PARISIAN HOT CHOCOLATE
What could be more comforting that a steaming cup of hot chocolate, on a crisp Winter afternoon? Well, for most Parisians, nothing else. And today's recipe is all about indulging in this decadent, yet utterly simple Parisian treat. "Le Chocolat Chaud", a Parisian tradition. When in Paris, stopping your activities at 4:00pm and wedging yourself on a café's heated patio to "people watch" with an accompanying "Chocolate Chaud", is a tradition dear to locals - and one that I happily embrace whenever I am in the city. So much so,...

PARISIAN HOT CHOCOLATE (LE CHOCOLATE CHAUD)
Parisian hot chocolate is luxuriously thick, smooth, creamy and flavorful. It's like drinking hot molten chocolate and simply no other hot chocolate can compare!

Steps:
- In a medium saucepan, heat the milk until it's hot and bubbles appear. Add salt and the finely chopped dark chocolate and whisk until dissolved and smooth. Bring the hot chocolate to a very low simmer, whisking continuously, and simmer for about 3 minutes (this will thicken it). Stir in the brown sugar if desired and whisk until smooth. Pour into cups and serve with a dollop of whipped cream if desired.
- Note: For an even thicker result, make the hot chocolate ahead of time, let it cool and then reheat when ready to serve.

Steps:
- Heat the milk in a medium-sized saucepan.
- Once the milk is warm, remove from heat and whisk in the chocolate, stirring until the chocolate is melted. For a thick hot chocolate, return to heat and cook at a very low boil for about 2-3 minutes, whisking constantly. Be careful and keep an eye on the mixture, as it may boil up a bit during the first moments.
- Taste, and add brown sugar if desired.
- Serve warm in demitasse cups, or small coffee or tea cups.
FRENCH HOT CHOCOLATE
One of my fondest memories of Paris was sipping a cup of thick, dark hot chocolate at one of their patisseries. French hot chocolate is velvety smooth, rich, decadent and almost the consistency of a molten chocolate bar. It is meant to be sipped slowly and savored. -Darlene Brenden, Salem, Oregon

PARISIAN HOT CHOCOLATE
I love collecting hot chocolate recipes from different countries. When wintering in Paris, one of life's great pleasures is sipping a cup of rich hot chocolate, le chocolat chaud, in a cozy café. This hot chocolate is deeply flavorful, but not over-the-top rich, so enjoy anytime! Adapted from David Lebovitz's blog

- Note: This hot chocolate improves if made ahead and allowed to sit for a few hours. Rewarm before serving. David also likes to add a few flecks of fleur de sel, the very good sea salt from Brittany.

- In top part of a double boiler, mix milk, chocolate, cocoa, and sugar. Place over simmering water and cook, stirring occasionally with a whisk, until chocolate has melted and mixture is smooth and hot, about 20 minutes. (Don't have a double boiler? Heat chocolate mixture in a small saucepan over a larger pan of boiling water.) Stir in cream and heat through.
- Pour into mugs, top with whipped cream and the chocolate shavings, if desired, and serve while warm.
- Variation: Make Mocha Chocolate à la Paris by substituting hot, strong-brewed coffee for whipping cream.
