Using your favorite brew (we recommend an IPA), mixed with McCormick® Cheesy Taco Seasoning Mix and Cheddar and Swiss cheeses, it's tailgate-ready in a half an hour. Pretzels make the perfect dippers, along with crusty bread or chips.

4 tablespoons butter
½ cup flour
1 (1.12 ounce) package McCormick® Cheesy Taco Seasoning Mix
1 ½ cups milk
1 cup beer, such as an IPA from an Oregon Brewery or your favorite local IPA
2 cups shredded Mexican cheese blend
2 cups shredded Swiss cheese

Steps:

  • Melt butter in large saucepan on medium heat. Sprinkle with flour and Seasoning Mix. Cook and stir 1 minute. Slowly whisk in milk and beer until smooth. Stirring constantly, cook 5 minutes or until sauce starts to thicken. Gradually whisk in cheeses until melted and smooth.
  • Transfer cheese mixture to warm fondue pot or slow cooker to keep warm, if desired.

1 cup milk
1/2 cup beer of choice
1 1/2 cups sharp cheddar cheese freshly grated
1/2 cup gruyere freshly grated
1/4 teaspoon paprika
1/4 teaspoon garlic
1/2 teaspoon dijon mustard

Steps:

  • In a medium-size saucepan over medium-high heat, add the butter and melt. Whisk in the flour and slowly whisk in the milk. Whisk in the beer.
  • Add in the cheese and mix until cheese is melted.
  • Add in the paprika, garlic, and dijon mustard and whisk until it is desired consistency.

1/4 c. unsalted butter
1/2 c. finely chopped yellow onion
1/4 c. all-purpose flour
12 oz. IPA beer (1, 12oz can)
1/4 c. half-and-half
6 oz. shredded fontina cheese
6 oz. shredded sharp yellow cheddar cheese
1 tsp. Dijon mustard
1/2 tsp. Worcestershire sauce
Chopped chives and/or black pepper, for garnish
Pretzels, to serve

Steps:

  • 1. In a medium saucepan, melt the butter over medium-low heat. Add the onion and cook, stirring, until softened, 4 to 6 minutes. Gradually whisk in the flour and cook, whisking constantly, until lightly browned, about 1 minute. 2. Gradually whisk in the beer and half and half. Cook, whisking constantly, until the sauce is thickened and just begins to bubble, 5 to 7 minutes. Reduce the heat to low and gradually add the cheeses, whisking constantly, until melted and combined. Remove from the heat. 3. Whisk in the dijon mustard and the Worcestershire sauce. Garnish with chives and black pepper, if you like. Serve with pretzels; re-warm gently as needed.

5 cups chicken broth
1 tablespoon parmesan cheese, grated
8 ounces sharp cheddar cheese, shredded
11 ounces beer, flat

Steps:

  • ***Have all ingredients ready for mixing before you begin cooking.***.
  • Melt butter in a large kettle-let butter froth but not brown.
  • Add vegetables and saute until tender.
  • Gradually blend in flour,turning heat down slightly.
  • Add salt and dry mustard,rolling it between your fingers to avoid lumps.
  • Cook mixture until it begins to brown.
  • Add chicken broth,return to high heat.
  • Add cheeses,blend and stir constantly.
  • Add beer.
  • Bring to a boil only for a minute,reduce heat and serve.
  • ***Note-To reheat-Place in oven and warm slowly(275 degrees)so cheese won't curdle. Do not use direct heat.***.

It sounds gross because of the cheese whiz but it is so addicting. If you have leftovers, you can put it under the broiler the next day to reheat and eat the cheese soaked bread bowl.
