to the prepared pan, spreading it to the edges with an offset spatula or the back of a spoon. Bake until the batter is set and cracked on top, 30 minutes. Remove to a rack and let cool.
- For the icing: Whisk together the buttermilk, coffee, confectioners' sugar and cocoa powder until smooth.
- Remove the cooled brownies from the pan by using the parchment overhang to lift them out. Pour the icing over the top and spread with a small offset spatula. Let dry. Cut into squares and serve.
GOOEY BROWN BUTTER BLONDIES WITH PECANS

- Brown butter mixture:
- Cook butter in a medium saucepan over medium heat, stirring often, until butter foams, then browns, 5-8 minutes. Transfer brown butter to a medium bowl; let cool slightly. Add egg, brown sugar, vanilla, and salt and beat until mixture is light and falls back onto itself in a slowly dissolving ribbon, about 3 minutes. Fold in flour.
- Blondie:
- Preheat oven to 350°. Butter a 13x9" baking dish and dust with flour. Toast pecans on a rimmed baking sheet, tossing once, until slightly darkened and fragrant, 8-10 minutes. Let cool.
- Whisk baking powder, salt, and 2 1/4 cups flour in a medium bowl. Using an electric mixer on medium-high speed, beat brown sugar and 1 cup butter in a large bowl until light and fluffy, about 5 minutes. Add eggs one at a time, beating between additions; mix until pale and fluffy, about 2 minutes. Mix in vanilla.
- Reduce speed to low and mix in dry ingredients. Fold in half of pecans. Scrape two-thirds of batter into prepared baking dish; smooth top, pushing batter to edges. Alternating, dollop brown butter mixture and remaining batter on top. Smooth and sprinkle remaining pecans over.
- Bake until blondie is golden brown and firm (a tester will not come out clean), 30-35 minutes. Let cool before slicing. Serve with ice cream.
- Do ahead: Blondies can be made 1 day ahead. Store tightly wrapped at room temperature.
OOEY-GOOEY FUDGY BROWNIES
These brownies are too gooey, fudgy, and rich to resist! Top with sifted confectioners' sugar.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Place chocolate and butter in a heatproof bowl over a pot of simmering water. Stir frequently to avoid lumps, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and wipe away the water from the bottom of the bowl.
- Gradually whisk sugar into the chocolate-butter mixture. Add eggs, one at a time, whisking until combined. Fold flour and cocoa powder into the batter. Pour into the prepared pan.
- Bake in the preheated oven until edges start to pull way from the pan and top is dry, 30 to 40 minutes.
- Whisk confectioners' sugar, butter, cocoa powder, and honey together in a bowl. Add milk gradually, stirring until icing reaches desired consistency. Spread over brownies while still warm.

BLONDIES
Steps:
- Preheat the oven to 350 degrees. Spray a 9" by 9" pan with cooking spray, line it with a piece of parchment that extends up two sides of the pan, spray the parchment, and set aside.
- Place the butter in the largest bowl your microwave will fit (this prevents butter splattering) cover it, and microwave it on high for 7-8 minutes, until the butter smells nutty and brown bits have sunk to the bottom of the bowl. To do this on the stove, turn the heat to medium and melt the butter in a small saucepan until the butter exhibits the above nuttiness and brown bits.
- Meanwhile, whisk the flour, baking powder and salt together in a medium sized bowl. Add the pecans and chips to the bowl and toss the add-ins with the flour. Set aside. Place the sugars in a large bowl and set aside.
- Add the sugars to the bowl you microwaved the butter in, or if you used a saucepan, transfer the butter to a large bowl and add the sugars. whisk until fully incorporated.
- Add the eggs and yolk one at a time, whisking gently after each addition. Add the vanilla and gently whisk again. Add the flour mixture to the bowl and using a rubber spatula, very gently fold the flour into the butter, sugar and eggs. Do not over-mix. Transfer the blondie batter to the prepared pan and use the rubber spatula to smooth the top.
- Sprinkle the Maldon sea salt (if using) over the top of the blondies, place the pan in the oven and bake for 30 to 35 minutes, until the top is lightly browned and crackly (I'd say pull them sooner rather than later as they can get dry and crumbly very quickly).
- Remove the pan from the oven and let cool on a rack until room temp, or until just cool enough to keep their shape if you want to eat them gooey and melty. Lift the blondies out of the pan by the parchment paper overhang and slice. Slice and serve with vanilla ice cream.
OOEY GOOEY BLONDIES
Steps:
- Preheat the oven to 350ºF. Grease an 8 x 8-inch baking pan with softened butter and dust the pan with flour. In a small saucepan over low heat (or in a small, microwave-safe bowl in a microwave oven), melt the butter and set aside to cool. In a large bowl, whisk together the melted butter, sugars, honey, egg, salt and vanilla extract until smooth. Add the flour and chocolate chips, and mix together with a wooden spoon or a rubber spatula. Spread the batter in the prepared baking pan. Smooth out the top and edges, and then top with the pecans. Bake for 25 minutes, or until the center is just set and the edges are barely golden. The blondies will be fully set when cool. Cool completely before cutting the blondies into 16, 2 x 2-inch squares.
CHEWY GOOEY BLONDE BROWNIES
This has always been my favorite cookie. You can add in chocolate chips and/or nuts, but I love the plain, unadulterated maple-like flavor. To halve the recipe, use an 8x8" pan and check five minutes sooner.

ONE-BOWL OOEY GOOEY PEANUT BUTTER CHIP BLONDIES
This one's for the "undercooked cookies are the best" crowd. Well, I suppose I'll allow you to cook them all the way if you like. :) I've tweaked this recipe a bit to get it to the point that it's no fuss, and can even be done in one bowl. No messy scooping around in the peanut butter jar; this one uses peanut butter chips instead. You can substitute other types of chips if you like - chocolate, white chocolate, butterscotch, etc.

- In a large microwave-safe bowl, heat margarine or butter in the microwave on half-power until mostly melted.
- With a wire whisk, mix in brown sugar. Beat in eggs and vanilla extract.
- Dump in flour, baking soda and salt (if you're a purist, you can mix them in a separate bowl ahead of time, but I've always had just as good of results with the single-bowl method). Stir with a large wooden or plastic spoon until flour is completely incorporated.
- Add peanut butter chips and stir.
- Pour batter into a greased 13x9-inch pan and bake at 350 for 20-25 minutes or until it's nicely browned and looks set.
- Meanwhile, eat any remaining batter sticking to the bowl. :).
- If you like your blondies more done, you can bake them a bit longer until a toothpick inserted in the center comes out clean. I have no idea how long that takes because I've never gone that far. I find they're just right at about 22 minutes, and definitely best when warm.
