Number Of Ingredients 15

2 cups shortening
2 cups boiling water
5-1/2 to 6 cups all-purpose flour
2 teaspoons salt
FILLING:
6 medium red potatoes (about 3 pounds), peeled
2 small rutabagas (about 1-1/2 pounds), peeled
1 pound ground beef
1/2 pound ground pork
2 medium onions, chopped into 1/4-inch pieces
3 teaspoons salt
2 teaspoons pepper
2 teaspoons garlic powder
1/4 cup butter
Half-and-half cream or a lightly beaten large egg, optional

Steps:

  • In a large bowl, stir shortening and water until shortening is melted. Gradually stir in flour and salt until a very soft dough is formed; cover and refrigerate for 1-1/2 hours. , Cut potatoes and rutabagas into 1/8- or 1/4-inch cubes; do not make cubes too large or they will not cook properly. Gently combine ground beef and pork; break into small crumbles. In a large bowl, combine potatoes, rutabagas, onions, meat mixture and seasonings. , Divide dough into 12 equal portions. On a floured surface, roll out 1 portion at a time into a 8-in. circle. Mound 1-1/2 to 2 cups filling on half of each circle; dot with 1 teaspoon butter. Moisten edges with water; carefully fold dough over filling and press edges with a fork to seal. , Place on ungreased baking sheets. Cut several slits in top of pasties. If desired, brush with cream or beaten egg. Bake at 350° until golden brown, about 1 hour. Cool on wire racks. Serve hot or cold. Store in the refrigerator.

We love a good pasty and this is a recipe I've developed to highlight the best of the flavors. We love butter pastry over lard or shortening, so this recipe uses a butter pastry crust recipe originally from Gourmet magazine. Prep time does not include one hour to chill pastry dough. There will be filling left over that I like to bake in a separate dish (covered!) for the little one. Enjoy!

2 cups all-purpose flour
1 1/2 teaspoons salt
3/4 cup cold unsalted butter, cut into bits
6 -7 tablespoons ice water
1 1/2 lbs ground beef
2 cups potatoes, diced
1 cup rutabaga, small dice
3/4-1 cup sweet onion, small dice
3 carrots, cut into coins
1 tablespoon seasoning salt
1 tablespoon dried parsley

Steps:

  • Make dough:.
  • Mix flour and salt in a large bowl and cut in butter.
  • Add ice water, 1 tablespoon at a time, tossing with a fork until incorporated.
  • Knead until well blended.
  • Form into four balls and chill for 1 hour or more covered in plastic wrap.
  • Remove pastry from fridge 30 minutes prior to rolling it out.
  • Make Filling:.
  • Preheat oven to 400 degrees.
  • Mix all ingredients together in large bowl.
  • Let flavors marry while rolling out dough.
  • Dust flat surface with flour and roll out dough into circles 1/8" thick.
  • Place large cupful of filling onto center of each dough circle.
  • Pull top over and, using fingertips, dot edges with water.
  • Seal edges together and then fold over on itself to form a double seal.
  • Cook in preheated oven for 50-60 minutes.

These were brought to the UP by Cornish Miners. It is still a very popular dish in the mining communities of the U.P. of Michigan.

8 large potatoes, cube
1 1/2 lbs flank steaks, cut in small pieces
1 lb pork steak, cut in small pieces
1 large onion, diced
3 1/2 teaspoons salt
black pepper, to teaste
2 tablespoons parsley
1/2 cup rutabagas (optional) or 1/2 cup carrot, diced (optional)
4 -5 cups flour
2 cups lard or 2 cups Crisco
1 1/4 teaspoons salt
1 teaspoon sugar
3/4-1 cup water

Steps:

  • Cube all of the above ingredients. The filling including the meat is not cooked. Those of us who are Yoopers (originally from the Upper Penninsula know that the meat is never cooked before baking a Pastie!
  • Mix dough like pie crust.
  • Divide into 8 balls.
  • Roll out like a pie crust.
  • Put filling on half of circle. About 1 cup.
  • Crimp like pie crust. Will look like a half circle.
  • Put on ungreased cookie sheets.
  • Bake at 425 degrees for 20 minutes and 375 for 40 minutes.
  • Put slits in top of crust before baking.
  • Let sit about 1/2 hour after baking.
  • Enjoy!

SPICED HARISSA LAMB PASTIES

Give the humble lamb pasty a spicy makeover using harissa. The prep can all be done in advance - just pop them in the oven an hour before serving

Number Of Ingredients 15

2 tsp vegetable oil
1 onion, finely chopped
1 leek, finely chopped
300g lamb mince
1 small preserved lemon, or ½ large preserved lemon
2 garlic cloves, crushed
1 sweet potato (about 150g), peeled and cut into small pieces
2 tsp ground cumin
3 tbsp harissa
1 tbsp tomato purée
125g butter, cut into cubes
125g lard, cut into cubes
500g plain flour, plus extra for dusting
1 egg, beaten, plus extra for brushing
2 tsp nigella seeds

Steps:

