CHEWY HONEY GRANOLA BARS
There's sweetness from the honey, chewiness from the raisins, hints of chocolate and cinnamon, and a bit of crunch. To save a few for later, wrap individual bars and place in a resealable freezer container. - Preheat oven to 350°. In a large bowl, combine the first 8 ingredients. In a small bowl, combine honey, butter and vanilla; pour over oat mixture and mix well. (Mixture will be sticky.), Press into a 13x9-in. baking pan coated with cooking spray. Bake 14-18 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars.

ORGANIC GRANOLA, NUT, HONEY, AND CHOCOLATE CAKE BARS
Almost a dessert but not quite and loaded with nutrients and protein. Use organic honey, butter, etc. and you have an amazing natural treat. My favorite is to heat in a bowl and add milk like a super decadent pudding cake.

- Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and grease.
- Place 3/4 cup oats in a blender; blend to make oat flour. Combine oat flour, remaining oats, nuts, chocolate chips, peanut butter chips, sugar, cinnamon, and salt in a bowl.
- Mix honey, peanut butter, butter, water, and olive oil together in a separate bowl; stir into oat mixture until well coated. Press firmly across the baking sheet and into the corners.
- Bake in the preheated oven until top is golden brown, about 30 minutes. Cool to room temperature before cutting into bars.

I'm no longer sure of the source for this recipe...not that I followed the original anyway! I am boycotting corn syrup now and needed an energy bar that I could make at home! This recipe is easy and versatile...and everyone in my family will eat these bars! No butter and no sugar! But soooo good!

Steps:
- Warm honey slightly in microwave and combine with peanut butter.
- Add oats, ground pecans, flour, and cinnamon.
- Stir in nuts, chips, dried fruit, etc.
- (My favorite combo is 1/2°C of dried fruit, 1/2°C of mini choc. chips, 1/2°C chopped almonds, 1/4°C sunflower seeds, and 1/4°C ground flax seeds).
- PRESS DOWN FIRMLY and evenly in sprayed 9x13 pan.
- Bake @ 350 for about 15 minutes - edges will begin to brown.
- Remove from oven and cut IMMEDIATELY into 20 bars.
- Allow to cool completely.
- I wrap bars individually for easy grabbing in the mornings!

- In a small saucepan over medium heat, combine honey, brown sugar and butter and stir until the sugar melts. Bring the mixture to a boil and then remove from heat. Add chocolate, olive oil, vanilla and salt and stir until melted and smooth. Pour the warm chocolaty mixture into the bowl with the oat mixture and stir with a wooden spoon until all of the bits are evenly coated.
- Spread the mixture out onto your prepared baking sheet and bake for about 30 minutes, tossing the granola every 10 minutes to make sure it bakes evenly. It will smell fragrant and feel soft and dry (not sticky), but it will not be crisp when ready. It will crisp up as it cools.
