BAKED BBQ CHICKEN (APPLE CIDER BBQ SAUCE)



Baked BBQ Chicken (Apple Cider BBQ Sauce) image

This delicious oven baked BBQ chicken is marinated and coated in a delicious and tangy apple cider sauce for a tasty family meal. Easy to make with just a few ingredients, this recipe will make your tastebuds tingle!

2/3 cup ketchup
2/3 cup apple cider
1/3 cup honey
3 garlic cloves (minced)
2 tablespoons apple cider vinegar
1/2 teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon garlic powder
2 ½ pounds chicken breasts

Steps:

  • In a bowl, stir together all the BBQ sauce ingredients. Reserve ½ cup of the sauce. Set aside.
  • Place the chicken breasts in a zip top plastic bag. Add in the reserved ½ cup sauce and place in the fridge for at 1 hour, and up to overnight, to marinade.
  • Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
  • Simmer the BBQ sauce in a small saucepan for 10 minutes, or until thickened and fragrant.
  • Place the marinated chicken on the baking sheet. Bake for 10 minutes. Remove from the oven and baste the chicken with a thick glaze of bbq sauce. Return to the oven and bake for 20-30 more minutes, basting every 10.
  • Remove, baste again, and place back into the oven set to broil for 3-5 minutes until the bbq sauce forms a glaze.
  • Serve with your favorite sides and enjoy!

1 pound boneless, (skinless chicken thighs)
1 pound chicken drumsticks
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
apple cider BBQ sauce
2/3 cup ketchup
2/3 cup apple cider
½ cup honey
3 garlic cloves, (minced)
5 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Drizzle a baking sheet with the olive oil.
  • Pat the chicken completely dry with a paper towel. Season it with the salt and pepper evenly. Place the chicken on the sheet, but don't crowd the pan. Use two if needed!
  • Roast the chicken for 25 minutes. Remove it from the oven and brush it with the BBQ sauce. Bake it for another 5 to 7 minutes. Flip, brush with sauce again, and bake for another 5. Repeat the process one or two more times, slathering the chicken with the sauce.
  • Let cool slightly before serving. And serve it with the extra sauce!

This warm and hearty chicken dinner is perfect for the fall. Onions are simmered in apple cider and chicken stock before being baked with chicken thighs, apples, and cream.

4 (4 ounce) bone-in, skin on chicken thighs
salt and ground black pepper to taste
2 tablespoons vegetable oil
1 medium onion, sliced
1 cup apple cider
½ cup chicken stock
½ tablespoon fresh thyme leaves
½ teaspoon salt
2 medium apples, sliced
¼ cup heavy cream
1 tablespoon cornstarch

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season both sides of the chicken thighs with salt and pepper.
  • Heat oil in a deep oven-proof skillet or Dutch oven over medium-high heat. Add chicken thighs to the hot oil and cook until browned on both sides, about 4 minutes per side. Transfer chicken to a plate and keep warm.
  • Add sliced onions to the skillet and saute until they just start to brown, about 3 minutes. Pour in apple cider and chicken stock, scraping the bottom of the pan to loosen any browned bits. Stir in thyme and salt. Simmer until the onions are soft, 4 to 5 minutes. Turn off the heat.
  • Add chicken back to the skillet and spoon some sauce over the top. Arrange sliced apples around the chicken. Cover the skillet with a lid or aluminum foil.
  • Bake in the preheated oven for 15 minutes. Remove skillet from the oven and carefully uncover. Transfer chicken from the skillet to a plate and keep warm. Whisk heavy cream and cornstarch together in a small bowl. Stir gently into the sauce in the skillet. Place chicken back into the skillet and spoon some of the sauce over the chicken.
  • Return skillet to the oven and bake, uncovered, until the chicken is no longer pink at the bone and the juices run clear, and an instant-read thermometer inserted near the bone reads 165 degrees F (74 degrees C), about 15 minutes more. Serve chicken and apples with the sauce.

1 (3 pound) whole chicken
½ cup dry ranch dressing mix
2 tablespoons granulated garlic
2 tablespoons poultry seasoning
1 tablespoon ground paprika
1 tablespoon cayenne pepper
2 tablespoons olive oil, or as needed
⅔ cup apple cider, divided
1 medium onion, cut into wedges
1 tablespoon minced garlic
⅓ cup apple cider
1 tablespoon dry ranch dressing mix

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Rinse chicken and remove insides; dry off with a paper towel.
  • Combine ranch dressing mix, granulated garlic, poultry seasoning, paprika, and cayenne for rub in a bowl.
  • Rub chicken with oil. Put 1/3 cup apple cider, onion wedges, and fresh garlic inside the chicken, using onions to block the opening. Sprinkle rub all over using a teaspoon; be sure to coat legs and under wings.
  • Place chicken on a stand-up roasting rack and set into a deep baking dish. Pour in remaining apple cider and ranch dressing mix.
  • Roast in the preheated oven for 15 minutes. Lower the oven temperature to 350 degrees F (175 degrees C) and continue to bake until no longer pink in the center, the juices run clear, and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 30 minutes. Remove from the oven, cover tightly with foil, and let sit for 10 minutes before serving.

4 whole skin-on, bone-in chicken breasts
1 cup barbecue sauce (such as Sweet Baby Ray's®)
kosher salt and coarsely ground black pepper to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with heavy-duty foil to make cleanup easier.
  • Prepare chicken breasts by cutting off the rib meat if you wish and rinse and pat dry. Leave the skin on. Season chicken with salt and pepper and put in the pan.
  • Bake in the preheated oven until juices start to appear, about 10 minutes. Reduce oven temperature to 375 degrees F (190 degrees C). Remove the pan and generously pour 1/2 of the barbecue sauce over chicken. Continue to bake for 20 minutes.