  • Heat the oil in a large pan over a medium-low heat and cook the onion and leek, stirring for 10-15 mins until softened. Push the veg to one side of the pan, turn up the heat to medium, and add the lamb mince. Fry for 10-15 mins, breaking up the mince with a spoon, until all the liquid has evaporated and the lamb is browned in places. Cut the preserved lemon into wedges, then remove the pith and finely chop the peel.
  • Add the lemon peel, garlic, sweet potato, cumin, harissa and tomato purée to the pan, season and sizzle for 1-2 mins. Stir in 200ml water and scrape any browned bits from the bottom of the pan. Put on a lid so it's partially covered, then cook for 10 mins until the sweet potatoes are starting to soften but still holding their shape, and the mixture is fairly dry. Remove from the heat and leave to cool completely. Once cool, will keep chilled for up to two days or frozen for two months.
  • For the pastry, put the butter, lard, flour and 2 tsp salt in a food processor and blitz until the mix resembles breadcrumbs. With the motor running, slowly drizzle in 6 tbsp cold water and pulse until the dough starts to clump together, adding another 1-2 tbsp water if the dough looks very dry. Tip the dough out onto a work surface and knead briefly to bring it together. Alternatively, tip the ingredients into a bowl and rub together using your fingertips before mixing in the water. Shape the dough into a disc, then wrap and chill for 30 mins.
  • Cut the dough in half so it's easier to work with, then roll out one half on a lightly floured surface to the thickness of a £1 coin. Use a 10-12cm cutter to stamp out circles of pastry - you should get about 20 once you've re-rolled trimmings and the second half of dough.
  • Working with one pastry circle at a time, brush a little beaten egg around the edge of the pastry and spoon 1 heaped tbsp of the lamb mixture into the centre. Fold the pastry over and crimp the edges together to seal, or press with the tines of a fork - don't worry if the pastry cracks a little, as you can just pinch it back together. Arrange the pasties on a baking tray lined with baking parchment. Once all the pasties are assembled, brush with more beaten egg and sprinkle with the nigella seeds. Chill for at least 30 mins. Can now be frozen for up to two months, as long as the mince mixture was not previously frozen.
  • Heat the oven to 200C/180C fan/gas 6 and bake for 35 mins from chilled or 45 mins from frozen until the pastry is golden. Leave to cool for 10 mins before serving warm.

1 c vegetable shortening, diced
1 c boiling water
3 c (12 oz) Better Batter All-Purpose Flour + a few tablespoons more for rolling
1 tsp salt
1 large russet potato, peeled and diced fine
1 medium onion, diced fine
1 large carrot, grated
1 small turnip, grated
1 lb veg sasuage
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
You will also need a rolling pin and 4 sheets of parchment paper - two for rolling and two to line cookie sheets.

Steps:

  • Pie crust prep. Make your pie dough using your favorite recipe or follow these instructions for a easy all-shortening recipe. In a large bowl, place vegetable shortening and boiling water. The hot water will melt the shortening. Add 3 cups flour and salt and mix with a spatula to form a soft dough. Divide in half and wrap well in plastic wrap. Chill dough at least 90 minutes to firm up. Make the filling. In a large bowl, place diced potatoes, onion, carrot, and turnip. Add ground beef and break up into very small pieces with your hands. Season with salt, pepper, and garlic powder. Gently mix with clean hands to combine ingredients. Set aside filling while you roll out dough. Preheat and prepare. Preheat the oven to 350 degrees and line two rimmed cookie sheets with parchment paper. Set aside. Roll. Divide pie dough into 8 pieces. Roll pieces of dough, sprinkled with just a tiny bit of extra flour, in between two pieces of parchment paper. Dough thickness will be thin, about 1/8-inch thick, into approximately a 10-inch circle. Peel back top parchment paper. Using a measuring cup, scoop about 1 cup of filling from the mixing bowl and mound filling just off-center in pie crust. Fold over and crimp edge to seal. Transfer to parchment-lined cookie sheet. Repeat with remaining dough pieces. I was able to get 4 pasties on a cookie sheet for baking. Chill second cookie sheet of pasties while the first one bakes. Bake. Cut several slits on top of crust to vent steam. Bake pasties for 55-60 minutes or until golden brown. Cool on wire racks. Repeat with remaining unbaked pasties. These are delicious served hot or even room temperature. Baked pasties freeze well. Cool completely before wrapping tightly in foil, then place in a plastic zip top bag. Thaw before re-heating in the oven. Yooper pasties are traditionally served with ketchup. Makes 8. Note. Some recipes call for making these hand pies larger - using a soup pot lid as a guide for the size of the pie crust round! Folded over, these massive pasties are more the size of calzones if you make them that large, but the baking time is approximately the same.

1 ½ teaspoons salt
1 cup shortening
1 cup cold water
1 pound boneless round or chuck steak, cut into 1-inch cubes
2 potatoes, peeled and cubed
1 onion, chopped
¼ rutabaga, cubed
1 carrots, diced
salt and pepper to taste
6 tablespoons margarine

Steps:

  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape into a ball. Wrap in plastic and refrigerate.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • In a large bowl, combine meat, potatoes, onion, rutabaga and chopped carrots. Season with salt and pepper. Divide dough into six pieces, and shape into balls. On a lightly floured surface, roll each ball into a 6 inch round. Place approximately 1 cup filling on one half of each. Dot each with 1 tablespoon margarine. Draw the other half of the pastry over the filling. Crimp edges to seal in filling. Prick with a fork and place on prepared baking sheet.
  • Bake in preheated oven for 1 hour.
