ORANGE BLOSSOM LAMB
Orange Blossom Lamb is a special main dish that's easily assembled. After browning, the chops simmer in a flavorful sauce. "Lamb tastes so good cooked this way, and it's really no fuss," Felicia says. "This recipe also works well with pork chops."

- In a large skillet, brown lamb chops in butter over medium heat. Add remaining ingredients; mix well. Reduce heat; cover and simmer for 20-25 minutes or until the meat is tender, turning once. To serve, spoon sauce over the lamb.

ROASTED ORANGE LEG OF LAMB

Steps:
- Preheat oven to 500 degrees F (260 degrees C). Grease a roasting pan with olive oil.
- Rub seasoned salt over leg of lamb.
- Mix flour and mustard together in a bowl. Rub over leg of lamb. Transfer to the prepared roasting pan.
- Roast leg of lamb in the preheated oven until browned, about 20 minutes.
- Reduce oven temperature to 325 degrees F (160 degrees C). Add orange juice, onion, and water to the roasting pan. Continue baking lamb, basting with orange juice and water every 30 minutes, until tender, about 2 1/2 hours.

SILENCE OF THE LEG O' LAMB
Steps:
- Roughly chop the garlic cloves in the food processor. Add the mint and repeat. Add the brown sugar, salt, pepper, mustard, and oil and blend to a paste. Spread the paste evenly on the meat side of the roast. Roll the leg into a roast shape and tie with cotton butcher's twine. Fire 2 quarts (1 chimney's worth) of charcoal (natural chunk is best). When charcoal is lightly covered with gray ash, split the coals into 2 piles and move them to the far sides of the cooker. Close the lid and allow the grate to heat. Then, place the lamb, skin side up, on the middle of the hot grate. Add the rosemary sprigs to the charcoal briquettes and close the lid and grill. After 20 minutes, flip the roast and rotate it 180 degrees. Insert the probe thermometer into the roast and continue to grill until it reaches an internal temperature of 135 degrees, about 25 to 30 minutes. Remove the roast at 135 degrees. Remove the butcher's twine from the roast. Cover with foil and rest it for 15 minutes before serving.

Just marinate with teriyaki, OJ and garlic too-simple yet tasty blend from my files. Needs up to 12 hours in the refrigerator.

- Combine teriyaki sauce, orange juice and garlic and pour over the lamb in a glass casserole dish.
- Refrigerate, covered, for up to 12 hours, turning occasionally.
- Grill 4-6 inches from coals or heat source until done (depends on size of leg) about 45 minutes.
- Baste occasionally with teriyaki mixture.
- Add the orange marmalade during the last half hour of cooking.
