- In a shallow bowl, combine the hot water and instant espresso powder and stir until dissolved. Set aside. Whip the heavy cream to soft peaks in a medium bowl and set aside.
- Bring a saucepan with 2 inches of water to a gentle simmer over medium heat. In a bowl that fits comfortably over the pan without touching the water, add the bourbon, sugar and egg yolks and whisk until combined. Place the bowl over the simmering water and heat, whisking constantly, until the mixture is tripled in size and a ribbon is left in the mixture when you raise the whisk and drizzle the mixture on itself, about 8 minutes. (You can also use a handheld mixer on medium speed for this step.) Remove the bowl from the heat and continue to whisk for an additional minute to start to cool it down. Add the mascarpone, peanut butter, vanilla and salt and continue to whisk until well incorporated. When the mixture is smooth and slightly cooled, switch to a rubber spatula and gently fold in the reserved whipped cream. Set aside.
- One at a time, dip 6 of the ladyfingers into the espresso; do not let them sit and soak in the espresso--just a quick dip. Break each one in half and fit 2 halves on the bottom of each of six 6-ounce coffee cups or ramekins. Spoon about 1/4 cup of the peanut butter mixture over the ladyfingers in each coffee cup and spread evenly with an offset spatula. Spoon a scant tablespoon of the jam over the peanut butter mixture in each and spread evenly. Repeat with an additional layer of the ladyfingers, followed by a layer of the peanut butter mixture. Using a rasp grater, grate the chocolate evenly over the top. Cover with plastic wrap and refrigerate for at least 4 hours. Remove from the refrigerator 10 minutes before serving.
PB&J TIRAMISU

- tBeat the peanut butter, cream cheese, confectioners' sugar, vanilla and 1/2 cup cream in a large bowl with a mixer on medium speed until smooth and fluffy, 3 to 4 minutes. Add the remaining 1/2 cup cream and beat until creamy, about 2 more minutes. (Do not overbeat.)
- Whisk the jam, framboise and 1/3 cup water in a bowl until smooth. Spread about 3 tablespoons of the jam mixture in a 9-by-5-inch glass loaf pan. Cover with half of the ladyfingers, arranging them lengthwise. Brush with half of the remaining jam mixture. (Don't worry if it looks like a lot of liquid; the ladyfingers will absorb it as the tiramisu sits.)
- Spread half of the peanut butter cream over the ladyfingers. Top with 2 cups raspberries and the remaining ladyfingers. Brush the ladyfingers with the remaining jam mixture and spread the remaining peanut butter cream on top. Cover with plastic wrap and refrigerate at least 8 hours.
- Uncover the tiramisu and top with the remaining 2 cups raspberries and shaved chocolate. Dust with confectioners' sugar.
SOPHIA LOREN'S TIRAMISU
Taken from Sophia Loren's "Recipes and Memories" Cookbook, this tiramisu is incredible and it's one of the better traditional tiramisu recipes out there. I'm all for shortcuts, but some of the tiramisu recipes I've come across just ruin the final outcome by taking too many shortcuts & using too many substitutes. I've made this plenty of times and always get rave reviews. It's pretty close to perfect and certainly tastes homemade as it is. For those of you who don't know, Tiramisu is a cool, refreshing Italian dessert AKA "Tuscan Trifle". It can be prepared individually in custard cups or in one larger baking dish (that is this recipe). Also, this recipe calls for liquor to be used, however any of the imitation flavorings or liquid flavorings can be used instead.

- Combine egg yolks and sugar in a medium-sized bowl and beat well.
- In a separate bowl, beat the egg whites to stiff peaks.
- In a third, larger bowl, combine the egg yolk mixture with the mascarpone, then fold in the egg whites to produce a creamy mixture.
- Arrange a tight layer of ladyfingers in a 9-by-12-inch serving dish.
- Using a spoon, drizzle about half the liqueur and half the espresso over the ladyfingers.
- Cover the ladyfingers with the mascarpone mixture and the grated chocolate, and dust it with a little more than half the cocoa.
- Cover the filling with a second layer of ladyfingers and drizzle with the remaining liqueur and espresso.
- Place the dish in the refrigerator for at least 12 hours (the Tiramisu can be made 24 hours in advance).
- Top with the remaining cocoa before serving.

- Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
- Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
- Continue syrup: Mix coffee and tuaca into the sugar-water mixture.
- Assemble tiramisu: Line the bottom of a 9x13-inch glass baking dish with ladyfingers. Pour 1/2 of the syrup over top, then layer with 1/2 of the filling. Add another layer of ladyfingers and cover with remaining syrup and filling. Smooth with the back of a spoon and sprinkle with grated chocolate. Refrigerate for at least 4 hours before serving.

CHEATER'S TIRAMISU
This tiramisu isn't fancy but it's delicious and it's the easiest recipe I have. Always a hit.

- Preheat the oven to 350 degrees F (175 degrees C). Grease the bottom only of a 9x13-inch glass baking pan.
- Combine cake mix, water, oil and eggs in a large bowl with a mixer on medium speed until well combined. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 29 to 34 minutes. Remove from the oven and let cool completely, about 30 minutes.
- Poke 12 holes in the cooled cake with the base of a serving spoon or any utensil that has a rounded bottom.
- Whip whipping cream, adding sugar and vanilla when it's about halfway whipped; you want it to hold its shape, but don't overwhip.
- Pour coffee over the cake, then immediately spread whipped cream evenly over top. Dust with cocoa powder, covering it completely. Cut and serve or chill in the refrigerator until ready to serve.

AUNT ENZA'S TIRAMISU
Steps:
- Prepare the espresso and cool completely. Separate the eggs, discarding the white from 1 of them. Beat 2 egg whites with 1 tablespoon sugar until it forms soft peaks. In another bowl, beat 3 egg yolks with the remaining sugar until thick and pale yellow. Add the mascarpone and Marsala to the egg yolk mixture and blend until well combined. Lightly fold the egg whites into the mascarpone mixture.
- Dip ladyfingers, one at a time, in espresso coffee and line the bottom of a 2 quart bowl or serving dish with about 1/3 of the cookies. Cover with about 1/3 of the mascarpone mixture. Continue building the tiramisù making 3 layers of cookies topped with 3 layers of mascarpone mixture. Dust the finished tiramisù with unsweetened cocoa or chop up some bittersweet chocolate and use it to spell out AUGURI on top. Refrigerate at least two hours.
PATRIZIA CHEN'S TIRAMISU
Born and raised in Livorno, Ms. Chen's memoir, "Rosemary and Bitter Oranges: Growing up in a Tuscan Kitchen" is a charming account of a post world war II childhood. And the recipes are terrific. This Tiramisu presents beautifully. If the raw eggs worry you, use the very good ones you can find in organic markets. This is a perfect dessert for making early in the day of your dinner party, freezing for the afternoon, and removing from the freezer to sit on your counter while you sit down to dinner.

- Separate the eggs, putting the yolks into a large mixing bowl and the whites into the bowl of an electric mixer.
- Add 6 tablespoons of sugar to the yolks and whisk auntil pale yellow and creamy.
- Stir in the ground coffee, chocolate and mascarpone.
- Beat the egg whites until they hold stiff peaks; gently fold them into the mascarpone mixture.
- Line the sides of a nine inch springform pan with foil.
- In a shallow bowl, mix the cup of brewed coffee, rum and remaining tablespoon of sugar.
- One by one, dip enough cookies/ladyfingers into the mixture to cover the bottom of the pan (it's ok if they crumble).
- Take the remaining cookies/ladyfingers, dip them on just one side, and stand them straight up against the sides of the pan, the moist side facing inches.
- Pour the mascarpone mixture into the pan and sprinkle the top with the cocoa powder (easiest using a fine sieve).
- Cover and freeze for at least six hours.
- Let stand at room temperature one hour before serving.
- To unmold, spring open the pan, peel away the foil, and transfer the Tiramisu, still on the pan base, to a serving plate.
- Ecco fatto!
