This easy, Overnight Banana Bread French Toast Casserole is the perfect combination of brunch favorites. This recipe uses the traditional, decadent ingredients found in French Toast, and combines them with the best banana bread ever.

1 loaf banana bread
1¼ cup whole milk
¼ cup french vanilla coffee creamer ((optional) you can substitute this with milk)
5 large eggs
2 tsp ground cinnamon
¼ cup sugar
¼ cup unsalted butter, melted
3 tbsp brown sugar
1 tsp vanilla bean paste
½ cup chopped pecans

Steps:

  • Spray your baking dish with baking spray (cooking spray with flour) or butter it very well.
  • Break your banana bread into bite size (but not too small) pieces and place in the dish
  • In a separate bowl or large measuring cup with a spout, whisk eggs and ground cinnamon to combine. After the cinnamon and eggs are well combined, add in the milk, coffee creamer, and sugar. Stir until well blended.
  • Pour egg mixture evenly over the banana bread pieces. Pat down the pieces that are on the top so they absorb some of the egg mixture.
  • Now, cover securely and refrigerate overnight or for at least several hours.
  • Remove casserole dish from refrigerator and uncover.
  • In a separate bowl or measuring cup with a spout, melt butter, and stir in brown sugar and vanilla bean paste.
  • Pour butter mixture evenly over banana bread.
  • Chop pecans and sprinkle over banana bread.
  • Bake at 375°, on convection, for 30 minutes. Check at 30 minutes and as long as it doesn't look like it has gotten too dark, let it cook another 5-8 minutes.
  • Remove from the oven and slice fresh banana over casserole, tucking bananas throughout. Dust with powdered sugar and serve warm. Optional toppings: pancake syrup or whipped cream, Nutella, or chocolate syrup

1 lb loaf Sourdough Or French Bread, cut into chunks
8 large eggs
2 cups (480ml) milk (whole or 2%)
1/2 cup (120ml) heavy whipping cream
1/2 cup (104g) sugar
1/4 cup (36g) light brown sugar, unpacked
2 tsp vanilla extract
1 1/2 tsp ground cinnamon
6-7 medium sized bananas, chopped*
3/4 cup (98g) all-purpose flour
3/4 cup (169g) firmly packed brown sugar
1 tsp cinnamon
1/2 cup (112g) salted butter, cut into pieces

Steps:

  • Grease a 9×13 inch casserole dish.
  • 2. Add the bread chunks to a large bowl and set aside.
  • 3. In another large bowl, whisk together the eggs, milk, cream, sugars, vanilla extract and cinnamon.
  • 4. Pour the egg mixture over the bread chunks and add the chopped banana, then gently stir to combine everything.
  • 5. Pour the bread mixture into the prepared casserole dish and spread evenly in the pan. Cover the casserole and store in the fridge overnight.
  • 6. When ready to bake the casserole, preheat the oven to 350°F (176°C). 7
  • Bake the casserole for about 35-40 minutes, or until it's at your desired level of doneness. 8
  • While the casserole bakes, combine the dry ingredients for the streusel, except for the butter. 9
  • Add the butter and mash into the dry mixture until it forms a crumbly mixture. 1

1 1/2 cups packed brown sugar
1/2 cup butter or margarine, melted
1/4 cup light corn syrup
1/2 cup chopped walnuts
3 medium bananas, sliced
1 loaf (about 1 lb) sliced unfrosted firm cinnamon bread
6 large eggs
1 1/2 cups milk
1 teaspoon vanilla
Powdered sugar, if desired

Steps:

  • Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, stir brown sugar, butter, corn syrup and walnuts until smooth. Gently stir in bananas. Spoon mixture into baking dish.
  • Reserve ends of bread for another use because they don't soak up the egg mixture very well. Arrange 2 layers of bread on banana mixture, tearing bread to fit if needed.
  • In medium bowl, beat eggs, milk and vanilla with wire whisk until well blended. Pour over bread. Cover tightly; refrigerate at least 1 hour but no longer than 24 hours.

1 (8 ounce) package cream cheese, cubed

2 bananas
3/4 cup brown sugar, divided
6 eggs
3 cups milk
1 teaspoon hazelnut extract

Steps:

  • Cube or tear bread into 1-2 in chunks. I like to use great harvest bread Apple cinch bread but any French, Italian, etc works. Put them in a sprayed or greased 13x9 in baking dish.
  • mash 2 very ripe bananas with 1/4 c brown sugar.
  • Whisk in 6 eggs.
  • add 3 cups of milk, hazelnut and vanilla extract (double vanilla if you don't have hazelnut) and whisk until combined.
  • Pour over the bread and refrigerate 4 hours or overnight.
  • mix the remaining 1/2 c brown sugar with the cinnamon and walnuts and sprinkle evenly over the top of the bread in the morning.
  • Slice the 1/2 stick of butter very thin and dot the top of the casserole with them.
  • bake at 350 for 50-60 minutes, let stand 10 minutes before cutting.
  • Serve alone or with maple syrup. This reheats very well!
