This was a favorite among our guests at the bed and breakfast where I cooked for many years. If you wish, add sautéed onions or diced tomatoes to the mix. I sometimes serve this dish with pinto or black beans and a warmed flour tortilla. This dish also lends itself well to be served with a side of chorizo sausage or any other breakfast meat of your liking.

1 tablespoon butter
1 corn tortilla, cut into thin strips
3 tablespoons chopped green chile peppers
2 eggs, beaten, or more as needed
3 tablespoons shredded Cheddar cheese

Steps:

  • Heat butter in a skillet over medium heat; cook and stir tortilla strips and green chile peppers until strips are softened, 2 to 3 minutes. Add eggs and Cheddar cheese; cook and stir until eggs are cooked through, 3 to 4 minutes.

2 tablespoons butter
1 1/2 tablespoons all-purpose flour
1 1/4 cups whole milk
1/4 teaspoon salt
3/4 cup shredded Swiss cheese
1/2 cup shredded Parmesan
12 frozen puff pastry shells (recommended: Pepperidge Farm)
1 egg, slightly beaten, plus 1 teaspoon water, for egg wash
6 eggs, slightly beaten
1/4 cup whole milk
1 teaspoon vegetable oil
1 tablespoon butter
Salt and pepper
2 tablespoons fresh chives, chopped

Steps:

  • Mornay Sauce Preparation:
  • Melt butter in heavy medium saucepan over medium heat. Add flour and whisk until mixture is smooth, about 1 minute. Whisk in milk and salt. Whisk until mixture thickens slightly, about 2 minutes. Gradually whisk in cheeses. Stir until mixture is smooth and begins to bubble, stirring, constantly, about 5 minutes. Cover and keep warm.
  • Egg Pastry Crowns Preparation:
  • Meanwhile, preheat oven to 400 degrees F. Line a cookie sheet with parchment paper.
  • Place 1 layer of pastry shells on the prepared cookie sheet and brush with egg wash. Top with another hollowed out shell. Bake for 12 minutes, or until golden on top.
  • Whisk eggs and milk in a large bowl to blend. Place a large nonstick skillet over medium heat. Add oil and butter to skillet. When the butter foams, add the egg mixture. Stir continuously with a rubber spatula until eggs are light and fluffy, about 2 minutes. Season, to taste, with salt and pepper. Remove tops and hollow out pastry shells. Divide scrambled eggs among pastries. Top each with 2 to 3 tablespoons of Mornay Sauce. Sprinkle with chives and serve.

3 tablespoons salted butter
1 cup mixed hardy greens (spinach, kale and chard, sold prepped in bags)
3 scallions, white and green parts sliced
1 jalapeño, seeded and diced small
Kosher salt and freshly ground black pepper
1/4 cup half-and-half
2 tablespoons prepared pesto
6 large eggs
1/2 cup shredded Monterey Jack
2 ripe tomatoes, sliced thick
2 tablespoons chopped chives

Steps:

  • Melt the butter in a large nonstick skillet over medium heat. Add the hardy greens, scallions and jalapeños. Season with salt and pepper and cook until the greens have wilted, about 2 minutes.
  • Meanwhile, add the half-and-half, pesto and eggs to a pitcher or bowl. Whisk with a fork until well combined.
  • Add the egg mixture to the skillet and season with a pinch of salt and pepper. Cook, stirring frequently, until creamy curds begin to form, about 2 minutes. Add the Monterey Jack and continue to cook, stirring, until the eggs are just cooked and the cheese has melted, another 2 to 3 minutes.
  • Serve the eggs on top of the tomato slices and garnished with the chives.

Before you even start to scramble, toast and butter the English muffins and pop them in a warm oven on the plates you'll serve breakfast on. The eggs are cooked in clarified butter, they turn out soft, moist, and slide easily out of the pan.

3 large eggs
Kosher salt and freshly ground pepper
Softened unsalted butter, for bread
1 English muffin, split
1 tablespoon Clarified Butter
Steamed asparagus and cooked bacon, for serving (optional)

Steps:

  • Whisk eggs well; season with salt and pepper. Toast and butter English muffin; place on a plate and keep warm in a 200°F oven. Melt clarified butter in a small or medium nonstick skillet over medium heat.
  • Add eggs and cook, stirring constantly with a silicone spatula, until large curds form and are just barely set, about 2 minutes. Transfer immediately to muffin halves. Sprinkle with salt and pepper and serve hot, with asparagus and bacon.

This is a recipe that I made up one day inspired by Chile Rellano. Its very simple to make and a great way to spice up scrambled eggs. I usually make this on the weekends for my family.

1 dozen egg
1 (4 ounce) can chopped green chilies
1 cup shredded monterey jack cheese
3 flour tortillas
1 tablespoon butter

Steps:

  • In a medium sized bowl add in all the eggs and the green chiles and whisk together and set aside.
  • In a large skillet add butter over medium heat and when melted add in the egg mixture and start scrambling the eggs until half way done. then add in the cheese and take the flour tortillas and start tearing them up into bite size pieces and add to the mixture and keep scrambling until egg is completely cooked.
  • You can serve this with your favorite salsa if you like. O'LE!
