4 boneless pork loin chops
2 tablespoons sunflower oil
1 onion, chopped
8 ounces mushrooms, thinly sliced
2 tablespoons sherry wine or 2 tablespoons apple juice
1 tablespoon whole grain mustard
7/8 cup creme fraiche

Steps:

  • Cut the pork into thin slices horizontally to make thin steaks (escalopes).
  • Heat half the oil in a large frying pan and fry the onions and mushrooms until tender.
  • Remove from the pan and set aside.
  • Add the remaining oil and fry the pork for 3-4 minutes on each side until browned.
  • Return the onions and mushrooms to the pan, along with sherry or apple juice, mustard and crème fraîche.
  • Simmer for 5 minutes, or until pork is cooked.
  • Serve with broccoli and new potatoes or pasta.

6 tablespoons butter, divided
3 tablespoons sugar
1 tablespoon lemon juice, a wedge
1/4 cup balsamic vinegar
2 to 3 stalks rhubarb, trimmed and chopped, about 1/2 pound yield
2 tablespoons extra-virgin olive oil, 2 turns of the pan
Handful golden raisins
4 (8-ounce) boneless, center cut pork loin chops
Salt and pepper
1 tablespoon all-purpose flour
1/4 cup sherry
1/2 cup chicken or beef stock
2 tablespoons strawberry, blackberry or raspberry all-fruit preserves (recommended: Polaner)

Steps:

  • In a medium skillet over medium heat melt 2 tablespoons of butter. Add sugar, lemon juice, vinegar and bring to a bubble. Add rhubarb and raisins and cook 10 to 12 minutes until rhubarb is tender. Turn off the heat and set aside until the pork chops are done.
  • Place a nonstick skillet over medium-high heat with extra-virgin olive oil, 2 turns of the pan. When the oil smokes or ripples, add chops, season with salt and pepper and cook 6 minutes on each side. Remove the chops and keep warm under foil tent while the meat rests. Add remaining butter to pan, when it melts add the flour and cook a minute then whisk in sherry and reduce 30 seconds then whisk in stock then preserves. Season the gravy with a little black pepper. Serve chops with gravy ladled over top and rhubarb chutney along side.

1 lb pork tenderloin
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons vegetable oil
2 large shallots, finely chopped
8 ounces cremini mushrooms, sliced
1/4 teaspoon dried thyme
1 pinch salt
1 pinch ground black pepper
1/4 cup white wine
1 cup chicken broth
1 tablespoon butter, softened
1 tablespoon all-purpose flour
3 tablespoons fresh parsley, chopped

Steps:

  • Sprinkle the pork with salt and pepper.
  • In a skillet, heat 1 tablespoons of the oil over medium-high heat; brown the pork all over.
  • Transfer to a foil-lined baking sheet; roast in a 400 degree F oven until the juices run clear when the pork is pierced, about 18 minutes.
  • Transfer to a cutting board and tent with foil; let stand for 5 minutes before slicing.
  • Meanwhile, in the same skillet, heat the remaining oil over medium-high heat.
  • Saute the shallots until softened, about 3 minutes.
  • Add the mushrooms, thyme, salt and pepper; saute until the mushrooms are golden, about 6 minutes.
  • Add the wine and cook until evaporated, stirring and scraping up any brown bits.
  • Add the broth and cook for 5 minutes.
  • Mix the butter with the flour and add to the sauce along with the parsley.
  • Simmer, stirring, until thickened.
  • Stir any juices from the pork into the sauce.
  • Serve with the pork.

4 (1-inch thick) boneless pork chops
salt and ground black pepper to taste
¼ cup all-purpose flour

1 (8 ounce) package sliced fresh mushrooms
1 (10.75 ounce) can cream of mushroom soup
½ cup dry cooking sherry
4 ounces shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat oil in a frying pan over medium-high heat. Season pork chops with salt and pepper and coat in flour. Brown pork chops on both sides, 3 to 5 minutes, and transfer to a baking dish.

