Baked Mac and Cheese Bites image

If you love macaroni and cheese, but want something in bite-sized form for a delicious appetizer, these baked mac and cheese bites are for you.

1/2 lb elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup milk
3 cups shredded sharp cheddar cheese
2 oz cream cheese
1/4 tsp salt
1/4 tsp black pepper
1 egg, beaten

Steps:

  • Preheat oven to 400°F. Spray mini muffin tins with cooking spray. Cook pasta according to directions and set aside.
  • Heat butter in medium pan over medium heat. Once melted, add flour and whisk until smooth and starting to bubble. Slowly add milk and bring to a simmer, about 10 minutes. Add 2 cups of cheddar cheese, cream cheese, salt and pepper. Stir until creamy. Set aside.
  • Add the pasta into the cheese mixture and mix until thoroughly coated. Let cool for 5 minutes before adding beaten egg and mix.
  • Spoon mac and cheese into mini muffin tins where it is just flowing over, about 2 tbsp. Top each with a tbsp of cheese. Bake for 15 minutes or until golden brown. Allow to cool for 5 minutes before removing.

Oven Baked Breaded Macaroni and Cheese Bites image

The perfect use for your left over macaroni and cheese, just like our other baked mac n cheese bites...but with a fabulous crunchy coating!

4 c homemade macaroni and cheese ((see recipe))
3/4 c all-purpose flour
3/4 c Italian seasoned croutons ((crushed))
3/4 c Italian seasoned Panko
1/4 c Parmesan cheese
2 large eggs
2 Tbsp olive oil

Steps:

  • Start with our Mac and Cheese recipe.
  • Make sure that your leftover mac n cheese is nice and cold and set up (refrigerated for at least 12 hours). If needed, you can also freeze the macaroni just a bit before portioning out to coat with breading.
  • Preheat your oven to 425 degrees F (218 degrees C) and line a baking sheet (or two) with parchment paper. Use 1 Tbsp of the olive oil and a basting brush to coat the parchment paper lined baking sheet(s).
  • In a small bowl, whisk the eggs until well combined. Use a second bowl for the all-purpose flour and then a third small bowl to combine the breading ingredients: crushed Italian seasoned croutons, Italian seasoned Panko, and Parmesan cheese.
  • Using a table spoon, portion out large (approximately 1- 1 1/2 inch) chunks of the leftover macaroni and cheese. Quickly roll in your palms to shape into a rough ball shape, then dip into the flour, then the egg mixture, and next into the breading mixture. Coat thoroughly and place on a parchment paper lined baking sheet. Repeat until all of your macaroni and cheese has been breaded.
  • Bake at 425 degrees F (218 degrees C) for about 10-12 minutes, then use the second Tbsp of olive oil to brush over the baking sheet. Roll the breaded macaroni and cheese balls to bake the opposite side for an additional 8-10 minutes. Remove from the oven and serve immediately.

A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 ½ cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
  • In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
  • Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
  • Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
  • Bake uncovered, for 30 to 40 minutes, or until the top is brown.

Unsalted butter, for the dish
2 teaspoons kosher salt
1 pound elbow macaroni with ridges
4 tablespoons (1/2 stick) unsalted butter
4 tablespoons all-purpose flour
1 teaspoon kosher salt
2 cups milk
2 cups grated sharp Cheddar
1/2 cup breadcrumbs
4 tablespoons (1/2 stick) unsalted butter, melted

Steps:

  • For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
  • For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
  • For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
  • Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.

½ pound elbow macaroni
3 tablespoons butter

1 tablespoon mustard powder
3 cups milk
½ cup minced yellow onion
½ teaspoon paprika
1 bay leaf
1 large egg
12 ounces shredded sharp Cheddar cheese, divided
1 teaspoon kosher salt
freshly ground black pepper
1 cup panko bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt 3 tablespoons butter in a pot over medium heat. Whisk flour and mustard powder into melted butter until smooth, about 5 minutes. Mix milk, onion, paprika, and bay leaf into flour mixture; bring to a boil, reduce heat to medium, and simmer until sauce is thickened, about 10 minutes. Remove bay leaf from sauce.
  • Beat about 2 tablespoons sauce and egg together in a bowl to temper egg. Pour egg mixture into sauce and stir gently. Mix 3/4 of the Cheddar cheese into the sauce until melted and smooth, 2 to 3 minutes; season with salt and pepper. Fold macaroni into cheese sauce and pour into a 2-quart casserole dish. Sprinkle remaining cheese over macaroni mixture.
  • Stir panko bread crumbs and 3 tablespoons melted butter together in a bowl; sprinkle over cheese layer.

2 cups cold leftover mac and cheese
1/4 cup flour
1 egg
1/2 cup breadcrumbs or Panko
1 tablespoon olive oil

Steps:

  • Make sure leftover macaroni and cheese is really cold. I suggest putting it in the freezer for about 20 minutes before preparing. While the macaroni and cheese is chilling in the freezer, get out three bowls. Add flour to one bowl, the egg to another, and the breadcrumbs to the remaining bowl. Whisk the egg slightly to break it up. Season the flour with salt and pepper to taste. Preheat oven to 425°F. Prepare a cookie sheet by lining it with aluminum foil . Drizzle one tablespoon of olive oil on aluminum foil and spread around to coat the foil evenly. When macaroni is chilled, remove from freezer. Scoop a tablespoon amount of macaroni and cheese and roll it around in your hands to make sure the ball is tightly packed. You want each ball to be uniform in size, about 1 or 1.5 inches in diameter. Roll each ball through the flour, then the egg, and lastly the breadcrumbs. Place on prepared cookie sheet. Bake for 10 minutes. Remove cookie sheet from oven, flip the macaroni balls over, and bake another 8-10 minutes, or until golden brown. Serve warm with various condiments and dipping sauces.

This is the Macaroni and Cheese that i grew up with. It is very easy to make and will add a delightful side dish to any meat such as Ham or Turkey. NOTE: When adding milk, do not make the noodles float.

1 cup milk (approx)
2 teaspoons salt (during boiling)

16 ounces cheddar cheese (shredded)

Steps:

  • Boil 4-6 cups of water in a pot on the stove.
  • Add 2 tsp salt.
  • Add in 1 cup Elbow Macaroni noodles.
  • Boil for 7 minutes.
  • Preheat oven to 400F.
  • When finished boiling, pour macaroni into a strainer basket and then add to a 9"x9"x1.5" oven safe (preferably pyrex) dish.
  • Scramble the egg, then add the egg to the 1 cup of milk.
  • Add in salt and pepper, mix well.
  • Add to macaroni the milk, egg, salt, pepper mixture (Ensure the noodles do not float).
  • mix in 6-8 oz of cheese.
  • Add the remaining cheese to the top. Try to cover all the noodles on top.
  • Place dish in center rack in oven and bake for 30 minutes. Top layer of cheese should be slightly golden brown on the sides.
  • Remove from oven and let cool slightly and serve. May be microwaved for enjoyment again and again.
