4 ounces uncooked fettuccine
1/4 pound uncooked medium shrimp, peeled and deveined
1/4 pound sea scallops, halved
2 tablespoons olive oil, divided
1 small shallot, chopped
1 garlic clove, minced
1/4 cup chicken broth
1/4 cup white wine or additional chicken broth
1 cup heavy whipping cream or half-and-half cream
1/2 cup grated Parmesan cheese
1 Roma tomato, diced
2 tablespoons minced fresh parsley

Steps:

  • Cook the fettuccine according to package directions. Meanwhile, in a large skillet, saute shrimp and scallops in 1 tablespoon oil for 3-5 minutes or until shrimp turn pink and scallops are opaque. Remove and keep warm. , In the same skillet, saute shallot in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in broth and wine. Bring to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until most of the liquid has evaporated. Stir in cream; cook, uncovered, over medium heat for 5 minutes or until thickened. , Drain fettuccine; stir into cream sauce. Add shrimp, scallops and cheese; toss to coat. Sprinkle with tomato and parsley.

1 (16 ounce) package dry fettuccine noodles
1 ½ tablespoons butter or margarine
1 cup chopped green onions
4 garlic cloves, peeled and minced
1 pound medium shrimp - peeled and deveined
1 pound sea scallops
2 cups half-and-half cream
1 cup freshly grated Parmesan cheese
salt and pepper to taste
2 tablespoons cornstarch

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large, non-stick skillet over medium-high heat. Stir in onions and garlic, and cook for 1 minute. Add shrimp and scallops, stirring to combine, and cook 3 minutes more. Reduce heat to medium-low.
  • Pour half-and-half, salt, and pepper into the pan and bring to a simmer, stirring constantly. Do not boil. Gradually sprinkle 1/2 cup Parmesan cheese over seafood mixture and continue stirring another minute. Remove from heat.
  • Toss cooked pasta into the pan, coating thoroughly. Sprinkle with remaining Parmesan cheese, and serve.

This Seafood Linguine Alfredo goes overboard with decadent lobster, sweet jumbo lump crab, tender shrimp and vegetables in a creamy, cheesy, buttery white sauce.

1 lb. linguine (cooked)
1 lb. shrimp (50-60 count, deveined)
2 lobster tails (cut into large pieces (about 3/4 c.))
3 T. grapeseed oil
1 shallot (minced)
3 lg. garlic cloves (minced)
Kosher salt and white pepper
1 c. asparagus (1/2 inch cut)
8 oz. sliced mushrooms
8 oz. jumbo lump crab (drained well)
1/2 c. julienned sun-dried tomatoes
1/2 c. grated romano (heaping)
1/3 c. grated parmesan (heaping)
1 and 1/2 stick butter
1 and 1/4 c. heavy cream
crushed pepper (optional to taste)
parsley (optional garnish)

Steps:

  • Heat a large saute pan over medium high heat.
  • Add grapeseed oil, shallots, garlic, asparagus, mushrooms, sun-dried tomatoes and little kosher salt and white pepper to the pan. Saute for a few minutes .
  • Season the shrimp and lobster with salt and white pepper and add to the pan.
  • Cook for a few minutes until the shrimp and lobster are opague in color.
  • In another large saute pan with high sides, melt the butter over low heat. Add the cream and combine well. Add kosher salt and white pepper.
  • Stir in cheeses over medium heat until melted and smooth.
  • Add cooked pasta and to the sauce to coat along with the seafood-veggie mixture and toss.
  • Finally add lump crab without breaking up to warm through.
  • Add crushed pepper if desired and garnish with parsley.
  • Serve immediately. Say Grace and enjoy!

4 tablespoons butter
2 ounces all-purpose flour
4 cups whole milk
Kosher Salt
White pepper
1 cup grated Parmesan
12 ounces lump crabmeat
30 large shrimp (21/25 count), peeled and deveined
Kosher salt and freshly ground black pepper
2 tablespoons grapeseed oil
3 cloves garlic, sliced
3 pounds (cooked weight) cooked fettuccine
1 tablespoon lemon juice
1/4 cup chicken stock
1/2 cup heavy cream
3 large egg yolks
2 tablespoons chopped chives

Steps:

  • For the bechamel sauce: Melt the butter in a saucepan. Whisk in the flour and cook for 2 to 3 minutes, stirring constantly. Slowly whisk in the milk. Simmer for 20 minutes, stirring frequently to avoid burning. Season with salt and white pepper, then strain through a chinois and hold for later use.
  • For the seafood alfredo pasta: Bring a large pot of water to a boil to reheat the cooked pasta. In a saute pan or small saucepan, heat the bechamel sauce to a simmer. Add the Parmesan and stir to melt the cheese. Add the crabmeat and toss to warm.
  • Sprinkle the shrimp with salt and pepper. Heat a large saute pan over high heat. Add the grapeseed oil and then the shrimp to the pan. Cook for 1 to 2 minutes, then flip the shrimp and finish cooking, another 1 to 2 minutes. Remove the shrimp, leaving the oil in the pan. Hold the shrimp for plating.
  • Add the sliced garlic to the shrimp pan and saute until it just begins to brown around the edges. While the garlic is cooking reheat the pasta in the boiling water, about 1 minute. Strain the pasta, add it to the pan with the garlic and toss.
  • Add the bechamel and crab to the pasta and toss. Add the lemon juice, Chicken stock and cream and sprinkle with salt and pepper. Add the egg yolks and toss to incorporate. Cook for 1 minute to help thicken the sauce. Add the shrimp and toss.
  • Divide the pasta and shrimp evenly between serving plates and garnish with chopped chives.

500g (1lb 2oz) mixed seafood (we used squid, prawns and scallops)
1kg (2lb 4oz) mixed shellfish (we used mussels and clams)
400g (14oz) linguine
25g (1oz) butter
2 garlic cloves, chopped
1 red chilli, finely chopped
200ml (7fl oz) white wine
large handful parsley, roughly chopped

Steps:

  • Pick through the shellfish and discard any open ones. Rinse thoroughly. You may have to de-beard the mussels (see tip below).
  • Heat a frying pan and add a drizzle of oil. When very hot, add the seafood and heat until just cooked (for prawns, this will be the second they turn pink). Set aside.
  • Cook the pasta according to the pack instructions. Meanwhile, heat a lidded sauté pan and melt the butter. Add the garlic and chilli, and cook for a couple of minutes over a low heat then turn the heat right up and add the white wine. Let it simmer for a couple of minutes, then tip in the shellfish, put the lid on tightly, and cook for about 5 minutes, shaking the pan occasionally, until all the shellfish are open. Discard any unopened ones. Tip in the rest of the seafood, taste the juice in the pan and season with pepper (it shouldn't need salt).
  • When the pasta is cooked, drain and combine with the seafood and scatter with parsley. Serve immediately.
