1 avocado, diced
3/4 cup tomatillo salsa
3/4 cup quick-cooking grits
Kosher salt and freshly ground pepper
1 1/2 cups grated sharp cheddar cheese (about 6 ounces)
1 pound lean ground beef
1 bunch scallions, chopped
1 to 2 red jalapeno peppers, seeded and thinly sliced
1 5-ounce package baby kale (about 8 cups)
2 tablespoons unsalted butter
4 large eggs

Steps:

  • Combine the avocado and salsa in a small bowl; set aside. Whisk 2 3/4 cups water, the grits, 1 teaspoon salt and a few grinds of pepper in a microwave-safe bowl. Cover with plastic wrap and pierce a few times with a knife; microwave until thickened, 8 minutes. Uncover and microwave until creamy, 4 to 5 more minutes. Whisk in the cheese. Cover and set aside.
  • Meanwhile, form the beef into four 3/4-inch-thick patties. Heat a large cast-iron skillet over medium-high heat; sprinkle the skillet with1 teaspoon salt. Add the patties and cook 4 to 5 minutes per side for medium doneness. Transfer to a plate and tent with foil.
  • Add the scallions and jalapenos to the skillet. Cook, stirring, until tender, 2 minutes. Add the kale; stir until wilted. Transfer to a bowl.
  • Wipe out the skillet. Add the butter and swirl to melt. Add the eggs and fry as desired; set on top of the burgers. Whisk the grits, adding hot water to loosen, if necessary. Divide among plates and top with the kale mixture and avocado salsa. Serve with the burgers.

2 poblano chiles (see Recipe #) or 2 hatch chiles, grilled, peeled, seeded and chopped (see Recipe #)
1 medium red onion, grilled and chopped
2 garlic cloves, chopped
2 tablespoons oregano or 2 tablespoons cilantro, chopped
salt & freshly ground black pepper
2 lbs ground chuck
salt & freshly ground black pepper
8 slices monterey jack cheese or 8 slices provolone cheese
romaine lettuce
pickled jalapeno pepper
sliced beefsteak tomato
6 hamburger buns

Steps:

  • Sauce:.
  • Place all ingredients in a blender and blend until smooth and season with salt and pepper to taste. (A water if necessary to achieve the proper consistency.).
  • Burgers:
  • Heat grill to high. Form meat into 6 burgers and season with salt and pepper to taste. Grill until charred on both sides and cooked to desired doneness.
  • Place 2 slices of the cheese on each burger; close the lid or tent with foil and cook until the cheese has just melted, about 1 minute.
  • Place burgers on bun and top with green chili sauce, lettuce, tomatoes and pickled jalapeno, if desired.
  • Note: Use high heat. A great tasting burger needs only to be on the grill 2 to 3 minutes on each side to arrive at a perfect medium doneness.

2 cans (4.5 oz each) Old El Paso™ chopped green chiles
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 1/2 cups shredded Cheddar cheese (6 oz)
1 1/2 cups frozen whole kernel sweet corn, thawed
2 tablespoons chopped fresh cilantro
4 lime wedges

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy duty foil. Spray with cooking spray.
  • In medium bowl, mix beef, 1 can green chiles, chili powder, 1 teaspoon of the cumin, 3/4 teaspoon of the salt and 1 cup of the cheese until blended. Form into 4 patties about 1/2-inch thick. In small bowl, mix corn, remaining can of green chiles, remaining 1/2 teaspoon cumin and remaining 1/4 teaspoon salt.
  • Place beef patty on center of each sheet of foil. Scoop about 1/3 cup of corn mixture on top of each patty.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packs on grill over medium heat. Cover grill; cook 8 minutes. Rotate packs 1/2 turn; cook 7 to 9 minutes longer or until patties are no longer pink in center and meat thermometer inserted in center of patties reads 160°F. Remove packs from grill. Cut large X across top of each pack. Carefully fold back foil. Top each patty with 2 tablespoons cheese; garnish with cilantro and a lime wedge.

This recipe, adapted from a dish served at MeMe's Diner in Prospect Heights, Brooklyn, is a brunch power move. Eggs sit atop wilted greens on a bed of yogurt, all surrounded by seeded chile oil. The fresh yogurt cuts through the chile oil's heat, and the seed mix adds layers of flavor and crunch. If you're feeling lazy - it is brunch after all - skip the greens, or use everything spice mix and peanuts, for the seed mix. But don't skimp on the chile oil: It's the best part. Scale it up to have extra on hand for future use, or use store-bought if you like. (You'll need about 1 cup for four servings.) Serve with toast, to sop up the extra oil.

