QUICK BEEF TAQUITOS
Always a crowd pleaser, one of those recipes you have to kick everyone out of the kitchen to be able to complete. It's fast and delicious with beef, cheese, and chiles. Served best with sour cream and guacamole.

Steps:
- Heat oil in a skillet over medium-high heat.
- Combine roast beef, pepper jack cheese, and green chilies in a bowl. Use a fork to break up the beef and mix ingredients.
- Fry tortillas in hot oil just long enough to soften, just a few seconds; drain on a plate lined with paper towels.
- Begin spooning beef mixture into tortillas making a line down the middle of the tortilla. Roll tortilla around the filling and place in frying pan with the edge of the rolled tortilla facing the bottom of the pan. Cook until the tortillas are completely browned, 5 to 8 minutes per side. Drain again on paper towels before serving.

Steps:
- Combine ground beef, egg, Accent, green onions, soy sauce, salt and pepper.
- Place some of meat mixture down the middle of a corn tortilla; how much will depend on the size of the tortillas and how big you want them to turn out. Roll up into a cylinder shape (you may want to place a toothpick through the taquito to keep it from unrolling when you fry it).
- Repeat until all of the meat mixture is gone.
- Heat oil to 350°F.
- Drop taquitos in a few at a time (don't overcrowd your pan). Fry until tortilla is golden and meat is cooked through (about 2 minutes).
- Place on paper towels to drain and sprinkle with salt.
- Serve while hot.

- In a large pot, heat oil over medium high heat.
- Add beef and seasonings. Stir to combine and sear all sides of the beef chunks.
- Pour enchilada sauce, Rotel, beef broth, diced green chilies and minced onions into the pot.
- Reduce heat to medium low and cook for 1½ hours or until meat is fall off the fork tender (add additional beef broth as needed).
- Once meat is cooked, using a large frying pan, heat vegetable oil over medium heat.
- Take one corn tortilla at a time and cook for about 15 seconds on each side, place on a plate lined with paper towels and then add desired amount of meat mixture onto the corn tortilla. Roll tightly, and if needed, use a toothpick to hold each taquito together.
- Place 4-5 taquitos into hot oil, seam side down, and fry until golden brown on all sides
- Remove from the pan and place on a plate with paper towels to absorb any excess oil.
- Continue cooking the remaining taquitos and serve with beans and rice and your favorite dipping sauce.

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Add cooked rice, water, bell pepper, and garlic to the beef in the skillet; stir and cook until heated through, 3 to 5 minutes. Spoon onto tortillas and roll to close. Place taquitos tightly against each other in an 8x12-inch baking pan. Pour salsa over and top with Cheddar cheese.

- BEFORE you start chopping and slicing, trim excess fat from steak. Partially freeze steak; slice diagonally across grain into 2- x 1/4-inch strips.
- Combine soy sauce, garlic, sugar, and ginger; add steak, tossing to coat. Cover and refrigerate 30 minutes to 1 hour.
- Coat wok or skillet with oil; allow to heat at medium high (325°) for 2 minutes. Add steak; stir-fry 1 minute. Add pea pods; stir-fry 1 minute. Add cabbage, mushrooms, green onions, and water chestnuts; stir-fry 2 minutes.
- Dissolve bouillon granules, cornstarch, and salt in water; stir into steak mixture. Cook until thickened. Serve over rice.

- Prepare the Crema: Combine avocado, water, crema, cilantro, lime juice, and salt in a blender, and process until smooth, about 1 minute.
- Prepare the Taquitos: Heat 1 teaspoon of the oil in a medium skillet over medium-high; add ground beef, onion, and 1/2 teaspoon of the salt, and cook, stirring often, until beef is well browned and cooked through, 3 to 4 minutes. Add chili powder, and cook, stirring constantly, until fragrant, about 1 minute. Add tomato paste, and cook, stirring constantly, until paste is blended into beef mixture, about 1 more minute.
- Transfer beef mixture to a large bowl, and stir in mashed beans, chopped cilantro, and remaining 1/2 teaspoon salt. Let cool 10 minutes. Meanwhile, warm tortillas according to package directions.
- Place 2 heaping tablespoons of cooled beef mixture on 1 end of each warmed tortilla, and spread slightly. Starting at filling end, gently roll each tortilla into a tight cigar shape. Secure seam side of taquito with a wooden pick, inserting just until pick pokes through other side. Place rolled taquitos, seam side down, on a plate; cover with plastic wrap, and place a clean towel over plastic wrap.