1 pork tenderloin (cut into 3/4-inch medallions)
2 -3 tablespoons oil (any vegetable oil is fine)
1 medium onion, finely chopped
2 cups sliced fresh mushrooms
1 -2 garlic clove, minced
seasoning salt
fresh black pepper
1/2 teaspoon dried thyme
2 tablespoons dry sherry
2 cups chicken stock
1 teaspoon cornstarch
1 teaspoon Dijon mustard
1/2 cup half-and-half cream
2 tablespoons finely chopped fresh sage
2 tablespoons finely chopped fresh thyme
2 tablespoons finely chopped fresh parsley

Steps:

  • Heat 10 " skillet.
  • Add oil.
  • Season medallions on one side. Place in pan season side down. Season other side . Brown until golden and turn. When both sides are nice and golden, remove from pan and set aside.
  • Add more oil if needed and onion, mushrooms, and garlic. Saute until onion is soft and mushrooms are lightly browned.
  • Add sherry, dried thyme and salt and pepper. Cook til sherry is almost evaporated, 2 minutes.
  • Add stock (with cornstarch mixed in), mustard and cream. Bring to a boil.
  • Add meat back to pan, along with herbs.
  • Reduce heat, cover and simmer 15 -20 minutes.

1 (8 ounce) can chopped mushrooms - drained, liquid reserved
¼ cup unsalted butter, softened
¼ cup minced onion
¼ teaspoon salt
fresh ground black pepper to taste
4 (4 ounce) beef tenderloin filets
3 tablespoons strawberry jelly
½ teaspoon fresh lemon juice
5 tablespoons vanilla ice cream

Steps:

  • Mince mushrooms, then mix with butter, minced onion, salt, and pepper in a small bowl. Reserve half of butter mixture, and divide other half over the 4 filets.
  • Heat a large skillet over medium-high heat. Place steaks, butter side down, in hot skillet. Spread remaining butter mixture over steaks. Cook to desired doneness, turning once. Transfer filets to a plate, cover loosely with foil, and keep warm.
  • Return skillet to medium-high heat. Stir in reserved mushroom liquid, and scrape up any browned bits from the bottom of pan. Add jelly and lemon juice, and simmer until liquid is reduced by half. 1 tbsp plain flour
2 tsp dried rosemary
3 tbsp olive oil
250g chestnut mushrooms , sliced
1 fat garlic clove , finely chopped
300ml vegetable stock

Steps:

  • Coat the pork: Cut the pork diagonally into finger-thick slices. Tip the flour and rosemary into a large plastic food bag, add some salt and pepper and the pork, and toss until the meat is well coated.
  • Start cooking: Heat 2 tablespoons of the oil in a large wide frying pan. Add the pork and fry for about 3-4 minutes until nicely browned on both sides, turning once. Remove from the pan.
  • Fry the mushrooms: Heat the remaining oil in the pan, tip in the mushrooms and fry until they start to soften, about 2 minutes. Sprinkle in the garlic and return the pork to the pan with any flour left in the bag. Stir in the stock and bring to the boil. Simmer for 5 minutes or until the pork is cooked.

  • Preheat oven to 180 C. Place carrots (trimmed and peeled), potatoes (halved or quartered), and onions (wedges) on the tray and spray with olive oil. Bake veggies for 20 minutes. Add the sprouts to the tray; spray with a little more oil. Bake for a further 25 - 30 minutes, or until veggies are golden and tender
  • Heat 1 teaspoon of olive oil in a large non-stick frying pan over a medium to high heat. Cook pork for 4 minutes on each side, or until,cooked to your liking. Transfer to plate. Cover loosely with foil and set aside.
  • Add remaining oil to same pan and return to medium heat. Sauté leek (halved and thinly sliced) for 5 minutes or until softened. Increase heat, add mushrooms and cook for 3 to 4 minutes or until golden . Add stock and simmer until reduced by half. Stir through the sour cream and half herbs. Season with pepper.
