PALEO-FRIENDLY AND GLUTEN-FREE GLAZED MAPLE & BACON DONUTS



Paleo-Friendly and Gluten-Free Glazed Maple & Bacon Donuts image

You can easily bake your own maple-flavored glazed donuts with bacon inside and sprinkled on top -- this one's amazing!

Number Of Ingredients 18

4 eggs - whisked
1 3/4 cups almond flour
2 tbs coconut flour
1 tsp baking soda
1/2 cup raw maple syrup
1/4 cup coconut oil - melted
1 tsp vanilla
1 tsp cinnamon
1/8 tsp salt
1/3 cup bacon bits (about 6-8 pieces, fried and crumbled)
1/4 cup raw maple syrup
1/4 cup coconut butter
1/4 cup coconut milk
1 tsp vanilla
1 tsp cinnamon
3 tbsp raw honey
2 tbsp plus 1 tsp of palm shortening
About 6 pieces of bacon crumbled for bacon "sprinkles" on top of donuts

Steps:

  • Preheat oven to 350º F
  • Grease donut pan
  • In a medium bowl mix dry ingredients. almond flour, coconut flour, baking soda, cinnamon, and salt
  • In another bowl, mix all the wet ingredients: eggs, maple syrup, coconut oil and vanilla
  • Pour the wet ingredients into the bowl with the dry ingredients, and stir thoroughly to combine
  • Gently stir in bacon bits
  • Get a large Ziplock bag and pour the batter into it. Release the air and seal the bag.
  • Cut off a corner and pipe the donut batter into the donut pan. Fill each mold about 2/3 full
  • Tap the pan on the counter to make sure the top is even
  • Bake for about 20 min or until a toothpick comes out clean (oven cooking times vary)
  • Allow to cool, then remove donuts and place on wire rack until you're ready to glaze
  • In a bullet or a good blender combine all the glaze ingredients
  • It should be the consistency of a thick glaze - like you'd normally find on a donut
  • Make sure the donuts have completely cooled before glazing
  • Dip one side of the donuts in the glaze and return to the wire rack.
  • Sprinkle with bacon crumbles
  • Makes somewhere between 6-8 glazed maple-bacon donuts

Mini Maple-Glazed Doughnuts with Coconut

You may not know this about me, but I'm not one to gravitate towards doughnuts if there are other sweet treats available. That was, until I made these mini doughnuts. They are sooo good-salty and sweet at the same time, which is my favorite flavor combo of all.

1 cup large unsweetened coconut chips
1 tablespoon low-sodium soy sauce
1 teaspoon liquid smoke
1 teaspoon maple syrup
1/4 cup vegan butter
1/2 cup almond milk
2 tablespoons coconut oil
Peanut or canola oil, for frying
2 cups all-purpose flour
1/4 cup vegan cane sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup vegan confectioners' sugar
1/2 cup maple syrup
1/2 teaspoon maple extract
Pinch kosher salt

Steps:

  • For the coconut "bacon": Preheat the oven to 350 degrees F.
  • Mix together the coconut chips, soy sauce, liquid smoke and maple syrup in a medium bowl. Spread in a single layer on a parchment paper-lined baking sheet. Bake, stirring halfway through, until the coconut is golden brown, 8 to 10 minutes. Set aside to cool. The "bacon" will crisp up as it cools.
  • For the doughnuts: Melt the butter in a medium saucepan over medium heat. Add the almond milk and coconut oil. Remove from the heat and set aside.
  • Pour the peanut or canola oil halfway up the sides of a cast-iron skillet and heat to 350 degrees F.
  • Whisk together the flour, cane sugar, baking powder and salt in a medium bowl. Make a well in the center and pour the hot milk mixture in the well. Mix until a thick dough forms. Roll portions of dough into 12 balls and use your thumb to make holes in the centers.
  • Fry the doughnuts, in batches, until golden brown, 3 to 5 minutes on each side. Let drain on paper towels.
  • Meanwhile, make the maple glaze: Stir together the confectioners' sugar, maple syrup, maple extract and salt in a small bowl. Dip the doughnuts in the glaze and sprinkle with the coconut "bacon" before serving.

Who doesn't love mini donuts that you can either pop into your mouth? These Maple Bacon Donuts might be the perfect brunch mini donut recipe.

3 cups flour
1 tsp salt
1/8 tsp cinnamon
2 large eggs
1/4 cup butter, melted
1 tbsp baking powder
1/2 tsp nutmeg
3/4 cup white sugar
2 tsp vanilla
1 3/4 cup milk - I use almond milk
3 cup icing (powdered) sugar
1/4 cup milk
1 tsp maple extract
bacon - use maple bacon for even more pop!

Steps:

  • Start by creaming together the eggs and sugar. Add in the melted butter and mix well. Add baking powder and spices.
  • Mix in the flour and milk alternating between the two to make mixing easier. Start filling mini donut molds in your method of choice - recommend piping bag method.
  • While your maple bacon mini donuts are baking you need to start making some icing. And you need to fry up some bacon! I used bacon bits because then the work of chopping up the bacon is already done for me.
  • Let your mini donuts and bacon bits cool down before you start dipping them into the frosting so that it doesn't just runoff.
  • Give it a minute to set and then add some chopped-up bacon onto your mini donuts.
