CHEESE AND BROCCOLI STRATA
This is a good dish to serve at a brunch, particularly since all the "hard" work can be done the night before. Note that the cooking time includes a few hours for refrigeration. I think I got this one from the Byerly's cookbook.

Steps:
- Layer bread, broccoli, and 1/2 of cheese in a buttered 9 x 13 baking dish.
- Combine eggs, milk, mustard, spice, and salt; pour over the strata.
- Refrigerate, covered, several hours or overnight.
- Preheat the oven, and sprinkle the strata with paprika.
- Bake, uncovered, for 35 minutes.
- Add remaining cheese to the top; bake until a knife inserted into the center comes out clean (about 10-15 minutes).
- Allow to set for 10-15 minutes before serving.
BROCCOLI AND CHEDDAR STRATA
Reinvent leftover hot dog buns by turning them into this cheesy broccoli strata.

Steps:
- Butter a 9-by-13-inch baking dish.
- Whisk the half-and-half, Parmesan, eggs, 1 1/2 teaspoons salt and a few grinds of pepper together in a large bowl.
- Bring a medium pot of salted water to a boil. Add the broccoli florets and simmer until crisp-tender, 3 to 4 minutes; drain.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the Cheddar, followed by the broccoli. Cover with the remaining bread cubes and pour the half-and-half mixture evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F.
- Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup Cheddar. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.
BROCCOLI CHEESE STRATA

- In a small microwave-safe dish, microwave broccoli and onions in water on high for 1 minute; drain and set aside. Place bread in a shallow 3-cup baking dish coated with cooking spray. Add broccoli mixture and cheese. , In a small bowl, combine the eggs, milk, mustard, dill, nutmeg and pepper; pour over cheese. OVERNIGHT CHEESY BROCCOLI STRATA
Overnight Cheesy Broccoli Strata is an easy make-ahead breakfast casserole loaded with broccoli, leeks, and plenty of cheese. It's perfect for busy mornings or weekend brunch!

- Heat the olive oil in a large saute pan over medium heat. Add the broccoli, leek, garlic, and a pinch of salt and pepper and saute for 3-5 minutes or until the leek has softened and the broccoli is crisp tender. Set aside to cool.
- Spray an 8x8" baking dish with cooking spray.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Add the broccoli mixture and 1 cup of the cheese and stir until incorporated. Add the cubed bread and toss gently until it's well coated with the egg mixture. Pour into the prepared baking dish and cover with plastic wrap for 8 hours or overnight.
- Preheat the oven to 350 degrees. Remove the plastic wrap and top with the remaining 1/2 cup cheese. Bake the strata for 50-60 minutes or until golden brown and puffed in the middle. If it browns too soon, cover loosely with foil. Remove from heat and cool slightly on a wire rack. Serve and enjoy!

- Heat 2 teaspoons of the oil in a nonstick skillet over medium heat. Add the onions and saute until translucent and beginning to brown, about 4 minutes. Add the garlic and continue to cook for another 1 minute. Transfer the onion mixture to a medium bowl and allow to cool. Heat remaining 2 teaspoons of oil in the skillet and saute the mushrooms until they release all of their water, about 6 to 7 minutes. Remove from heat and cool completely. Spray an oval baking dish with cooking spray. Arrange the bread cubes in the dish. In a large bowl, beat the eggs, egg whites, milk and mustard until incorporated. Add mushrooms, onion-garlic mixture, broccoli, Parmesan and mozzarella cheeses, sun-dried tomatoes, thyme, and salt and pepper and stir to incorporate. Pour mixture over bread, making sure liquid saturates bread. Cover with plastic wrap and refrigerate overnight, or at least 8 hours. Preheat the oven to 350 degrees F. Remove the plastic wrap from strata and bake for 55 to 60 minutes, or until top forms a light brown crust.
BROCCOLI, MUSHROOM AND CHEEESE BREAKFAST STRATA
A great way to use up day old bread. Recipe from Ellie Kreiger on Food Network. This is an easy, make ahead dish that can feed a crowd.

Steps:
- Heat 2 tsp oil in nonstick skillet over meduim heat.
- Add onions and saute until translucent, about 4 minutes.
- Add garlic and cook another 1 minute.
- Transfer onion mixture to a medium bowl and let cool.
- Heat remaining 2 tsp oil in the skillet and saute mushrooms until the release all their water, about 6-7 minutes. Remove from heat and cool completely.
- Spray an oval baking dish with cooking spray.
- Arrange bread cubes in the dish.
- In a large bowl, beat eggs, egg whites, milk and mustard until incporporated.
- Add mushrooms, onion-garlic mixture, broccoli, parmesan and mozzarella cheeses, sun-dried tomatoes, thyme, salt and pepper and stir to incorporate.
- Pour mixture over bread, making sure to saturate bread.
- Cover with plastic wrap and refrigerate overnight or at least 8 hours.
- Preheat oven to 350 degrees F.
- Remove plastic wrap and bake for 55-60 minutes or until center is set.

Arrange rings and holes on top; brush bread with melted butter. , Beat next 6 ingredients; pour over top. Refrigerate, covered, 8 hours or overnight., Remove strata from refrigerator 30 minutes before baking. Preheat oven to 325°. Bake, uncovered, 55-60 minutes. Sprinkle with remaining cheese; bake until a knife inserted in center comes out clean, about 5 minutes longer. Let stand 5-10 minutes before cutting.
