Ingredients

1 1/2 cups natural bran
1 3/4 cups buttermilk
1 1/4 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon
1/2 cup raisins
2 tablespoons orange zest
1 egg
1/4 cup brown sugar, loosely packed
1/4 cup canola oil
2 tablespoons molasses
2 tablespoons honey

Steps:

Combine bran and buttermilk, let stand while assembling other ingredients.
In bowl, combine remaining dry ingredients.
In another bowl, combine egg, brown sugar, honey, molasses and oil.
Mix well.
Add bran mixture.
Add dry ingredients.
Bake in sprayed muffin tin in 375 degree oven for 20 minutes.
Best served warm.

2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
3/4 cup orange juice
1/4 cup canola oil
1/3 cup honey
1/2 teaspoon vanilla extract
1/4 cup golden raisin
1 tablespoon orange zest

Steps:

Combine dry ingredients in a large bowl; stir in combined remaining ingredients, mixing until just blended.
Pour batter into greased muffin tins; filling about 1/2 full.
Bake at 350 until muffins are browned, about 20 minutes.
