Our Favorite Molasses Banana Bread image

There are a mountain of banana bread recipes out there, but this Molasses Banana Bread with it's dark, caramel undertones, is the only one I make.

4 very ripe bananas
2 large eggs
3/4 cup dark brown sugar
2/3 cup vegetable oil
1/4 cup blackstrap molasses
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon salt

Steps:

  • Heat oven and prepare pan. Heat oven to 350°F and arrange a rack in the middle. Grease a 9 x 5 inch baking pan.
  • Combine ingredients. Mash together bananas and eggs in a large bowl until almost a puree. Add brown sugar, oil, and molasses and whisk to combine. Add flour, baking powder, cinnamon, baking soda, ginger, and salt. Stir together with a rubber spatula or wooden spoon just until combined and all flour is mixed in.
  • Bake. Scrape into prepared pan and bake until golden and baked through, about 50-60 minutes. Insert a skewer in the middle, if it comes out clean the bread is ready. Let bread cool on a rack at least 15 minutes before removing from the pan. Cool completely before slicing

3 tablespoons butter
3/4 cup sugar
3 overripe bananas
2 tablespoons molasses
2 eggs
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup walnuts or 3/4 cup pecans, chopped
1/2 cup chocolate chips (optional) or 1/2 cup peanut butter chips (optional)

Steps:

  • Preheat oven to 350°F
  • Cream butter and sugar, mix in bananas, molasses and eggs until smooth. Mix together flour, baking soda and baking powder. Add to wet ingredients and beat until smooth. Fold in walnuts (pecans) and/or chocolate chips (peanut butter chips).
  • Bake in 8 1/2 x 4 1/2 -inch loaf pan at 350F for 1 hour or until done.

This is a fabulous recipe for banana bread! This can also be baked in mini loaf pans and it also makes 12 muffins, bake for 20-25 minutes. I also added in some shredded carrots and nuts then baked it in a 9x5-inch loaf pan, for less fat use low-fat yogurt or sour cream

1 cup flour
1/2 cup whole wheat flour
2/3 cup oats
1 1/4 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2/3 cup sugar
1/4 cup butter, softened
1/3 cup dark molasses
2 large eggs
1 cup mashed ripe banana
1/3 cup low-fat sour cream (or use full-fat) or 1/3 cup low-fat yogurt (or use full-fat)
1/4 cup applesauce
2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees F.
  • Grease an 8 x 4-inch loaf pan.
  • In a bowl sift together white and whole wheat flour, oats, baking soda, cinnamon and salt.
  • In another bowl beat the butter with sugar and molasses for about 2 minutes.
  • Add in eggs, beat until combined.
  • Add in bananas, sour cream applesauce and vanilla; beat until blended.
  • Add in the flour mixture; beat at low speed just until moistened.
  • Spoon the batter into prepared baking pan.
  • Bake for about 1 hour, or until bread tests done.
  • Cool for 10 minutes, then remove to a wire rack to cool completely.