3 tablespoons red-pepper flakes
1 small cinnamon stick
1 whole star anise
3/4 teaspoon green cardamom pods (about 15 pods), optional
1/2 teaspoon whole fennel seeds
1/4 teaspoon whole black peppercorns
1 cup neutral oil, such as canola or safflower
1 garlic clove, peeled and smashed
1 (1/4-inch) piece fresh ginger, thinly sliced (optional)
2 tablespoons black or white sesame seeds (or a mix)
2 tablespoons pepitas or sunflower seeds (or a mix)
2 tablespoons whole roasted, salted peanuts
1 1/2 teaspoons garlic flakes, chopped dried garlic chips or onion flakes
2 tablespoons neutral oil, such as canola, plus more as needed
1 large bunch curly kale (about 1/2 pound), stems removed and leaves torn into bite-size pieces
Kosher salt
1 tablespoon apple cider vinegar, champagne vinegar or white vinegar
1/2 tablespoon toasted red-pepper flakes (from the bottom of the chile oil)
Neutral oil, such as canola
4 to 8 eggs
1 cup plain Greek yogurt, at room temperature
Flaky sea salt

Steps:

  • Make the chile oil (or skip to Step 4 if using store-bought chile oil): Add red-pepper flakes to a heatproof container that can balance a fine-mesh sieve and comfortably hold at least 1 cup oil. (A 12- or 16-ounce Mason jar works well.) Set aside. In a medium saucepan over medium heat, toast cinnamon stick, star anise, cardamom (if using), fennel seeds and peppercorns, gently shaking the pan, until fragrant, 2 to 3 minutes.
  • Add oil, garlic and ginger (if using), reduce the heat to low and allow the oil to come to a gentle simmer. Cook until the garlic is deeply golden brown and the ginger is tender, about 20 minutes. (The longer and more gently it cooks, the more flavorful the oil will be.)
  • Carefully pour hot oil through sieve directly onto the red-pepper flakes, which will sizzle and fry in the hot oil. Discard strained spices. (You should have a little more than 1 cup oil.) Allow mixture to cool at least 1 hour or, for the best flavor, make it the night before.
  • As chile oil simmers, prepare the seed mix: Heat oven to 425 degrees. On a rimmed sheet pan, lay out sesame seeds and pepitas in a single layer, transfer to the oven and toast until golden and fragrant, about 6 minutes. Let cool slightly, then mix in peanuts and garlic flakes. Set aside.
  • Prepare the sautéed kale: In a large skillet over medium heat, warm oil until it shimmers. Add kale to the skillet, a couple of handfuls at a time, stirring to combine and adding more kale to the skillet as it wilts and space permits. (Kale will release liquid, but if you think it needs more oil, add it to the pan.) When the last batch has been added, season generously with salt. Add vinegar and about 1/2 tablespoon red-pepper flakes scooped from the chile oil, and stir to incorporate. You want some wilted bits and some crunchier drier bits. Set over low heat as you fry your eggs.
  • Prepare the eggs: In another large nonstick skillet over medium-high, heat 1 tablespoon neutral oil. Working in batches, cook 1 to 2 eggs per person, adding oil as needed, until the yolk is a desired consistency, 2 to 3 minutes for sunny-side up.
  • Plate the dish: Dollop about 1/4 cup yogurt onto the center of each plate, spread it in a circle, leaving space around the edge of the plate for the seeded oil and a divot in the middle for the greens. Spoon 3 to 4 tablespoons chile oil around the edge of the yogurt, and sprinkle seed mix over the oil. Divide warm greens on top of yogurt, and top with eggs. Sprinkle with flaky sea salt and serve immediately.

4 (3/4-oz.) slices hot pepper Monterey Jack cheese
1 ripe medium avocado, pitted, peeled
2 tablespoons mayonnaise
4 sandwich buns, split
2 tablespoons taco sauce
1 cup shredded lettuce
4 thin slices tomato

Steps:

  • In medium bowl, combine ground beef and chiles; mix well. Shape mixture into 4 patties, 1/2 inch thick.
  • Heat nonstick stove-top grill pan over medium-high heat until hot. Add patties; cook 2 minutes. Reduce heat to medium-low; cook an additional 6 to 10 minutes or until no longer pink in center, turning once. Top each patty with cheese; cook just until cheese is melted.
  • In small bowl, mash avocado with fork. Stir in mayonnaise until well blended. Spread bottom halves of buns with avocado mixture. Place patties on bottom halves. Top with taco sauce, lettuce, tomato and top halves of buns.

Form into burgers and grill. While the burgers are grilling, try the eggs. Serve the fried eggs on top of the burgers. It you like, garnish with avocado and lettuce.
