When a friend of mine returned from a trip to Paris, she raved about the food she had and described one of her favorite meals. It inspired me to create a similar hors d'oeuvre. -Noelle Myers, Grand Forks, North Dakota

1/2 pound boneless skinless chicken breasts, cut into 1/4-inch cubes
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped fennel bulb
2 teaspoons olive oil
1 tablespoon chopped green onion
1/2 teaspoon minced fresh rosemary
1 medium apple, chopped
1/4 cup chopped pecans
1 tablespoon minced fresh parsley
1 tablespoon lime juice
3 heads Belgian endive, separated into leaves
1 cup dark chocolate chips
1/3 cup seedless blackberry spreadable fruit
1/4 cup balsamic vinegar

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, saute chicken and fennel in oil until chicken is no longer pink. Add green onion and rosemary; cook 1 minute longer. Remove from the heat., In a large bowl combine the apple, pecans, parsley and lime juice. Stir in chicken mixture; spoon into endive leaves., In a microwave, melt chocolate chips; stir until smooth. Stir in spreadable fruit and vinegar. Drizzle over appetizers.

Here's what you need: chicken tender, mozzarella cheese, panko breadcrumbs, garlic powder, dried basil, dried parsley, salt, flour, eggs, oil, marinara sauce

1 lb chicken tender
1 ball mozzarella cheese
2 cups panko breadcrumbs
1 tablespoon garlic powder
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon salt
½ cup flour
2 eggs
oil, to fry
1 cup marinara sauce

Steps:

  • Cut the chicken tenders into 1.5-inch (4 cm) pieces.
  • Take a knife and carefully cut a hole into the chicken tenders. Make sure to not cut all the way to the other side.
  • Stuff the holes with mozzarella cheese.
  • Add garlic powder, dried basil, dried parsley, and salt to the panko bread crumbs.
  • Batter the chicken in flour, egg, then panko bread crumb mixture.
  • Add around 1-inch (2 cm) of oil to a pan and heat until around 350˚F (175˚C).
  • Fry the chicken on both sides until fully cooked and golden brown.
  • Serve with marinara sauce and garnish with more parmesan cheese.

Chicken breasts slow cooked with a creamy white wine and mushroom mixture. This quick and easy recipe calls for just five main ingredients, yet is tasty enough to serve for company! My husband normally doesn't like chicken, yet asks for seconds whenever I prepare this. I spoon the sauce over the chicken and serve with rice or noodles.

6 skinless, boneless chicken breast halves
salt and pepper to taste
paprika to taste
½ cup dry white wine
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4.5 ounce) can sliced mushrooms, drained
1 cup sour cream
¼ cup all-purpose flour

Steps:

  • Sprinkle chicken breasts lightly with salt, pepper, and paprika to taste. Place in slow cooker.
  • In a mixing bowl, combine the wine, condensed soup, and mushrooms. In another bowl, mix together sour cream and flour. Stir sour cream mixture into the mushrooms and wine. Pour over chicken in slow cooker. Sprinkle with additional paprika, if desired.
  • Cover, and cook on Low for 6 to 8 hours.

2 -4 whole boneless chicken breasts
2 tablespoons butter
1 cup sour cream
1/2 cup cooking sherry or 1/4 cup white vinegar
1 medium onion, sliced
1 (10 3/4 ounce) can cream of chicken soup

Steps:

  • Season chicken with salt and pepper; melt butter in a skillet and brown chicken breasts on both sides.
  • Arrange chicken in a 9 X 13 baking dish and top with sliced onion.
  • In a large mixing bowl combine remaining ingredients, mix well and pour over chicken and onions.
  • Bake at 450 degrees uncovered for 50 min to an hour.

1 lb boneless skinless chicken breast, sliced and cooked
2 (10 ounce) frozen broccoli
1/4 cup parmesan cheese, grated
4 ounces button mushrooms
1 tablespoon butter
3 tablespoons flour
1/8 teaspoon black pepper
1 1/2 cups milk
1/4 teaspoon nutmeg
10 1/2 ounces cream of mushroom soup
1/4 teaspoon Worcestershire sauce

Steps:

  • Place the chicken in the bottom of a 10-inch pie plate.
  • Top each slice with several pieces of broccoli.
  • Sprinkle with half the cheese.
  • Top with mushrooms.
  • Melt the butter over low heat in a small saucepan.
  • Blend in the flour and pepper.
  • Cook over low heat, stirring constantly, until the mixture is smooth and bubbly.
  • Remove from the heat and gradually stir in the milk.
  • Bring the milk mixture to a boil, stirring constantly, boil for 1 minute.
  • Stir in nutmeg, soup and Worcestershire.
  • Pour this mixture over the broccoli. Sprinkle with remaining cheese.
  • Broil until the top is light brown and bubbly. 3 to 5 minutes.
