BUTTERY BAKED LAMB CHOPS



Buttery Baked Lamb Chops image

Lamb, Worcestershire sauce, lemon juice and butter! From one of my cookbooks. Super simple since no marination. Just put the sauce, put the lemon juice and butter on each chop and bake.

2 lamb loin chops
2 teaspoons Worcestershire sauce, divided
2 teaspoons lemon juice, divided
2 teaspoons butter, divided

Steps:

  • Preheat oven to 375 degrees.
  • Poke holes all over the lamb chops in a baking dish.
  • Now sprinkle each chop with 1 teaspoons of the Worcestershire sauce and 1 teaspoons of the lemon juice.
  • Top each chop with a teaspoon of butter.
  • Bake for 15-20 minutes for pink meat. Cook longer if you prefer well done meat.

Never having lamb before I didn't "think" I liked lamb. When your MIL is 100% Greek you know you will have to fix it for her son! I asked her to show me one night and wrote it down. These oven lamb chops are so easy and tender, perfect for when you don't have a crowd to feed!

Number Of Ingredients 6

4 (4 ounce) lamb chops
1 tablespoon olive oil, or as needed
1 clove garlic, minced
½ tablespoon crushed fresh rosemary leaves
sea salt and freshly ground black pepper to taste
¼ cup mint jelly

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut away excess fat from the lamb chops (some fat does add flavor). Coat each chop lightly in olive oil. Dust lamb chops with garlic, rosemary, salt, and pepper. Place lamb chops in a cast iron skillet.
  • Bake uncovered in the preheated oven until cooked through, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 140 degrees F (60 degrees C) for medium-well doneness.
  • Remove from the oven and cover tightly with foil; let rest for 8 to 10 minutes. Serve with mint jelly on the side,

These chops make a delicious meal. They're a definite favorite at our house. I like to serve them over rice along with fresh-from-the-oven corn bread.

Number Of Ingredients 10

6 pork chops (1/2 inch thick)
2 tablespoons vegetable oil
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (15-1/2 ounces) kidney beans, rinsed and drained
1/2 cup sliced onion
1 tablespoon chili powder
1/2 teaspoon garlic powder
6 green pepper rings

Steps:

  • In a large ovenproof skillet, brown chops in oil; drain. Remove the chops; sprinkle with salt and pepper. Combine soup, beans, onion, chili powder and garlic powder in the same skillet. Arrange chops over the soup mixture. Cover and bake at 325° for 35 minutes or until the chops are tender. Top each with a green pepper ring. Bake, uncovered, 10 minutes more.

6 bacon strips, diced
1-1/2 pounds ground beef
1 large onion, thinly sliced
1/2 cup chopped green pepper
2 cans (16 ounces each) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
4-1/2 teaspoons chili powder
1-1/2 teaspoons salt
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/8 teaspoon rubbed sage

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp; remove with a slotted spoon and drain on paper towels. Cook the beef, onion and green pepper in drippings over medium heat until meat is no longer pink; drain. Remove from the heat; add the remaining ingredients. Stir in bacon; mix well. , Transfer to an ovenproof Dutch oven or greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 45 minutes. Uncover and bake 15 minutes longer or until thick and bubbly.
